Enjoy!” Kirby Kallas-Lewis, Founder/Head Distiller. “Highly Recommended” O O LA "Bright, toasty, creamy aromas of caramelized fruits, toffee, and spiced nuts with a silky, vibrant, fruity medium-to-full body and a warming, complex, long brown spices, crème brûlée, roasted nuts, and minerals finish. A superb straight whisky with great vibrancy and depth of flavor." This whiskey starts off with a mash bill similar to OOLA's signature Waitsburg Bourbon mash bill containing corn, rye, malted barley, and wheat. The barley in our whiskey is smoked with apple wood and cherry wood along with our own bourbon barrel staves. distiller's tasting notes: "Deep, rich nose with mostly sweet, fruit elements and just a hint of smoke. On first taste smoke is present, but the focus on your palate quickly becomes a delicious sweet and ripe stone fruit (think plum, peach & apricot) —Very smooth and rich with no burn or bite at 90 proof. whiskey discourse smoked whiskey's lingering finish creates a subtle conversation between peated and sweet smoke." “This is a whiskey about subtlety and balance—not a smoke "monster" by any standard. Our goal was to create a balanced beautiful Whiskey that explores smokey elements but is not overpowered by them. You really do want to come back for more of this one.” Kirby Kallas-Lewis, Founder/Head Distiller UPC: 8 55729 00329 6 Size: 750mL Proof: 90 CAPITOL HILL SEATTLE, WA ooladistillery.com206.709.7909 MANAGING DIRECTOR [email protected] OWNER & DISTILLER [email protected] limited release WHISKEY DISCOURSE: three shores world wh iskey Production & Tasting Notes: The third release in our Whiskey Discourse series, three shores world whiskey, is all about a conversation within whiskey-making traditions. This "discourse" involves a conversation with iconic whiskeys from three different countries: a Highland Scotch, our own American high rye Whiskey, and a deep, rich and smooth Canadian Whiskey. The process starts by transferring two fully mature whiskeys, highland scotch and canadian whiskey, into American Oak Barrels for up to one year of additional aging. This is when the integration begins. All three whiskeys have influence from the American Oak that will later contribute to the balance that we were able to achieve in this whiskey. distiller's tasting notes: "A whiff of smoke coupled with sweet sea brine on the nose of three shores starts the conversation. This is followed by a spicy clove and cinnamon note, contributing a complexity mid-palate on its way to a lingering finish of rich, ripe pear and candied stone fruit." “All three Whiskeys are top representations of their respective styles. The goal here was to create something that excels beyond the individual components—the sum is definitely greater than the parts in this beautifully-balanced spirit. Enjoy this conversation. I'm sure you'll agree that it gets all the more interesting when diverse opinions are bellied up to the bar.” Kirby Kallas-Lewis, Founder/Head Distiller UPC: 8 55729 00332 6 Size: 750mL Proof: 94 CAPITOL HILL SEATTLE, WA ooladistillery.com206.709.7909 MANAGING DIRECTOR [email protected] OWNER & DISTILLER [email protected] limited release WHISKEY DISCOURSE: three shores bl ack l ab el french oak— cabernet sauvignon barrel-finished Production & Tasting Notes: The fourth release in our Whiskey Discourse series, three shores black label, combines our Three Shores Blended Whiskey with an additional year of aging-in french oak Cabernet Sauvignon barrels from one of the top Cabernet producers in Washington State. You'll recall the "discourse" with the original Three Shores Whiskey involves a conversation with iconic whiskeys from three different countries: a Highland Scotch, our own American high rye Whiskey, and a deep, rich and smooth Canadian Whiskey. distiller's tasting notes: “Don't be mislead by the shy way this rare Whiskey introduces itself—the light nose blossoms into a richness on the palate with notes of sweet salted caramel, baking spices, and candied orange peel. The most outstanding attribute of this lovely whiskey is the incredible, long finish so aptly described by one of our distillers, John Fausz: ‘The ghost of a whiskey spending its eternity on the palate.’ Well said. Enjoy!” “All three Whiskeys are top representations of their respective styles. The goal here was to create something that excels beyond the individual components—the sum is definitely greater than the parts in this beautifully-balanced spirit. The flavor profile takes a new and sophisticated turn with the additional year of aging in French Oak Wine Barrels. We now have the French, Americans, Scots, and Canadians bellied up to the bar—You know this conversation is going to be interesting!” -Kirby Kallas-Lewis, Founder/Head Distiller UPC: 8 55729 00334 0 Size: 750mL Proof: 94 CAPITOL HILL SEATTLE, WA ooladistillery.com206.709.7909 MANAGING DIRECTOR [email protected] OWNER & DISTILLER [email protected]
