Introducing our Whiskey Discourse series with the limited release of
our 93-point, gold medal (SF International Spirits Competition)
Waitsburg Bourbon Whiskey finished for an additional 9 months
in 60-gallon French oak barrels from a 100-point Washington Cabernet
Sauvignon producer.
Whiskey Discourse C starts with OOLA's signature Waitsburg Bourbon mash bill containing corn, rye, malted barley, and wheat. This
beautiful whiskey is aged for 4 years in new American oak before
being transferred and finished in used french oak Cabernet Sauvignon
barrels for 9 additional months.

Production & Tasting Notes:
The second release in our Whiskey Discourse series, smoked whiskey,
presents a "conversation" between the peated smokey notes of a beautiful
Highland Scotch and our sweet, house-smoked American Whiskey.
This whiskey starts off with a mash bill similar to OOLA's signature
Waitsburg Bourbon mash bill containing corn, rye, malted barley,
and wheat. The barley in our whiskey is smoked with apple wood and
cherry wood along with our own bourbon barrel staves.
distiller's tasting notes: "Deep, rich nose with mostly sweet, fruit
elements and just a hint of smoke. On first taste smoke is present, but
the focus on your palate quickly becomes a delicious sweet and ripe stone
fruit (think plum, peach & apricot) —Very smooth and rich with no burn
or bite at 90 proof. whiskey discourse smoked whiskey's lingering
finish creates a subtle conversation between peated and sweet smoke."

three shores

Production & Tasting Notes:
The third release in our Whiskey Discourse series, three shores
world whiskey, is all about a conversation within whiskey-making
traditions. This "discourse" involves a conversation with iconic whiskeys
from three different countries: a Highland Scotch, our own American high
rye Whiskey, and a deep, rich and smooth Canadian Whiskey.
The process starts by transferring two fully mature whiskeys, highland
scotch and canadian whiskey, into American Oak Barrels for up to
one year of additional aging. This is when the integration begins. All
three whiskeys have influence from the American Oak that will later
contribute to the balance that we were able to achieve in this whiskey.
distiller's tasting notes: "A whiff of smoke coupled with sweet
sea brine on the nose of three shores starts the conversation. This is
followed by a spicy clove and cinnamon note, contributing a complexity
mid-palate on its way to a lingering finish of rich, ripe pear and candied
stone fruit."

Production & Tasting Notes:
The fourth release in our Whiskey Discourse series, three shores black
label, combines our Three Shores Blended Whiskey with an additional year
of aging-in french oak Cabernet Sauvignon barrels from one of the top
Cabernet producers in Washington State. You'll recall the "discourse" with the
original Three Shores Whiskey involves a conversation with iconic whiskeys from
three different countries: a Highland Scotch, our own American high rye
Whiskey, and a deep, rich and smooth Canadian Whiskey.
