Ask any pie lovers and they will tell you exactly the same thing about southern pies. In fact, it is one of the all-time American favorites when it comes to sweets and desserts. Southern pies are part of the Southern cuisine of the United States which refers to a cuisine specific only to states located south of the Mason-Dixon Line which include Delaware, Mississippi, Arkansas, Maryland, Missouri, Kentucky, Oklahoma, North Carolina, Louisiana, Tennessee and Virginia to name a few. Southern cuisine is heavily influenced by different cuisines such as English, French, Irish, German, Native American and African American. It has existed and flourished during the colonial era and during the time when cotton plantations expanded in North America. The fusion of different world cuisine has created eclectic flavors of Southern cuisine which led to the creation of different types of Southern cuisines including Creole, Cajun, Floribbean and Low Country. The History of Southern Pies Nobody knows who created Southern pies. It was the pilgrims who first bought pie to America and the colonists eventually adapted and created their own flavor of pies. The reason why Southern pies have taken a long journey in history is the fact that the Southern region is the center of trade and commerce in America during the colonial era. It is natural for the affluent to have something sweet on their dinner tables. Today, traditional families down South have their own secret recipes of Southern pies that they pass down from one generation to the other. Southern pies become the centerpiece of joyous occasions including Thanksgiving and Christmas time. What makes Southern pies interesting is that they are made traditionally. Even today, many women who make Southern pies eschew shortcuts and would really roll out their sleeves to create the dough and fillings to create homemade goodness in their kitchens. Ingredients: Fresh strawberry slices, for garnish Strawberry sauce, for garnish 2 tbsps chopped fresh mint 2 tbsps powdered sugar 1 (16-oz) package fresh strawberries, hulled 1 qt. Low fat or fat-free strawberry frozen yoghurt 2 tbsps butter, melted 22 cookies, reduced-fat cream filled chocolate sandwich cookies Directions: 1) Lightly grease a 9-inch spring foam pan and heat oven to 350oF 2) In a food processor, combine butter and cookies together and pocess until thoroughly crumbled. Press firmly on the prepared greased pan. Bake for 10 minutes and remove from oven and for 30 minutes let it cool. . 3) Place frozen yoghurt in room temperature to slightly soften. 4) In a food processor, blend mint, powdered sugar plus strawberries scraping down the sides often. 5) In a big bowl, cut frozen yoghurt into 3-inch cubes. Add strawberry mixture and fold into the yoghurt until smooth. 6) Pour mixture into the pie crust. Put in the freezer until firm or for about 3 hours. 7) Before serving, let stand for about 15 minutes in room temperature. Garnish with fresh strawberry slices and drizzle with strawberry syrup. Nutty Choco Silk Pie A scrumptious combination of coffee, peanut butter and chocolate ice cream in a pie, a sure fire way to beat the summer heat. Ingredients: 2 tbsps coffee liqueur (optional) 1/4 cup strong brewed coffee 1 (8-oz) jar fudge sauce 8 (1.6-oz) packages peanut butter cup candies, chopped coarsely 3 pints chocolate ice cream, softened 1/4 cup butter or margarine, melted 1/2 cup unsalted dry-roasted peanuts 21 cream-filled chocolate sandwich cookies Directions: 1) Crumble the peanuts and cookies together in a blender. Stir in melted butter. Blend completely. Put mixture in a deep 9-inch round pie plate and press firmly. Cover and freeze for 15 minutes. 2) Mix together the chopped candies and ice cream. Pour into the pie crust. Freeze again for at least six hours. 3) On low fire, place a saucepan and warm the fudge sauce while stirring constantly. Turn off heat and add the coffee and coffee liqueur. 4) Take out the pie and let stand in room temperature for 15 minutes and drizzle with the coffee mixture before serving. Cheesy Cake Fruit Tarts Not only that this dessert looks beautiful on the table, it also tastes even better. Use with tropical fruits like papaya, mango or kiwi; or with the traditional raspberries and blueberries. This is ridiculously easy to prepare all year round. Ingredients: Fresh mint sprigs, for garnish 3 cups assorted fresh fruits 2/3 cup gingersnap crumbs (about 12-16 gingersnaps) Vegetable cooking spray 1/4 tsp almond extract 1/2 tsp vanilla extract 2 large eggs 2 tbsps all-purpose flour 3/4 cup sugar 1 (8-oz) package fat-free cream cheese, softened 1 (8-oz) package 1/3-less-fat cream cheese, softened Directions: 1) Grease 6 (4-inch) tart pans with removable bottoms with cooking oil spray. 2) With a mixer, beat the cream cheese at medium speed until smooth. Stir in the flour and sugar, mix well. Stir in the eggs, one at a time, beating well after each addition. Add the almond and vanilla extract. 3) Coat the bottom of the pans evenly with gingersnap crumbs, shake to coat the sides of pans. Lay the tart pans on a baking sheet. Pour cheesecake batter evenly on the pans. 4) Set oven at 350 degrees and bake the tart for 18 to 20 minutes or until done. Let it set on a wire rack to cool. With a pancake turner, remove the tarts from the pans and set on a platter. Top the cheesecake with fresh fruits. Garnish with the fresh mint sprig before serving. Vanilla Cream Filled Banana Pie A creamy and delicious after meal dessert that will definitely make an impression to the people around the table, one will remember their summer days at home as kids. The vanilla cream filling creates an imaginative twist to the usual and traditional banana pudding. Ingredients: For vanilla cream filling: 2 tbsps vanilla extract 2 cups milk 4 egg yolks 2 large eggs 1/3 cup all-purpose flour 3/4 cup sugar For the pie: 1/2 cup sugar 4 egg whites Vanilla cream filling 2 large bananas, sliced 1/2 cup butter, melted 1 (12-oz) box vanilla wafers, divided Directions: 1) Prepare a 9-inch pie plate. Divide the vanilla wafers, and set aside 30 pieces. Process the remaining wafers in a food processor until coarse. Add in the butter. Press the mixture firmly in the bottom of the pie plate, and on the sides. 2) Turn oven to 350 degrees and bake for about 12 minutes or until lightly browned. Set to cool on a wire rack. 3) Prepare the vanilla cream filling by: Placing a saucepan over medium-low heat, combine the sugar, flour, eggs and milk together. Heat the mixture while stirring constantly for about 8 to 10 minutes or until the mixture starts to bubble and thicken and can hold soft peaks when lifted. Turn off heat. 4) Put the banana slices on the bottom of the crust and arrange it evenly. Top it with hot vanilla cream filling and spread evenly; arrange 20 vanilla wafers then put the remaining vanilla filling on top. 5) Return to the oven and bake for 10-12 minutes more or until slightly browned. Set to cool on a wire rack for 30 minutes. Meringue Topped Pineapple Pie A bracing tropical summer dessert which will refresh your senses with the sweet and refreshing taste of Pineapple; serve this fun and easy pie on your next cookouts or barbeque gathering. Ingredients: 1 tsp vanilla extract 1 tbsp butter 1 (20-oz) can crushed pineapple, drained 1 cup sugar, divided 3 large eggs, separated 1/4 cup cornstarch 2 cups milk 1/4 cup butter, melted Directions: 1) Preheat oven to 350oF. Lightly grease a 9-inch pie plate. 2) Process together 1/4 of the melted butter, 1 cup coconut and the cookie crumbs in a food processor until coarsely crumbled. Spread and press evenly the mixture on the bottom of the prepared pie plate, including the sides until the lip of the plate. 3) Bake until lightly brown or for about 10 to 12 minutes. Let sit on a wire rack to cool. 4) In a heavy saucepan, beat the cornstarch and milk together until cornstarch is completely dissolved. Add in 3/4 cup sugar and egg yolks; heat over medium-low heat, whisk continuously until a chilled pudding-like thickness is achieved or about 8 to 10 minutes. Turn off heat and add the vanilla, 1 tbsp butter, and pineapple. Pour the mixture immediately into the cooled crust. 5) With a mixer, beat the egg whites at high speed. Stir in the remaining 1/4 sugar gradually, 1 tbsp. At a time. Continue beating until the sugar is dissolved and stiff peaks are formed. Place the meringue on top of the pie and spread while the filing the filling is still warm. Place the remaining 1/3 cup coconut over the meringue. 6) Return to the oven and bake until golden brown or for about 10 to 12 minutes. Remove from oven and let it completely cool on a wire rack for about 1 hour. Let it chill before serving. Creamy Banana-Berry Ice Cream Pie This may be quite a daunting recipe to make but it is definitely worth all your time and effort. Especially if you see all the smiles that you will be getting from your friends and family after they've tried this sumptuous pie. Ingredients: 2 ripe bananas 1 pint fresh blueberries 1/4 cup powdered sugar, divided 1 (16-oz) container fresh strawberries, stemmed 2 (1 quart) containers, divided premium vanilla ice cream 1 tbsp granulated sugar 6 tbsps butter, melted 1 (7-oz) package waffle cones, broken into pieces Garnish Ingredients: Fresh blueberries Fresh whole strawberries Waffle cone pieces Directions: 1) Combine the broken waffle cones, melted butter and granulated sugar in a food processor and process until finely crushed. Place mixture in a greased 10-inch spring form pan and press tightly. 2) Turn oven to 350oF and bake for about 10 minutes. Remove from oven and let it cool on a wire rack. 3) Soften vanilla ice cream, by letting it stand on room temperature. 4) Puree 2 tbsps powdered sugar and strawberries in a food processor, scraping down the sides when needed. Remove and set aside. Do the same with the blueberries and set aside. 5) Mash together the remaining 1 tbsp powdered sugar and banana with a fork. Set aside. 6) In a large bowl, divide 1 quart of ice cream into 3 large pieces. Blend and fold the strawberry and sugar mixture into the ice cream. Freeze until slightly firm. 7) Split the remaining 1 quart ice cream in half and place each in a separate bowl. Fold the blueberry mixture on the half and the banana on the other half. Freeze both until firm. 8) Place half of the strawberry mixture in the pan and spread evenly. Freeze for 30 minutes or until the strawberry layer is firm. Place the banana mixture and spread evenly on top of the frozen strawberry layer. Freeze. Spread the blueberry mixture evenly on top of the banana mixture and return pan to freezer for another 30 minutes. Put the remaining strawberry mixture over the blueberry layer and spread evenly. Freeze for another 3 hours or until all the layers are firm. Let the pie soften before garnishing with fresh strawberries and blueberries, sprinkled with crushed waffle cones. Orangey Chess Pie Chess Pie is a classic Southern Pie with a twist. It is with added fresh oranges for a fruity and yummy twist. Ingredients: Orange slices and whipped cream for garnish 4 large eggs, beaten slightly 1 tbsp lemon juice 1/3 cup fresh orange juice 2 tsps grated orange rind ¼ cup milk ¼ cup margarine or butter, melted ¼ tsp salt 1 tbsp yellow cornmeal 1 tbsp all-purpose flour ½ cup sugar 1 package 15oz pie crust, refrigerated Directions: 1) On a floured surface, unroll pie crust and make a circle, 12 inch in diameter. Transfer rolled crust on pie plate, fit it in by pressing neatly down and crimp the edges over the edge of plate. 2) Follow manufacturer's instructions and bake pie crust. Remove from oven once done. 3) Meanwhile, in a bowl mix together the eggs, lemon juice, fresh orange juice, orange rind, milk, butter, salt, cornmeal, flour and sugar until thoroughly combined. 4) Pour mixture over pie crust and bake for 40-45 minutes in 350oF pre heated oven. 5) Garnish as desired before serving. Chess Pie With Grape Fruit Living the Southern life is never complete without knowing how to create a Southern Pie. Chess Pie is among the classic pies of Southern cuisine but this recipe adds a hint of grapefruit. Ingredients: Grapefruit rind and whipped cream optional 4 eggs lightly beaten 1 tbsp lemon juice 1/3 cup fresh grapefruit juice 2 tsps grated grapefruit rind ¼ cup milk ¼ cup butter, melted ¼ tsp salt 1 tbsp yellow cornmeal 1 tbsps all-purpose flour 1 ½ cups sugar 1pc 15-inch refrigerated pie crust Directions: 1) On a floured surface, unroll pie crust and create a circle around 12-inches in diameter. Transfer rolled crust into a pie plate and press firmly down and crimping edges over plate edge. 2) Following manufacturer's instructions bake pie crust until lightly browned before removing from oven. 3) In a bowl, combine together the eggs, lemon juice, grapefruit juice, grapefruit rind, milk, butter, cornmeal, flour and sugar. Mix until well-combined and pour over baked pie crust. 4) Return the pie in a 350oF oven and continue baking for forty to forty-five minutes more. Midway between cooking, you can cover pie edges with foil to prevent burning. 5) Serve pie topped with grapefruit rind or whipped cream or both or none at all. Chess Pie With Tangerines The traditional Southern chess Pie is typically so sweet. What we did in this recipe is to temper down the sweetness of the chess pi with a hint of tart tangerines! Ingredients: Tangerine slices and whipped cream optional 4 large eggs, beaten lightly 1 tbsp lemon juice 1/3 cup fresh tangerine juice 2 tsps tangerine zests ¼ cup melted butter ¼ tsp salt 1 tbsp plain yellow cornmeal 1 tbsp all-purpose flour 1 ½ cups sugar 1 package 15-inch pie crust Directions: 1) On a floured surface, unroll packaged crust and create into a 12-inch circle. Transfer and cover a 9inch pie plate with it and tuck over the crust over plate edges and crimp. 2) Bake the crust according to manufacturer's instructions until light brown before removing from oven. 3) In a bowl mix until thoroughly combined the following ingredients: eggs, lemon juice, tangerine juice, tangerine zests, melted butter, salt, cornmeal, flour and sugar. 4) Return pie to a 350oF preheated oven and cook 40-45 minutes. You can cover the pie crust edge after 25 minutes of baking to avoid burning of crust. 5) Once done, cool pie for an hour before serving and you can garnish with whipped cream and tangerine slices. Key Lime Pie A collection of Southern Pie recipes will never be complete without the traditional key lime pie recipe. This recipe has evolved into hundreds of different versions but this is your plain, typical and delicious key lime pie. Ingredients: 1 tbsps lime zest 2 tbsps powdered sugar 1 cup sour cream 2 whole large eggs 1 cup lime juice 2 cans of 14oz sweetened condensed milk 4 tbspsmelted butter ½ cup granulated sugar 1 ½ cups graham cracker crumbs Directions: 1) Heat oven to 375oF. 2) Meanwhile in a medium bowl mix with your hands the butter, sugar and graham crumbs. Firmly press mixture into a pie plate, 9-inches. Bake the crust for 20 minutes and let cool. 3) Lower oven temperature to 325oF. 4) In another bowl, mix thoroughly the following ingredients: eggs, lime juice and condensed milk. 5) Place in the oven and cook for 15 minutes. Remove from oven and allow to cool to room temperature before refrigerating for another two hours. 6) After two hours, mix powdered sugar and sour cream then with a spatula spread over the pie. 7) Before serving, garnish pie with lime zest.
