BOURBON HOUSEMADE INFUSIONS
Our shining star. With a love for experimentation, all in
the name of bourbon; our housemade infusions are carefully
concocted by our talented bartenders, to create unique
combinations that are rich in taste and bursting with
flavour.
Made on site and infused for no less than 2 weeks, these
little gems are not to be passed by! Savour on their own
over an ice sphere, or try them in a cocktail.
The selections will change seasonally but available
all-year-round are;

Infused with natural Manuka honey & fresh stem ginger.

BOURBON & RYE
All bourbon is whiskey but not all whiskey is bourbon.
Tennessee whiskey? Not bourbon. Canadian whiskey? Nope.
Scotch? Definitely not. So what makes bourbon a bourbon?
1. Bourbon is all-American. In 1964, under President
Lyndon Johnson’s administration, Congress declared bourbon
America’s Native Spirit.
2. The only thing that can be added to bourbon is water.
Other whiskey makers can add colours and flavours to their
products.
3. By law, bourbon must use NEW charred American white
oak barrels. Scotch whiskey often recycles barrels first
used for bourbon; probably to try and steal some of the
bourbon’s flavour!

Tasting: A 6 year old straight Kentucky bourbon. Thick with
fruit & vanilla fudge. Good finish of toasted oak spice.
Jim Beam Devil’s Cut £3.70
ABV: 45%
Tasting: A devilish twist with Jim Beam blending their
6 year old whiskey with spirit extracted from the wood
of the cask itself. The result is a robust bourbon with
intense oak & vanilla, followed by a long, smooth finish.
Jim Beam Varietals £3.55
Choose from: Cherry infused Red Stag, sweet golden Honey,
or spicy Rye.
Maker’s Mark £3.55
ABV: 45%
Tasting: Handcrafted bourbon with a distinctive handdipped wax seal. It’s rich and full with notes of spice,
butterscotch & vanilla.
Jim Beam Signature Craft £7.25

Tasting: Jim Beam’s new, ultra-premium, 12 year old small
batch release. Toasty with cinnamon spice. Ice or neat.

BOURBON & RYE
Wild Turkey £4.25
ABV: 40.5%
Tasting: This bourbon has a high rye content in the mash
bill and is aged in casks with a heavy char - the result of
which is huge flavour and complexity with hints of caramel
and coffee.
Bulleit ‘45’ Rye £4.50
ABV: 43%
Tasting: This is what rye is all about. A 95% rye whiskey
with smoke, cinnamon, spice and all things rye.
Four Roses Small Batch £4.50
ABV: 45%
Tasting: Small Batch? There are only 4 casks used for each
release. Sweet & spicy with a touch of Crème Anglaise –
that’s vanilla to you and me.
Buffalo Trace White Dog £6.75
ABV: 62.5%
Tasting: White Dog Mash #1 is an unaged whiskey. It’s all
sweetness & spice but beware of the bite!
Tin Cup, Colorado £4.75
ABV: 42%
Tasting: Jess Graber, a part time fire fighter from
Colorado, has been tinkering with distilling since 1972.
After 32 years of practice he started his own Company.
This is his newest blend and it does not disappoint. Easy
drinking with a cinnamon & caramel finish.
Elijah Craig 12 Year Old £6.25
ABV: 47%
Tasting: The Reverend Elijah Craig was a Baptist preacher
and entrepreneur. The preaching came first whilst he
owned a warehouse that stored oak barrels. You can guess
the rest; fire hit the warehouse and he used the charred
barrels to make bourbon. It was all the Lord’s work!
James E Pepper 1776 Rye £7.25
ABV: 50%
Tasting: In good ole Southern tradition, James’ Grandaddy
had a claim to opening the first Kentucky distillery in
1776. Whether or not it was, this is a first class rye and
great with a little water.

Jim Beam Small Batch Bourbons
The Small Batch Bourbon Collection represents the very
best in bourbon, each handcrafted in limited quantities
using time-honoured recipes. These special recipes allow
each Small Batch Bourbon to be distinctively different.
As Booker Noe, Jim Beam’s Grandson and Master Distiller
Emeritus says: “This is bourbon the way it used to be, the
way it was meant to be.”
Knob Creek £7.50
ABV: 50%
Tasting: This just got serious! Knob Creek embodies the
look, feel and taste of pre-prohibition bourbon.
This 9 year old bourbon is named after the area that
Abraham Lincoln grew up. Notes of candy floss with a touch
of spice & dark chocolate.
Bakers 7 Year Old £7.50
ABV: 53.5%
Tasting: A bourbon’s bourbon! Elegant and well-balanced,
there are tones of toasted nuts, fruit & vanilla.
Bookers £8.50
ABV: 60%
Tasting: Booker’s Bourbon is the “centre-cut,” which
relates to the position of the barrels in the rackhouse.
The “centre-cut” is less subject to Kentucky’s hot and
cold extremes, resulting in the finest, rarest and
absolute best bourbon available. Need we say more?
Basil Haydens £9.50
ABV: 40%
Tasting: This dates back to 1796, when Master Distiller
Basil Hayden Sr., created a recipe like no other. He used
a traditional corn base, but mixed small grains in his mash
to capture the spicy flavour of rye which complemented the
sweet smoothness of corn. A perfect marriage!

Laphroaig Quarter Cask £4.50

Tasting: The additional oak influence from the quarter
cask creates a soft sweetness and velvety feel when first
tasted, and then the intense peatiness unique to Laphroaig
comes bursting through. Superb!
Laphroaig 18 Year Old £15.00
ABV: 48%
Tasting: The 10 year old’s big brother in many ways.
Bottled in limited quantities each year, this malt has
an instant warming tang with a nutty & sweet taste. With
a touch of water, the peaty warmth fills the mouth but
does not overshadow the sweet chocolate smoothness. This
is balanced by the rich toffee taste and a chocolatey
smoothness which slowly fades into a delicate hint of
heather & peat smoke. Quite simply awesome.
Highland Park 18 Year Old £6.50
ABV: 43%
Tasting: One of our all-time favourites, this has to be
one of the most consistently excellent malt whiskies of the
past 10 years. Showered with awards and praise from all
quarters, it was named as ‘Best Spirit in the World’ by
F Paul Pacult of the Spirit Journal in 2005. Unfailingly
excellent, especially after a good meal.

Tasting: A 16 year old Irish single malt from Bushmills
aged in three different cask types: bourbon, port and
sherry. The result is a beautiful whiskey which was awarded
Gold at the 2010 San Francisco World Spirits Competition.

Tasting: Wow, just WOW! Only 50 casks get bottled each year
and if you are one of the lucky ones, you will taste fresh
flowers & butterscotch with a long, spicy finish.

Tasting: Search for the meaning of “stunning” and it will
say “Louis XIII”. The Baccarat decanter houses prestige

Tasting: XV is a blend of 3 to 8 year old rums from a
mixture of bourbon and sherry casks. This marriage produces
a flavoursome and smooth rum.
Brugal 1888 £6.50
ABV: 40%
Tasting: Brugal 1888 Ron Gran Reserva Familiar to be
precise! This special edition is a product of aging rum
for 8 years in bourbon casks, then a further maturation
in Oloruso Sherry casks. You will get loads of
butterscotch, honey, wood smoke & toffee. You will not
be disappointed.

Tasting: A deep, rich sipping rum, it is best experienced
neat or on the rocks: Sweet and delicate with notes of
wood, fruitiness, vanilla, almond, caramel, fudge and

& Rudd, London’s oldest wine and spirit merchant. The
name No.3 refers to the address in St James’s Street,
London: their home since 1698. With juniper at its heart,
it unashamedly celebrates the integrity and character
of traditional London Dry Gin: six perfectly balanced
botanicals distilled in traditional copper pot stills.

Tasting: A Spanish gin inspired by the Mediterranean –
botanicals of olive, thyme, rosemary & basil are amongst
the ingredients. It has an herbal & aromatic taste with
a zesty finish. Barcelona is fast becoming a hotbed of gin
drinkers with Gin Mare placed at the centre. Ole!
Monkey 47 Dry Gin £9.95

Tasting: It’s the bottle and name that grabs your interest.
Then you find out it is from the Black Forest with 47
botanicals and 47% abv. Then you realize the secret
ingredient is cranberries! Amazingly, the liquid lives up
to the hype. Complex, robust and powerful this is a must
taste for anybody that drinks gin. Where did I leave my
bucket list?
Bathtub Gin £5.25

Tasting: The name originates from Prohibition America when
a gin-style liquid was made in the bath. Please believe
us when we say that is the only link to this amazing gin.
Infusing orange, juniper, cinnamon, cloves & cardamom you

FEW Barrel Aged Gin £6.25

Tasting: From Illinois, U S of A. This has been called a
geek friendly hybrid spirit, but this style of gin really
dates back to the Gin Lane days when it was stored in
