FlintOwl Bakery FlintOwl Bakery is David Bland from Lewes. Having baked in London and developed a passion for ‘good bread’ David moved to Lewes to set up his own bakery and do things his way. His bakery is in Glynde and, as is traditional, he bakes through the night into the early hours. Delivering the loaves later in the morning to shops, restaurants, the Friday Food Market and of course our box scheme. All flours are Organic and most stoneground which means more bran & vitamins. The bread is not certified as organic at present though as the costs would be too high for such a small business. Flint Owl bread has no additives or improvers of any kind. Most bakeries do use them (even those who advertise themselves as artisan) - they just don’t tell you – as it’s not a legal requirement to! The breads get at least an 18 hour fermentation period. This slow proving means more digestible and flavourful bread. Many of the breads are sourdough based which is a natural way of leavening the bread instead of using manufactured yeast. This technique again provides scope for interesting flavours, good digestibility and shelf life. The only other ingredients are water from the Glynde spring and sea salt (+ nuts/seeds etc depending on the loaf).
