Notes on Wines / TASTING NOTES
All wines were put into barrel in mid November 2011 (17 months total)
in Neutral French Oak Barrels
Rutherford Merlot
Nose of dusty dark cassis and blackberry. Brightens in the mouth
with cherry and raspberry notes. Soft tannins with a yeasty hint
of biscuit on the finish.
Oakville Cabernet Sauvignon
Cola, graphite and black cherry on the nose. Juicy plum with hints
of bright star fruit and moderate tannic structure.
Napa Valley Cabernet Sauvignon
An aromatic medley of baking spices, rhubarb and dark yet
woodsy fruit rise from the glass. Voluptuous and concentrated in
the mouth with tangy pomegranate, tea leaf and dark brambly
fruit and firm tannins.
Napa Valley Cabernet Franc
From the Pope Valley district, this wine is perfumed on the nose
with ripe berry aromas. Silky in the mouth with bright boysenberry
and a hint of blueberry.
If you really fall in love with a particular blend, name it and send us the recipe. We’ll
blend and bottle your cuvee for $50/bottle, less any applicable discounts, with shipping
included to most states. The minimum order size is 6 bottles.

Step 1 : Gather friends
You can have a great time blending on your own or with your significant other,
but these kits really shine in a party environment. We encourage you to gather
a few friends and split into 2 or 3 blending teams. A team can be one person, a
couple, or more. Six to eight participants is just about right.

Step 3: Start tasting
Pour a small taste (approx. 15 –20ml) of each wine into separate glasses for
each team to taste, discuss and compare notes.
Step 4: Blend away!
Here’s how to get started:
4 100% Varietal Barrel Samples (Included in Kit)
3 100 ml Graduated Cylinders (Included in Kit)
Glassware (Minimum of 4 Glasses Per Couple or Blending Team)
Notepads & Pens
1 Measuring Cup Per Team
1 Dump Bucket For All
Each team will use their graduated cylinder to create 100ml blend samples by
measuring the percentage you want from each bottle and combining the wines
in your measuring cup. So, if you want to try a blend that is 60% Rutherford
Merlot measure 60ml of this wine with the Graduated Cylinder and pour that
measured amount into your measuring cup. Add other component wines until
you reach 100ml. Oh, and there’s no rule that says all four component wines
need to be in your blend. The first blend is the toughest, but once you get
started, you’ll be off to the races. So just jump in!
Step 5: Finesse your blend
Taste your new blend with your teammates and discuss how you can change
the blend to improve it. You might be surprised at how just a small change can
impact your final blend.
Step 6 (*Optional): Get competitive
Once you’ve settled on a final blend for your team, all participants will taste
all the final blends and individually vote for their personal favorite. Voting by
secret ballot is highly encouraged! Declare a winner, and if a non-winning team
has sour grapes, they can order a new kit and propose a rematch.
