As I begin my fifth year as General
Manager of The Country Club of Little Rock, I
am as energized as ever with the prospects we
face for the future of this fine Club. It has been
wonderful seeing all of the Members and their
families utilizing to the fullest every amenity the
Club offers. Whether taking advantage of our
rapidly growing tennis program, recreating in
the new surroundings of our renovated pool
pavilion, enjoying a round on our magnificent
golf course, working to stay in shape in our
fitness center or enjoying a meal in one of our
dining rooms, every area of the Club has been
overflowing with activity, while providing an
infectious positive energy for Members and
staff alike. This is truly a special place I am
honored to be a part of!
Halloween is behind us in “spooktacular”
fashion and the cooler weather seems as if it is
here to stay for awhile. With the annual Family
Fall Festival, Thanksgiving Feast and Christmas
Dinner Dance fast approaching, it is safe to say
the Holiday Season has arrived! I encourage
all of you to keep your eyes on the calendar
and make your reservations early by visiting

to RSVP for each of our always-popular events.
And don’t forget, the kids are probably already
looking forward to Breakfast with Santa! It’s
a wonderful time of year and we are all very
fortunate to be a part of such a close-knit family
of Members, sharing together in the spirit of
the Holidays.
It is also Debutante Season with 20
young ladies beginning to make plans for
their societal debut. As is the Club’s historic
standard, we plan to carry on this longheld tradition in the finest fashion. The
Debutante Brunch will be taking place on
Sunday, November 25, followed by the Formal
Debutante Presentation and Ball on Friday,
December 28, just prior to the New Year. I hope
you will join me in congratulating the families of
these young ladies as their big day approaches.
The gentlemen of the Club should make
a note of our Men’s Steak and Wine Dinner
to be held in the Presidents’ Rooms and on
the North Patio on Thursday, November 8. An
evening steeped in tradition and culture, this
is one not to be missed. Also, Sissy Brandon is
hard at work planning it forward for the ladies’
next wine dinner to be held in January. Our first
Ladie’s Wine Dinner, held at the beginning of
this year, was a sell-out. So be sure to keep an
eye on your “Inbox” for a specific date and time
with more details to follow.
Of note as well is an informational meeting
scheduled for Wednesday, November 14, at
5:30 p.m. Within this forum, the Board will be
presenting and recommending changes to
our bylaws for your consideration in advance
of the Club’s Annual Meeting of the Members
on January 19, 2013. Please make it a point
to join us as we provide proper context to the
proposed revisions for an open and thoughtful
discussion.
If at any time during the busy Holiday
Season we may be of assistance, please don’t
hesitate to call. Whether you need space for a
cocktail party or dinner, party platters, dinner
to go, whole roasts, entrees or desserts, all can
be prepared in advance by our culinary team
so you don’t have to prepare it at home. Let
us take some of the angst out of your holiday
schedule by making life a little easier. We are
only a phone call away!

Apple Butter

time you read this, there will be less than 50
days until Christmas. Why not entertain you

20 (about 6-1/2 pounds) apples, such as
Empire or Golden Delicious, peeled, cored and
quartered
1 cup apple cider
2 tablespoons Calvados, a French apple brandy
(regular brandy can be substituted)
1 large cinnamon stick
1 teaspoon ground ginger
½ teaspoon ground cardamom
½ teaspoon ground nutmeg
¼ teaspoon ground mace
1 small pinch of ground cloves
1 cup sugar
2 tablespoons fresh lemon juice
cinnamon, ginger, cardamom, nutmeg, mace,
cloves, sugar, and lemon juice in a large heavybottomed saucepan. Place mixture over mediumhigh heat and cook, stirring often with a large
wooden spoon to prevent scorching, until apples
are broken down and saucy, about 1 hour. Mash
any large pieces of apple with large wooden
spoon to help them break down.
2. Reduce heat to medium. Using a rubber
spatula, scrape out apple mixture from pan, and
transfer to a small saucepan. Continue cooking,
stirring occasionally, until apples are completely
broken down and butter is very thick and dark,
about 2-1/2 hours. Remove from the heat, and let
stand to cool.

2012 Debutantes
The kick-off date for The Country
Club of Little Rock 2012 Debutante
season is Sunday, November 25.
Twenty of our Club “daughters” will be
joined by their mothers to greet their
guests at a by-invitation-only brunch
at the Club. These outstanding young
women will be formally presented by
their fathers at the Friday, December
28, black tie gala. The Debutante Ball
will follow the Presentation beginning
at 10 p.m.
Members are welcome to attend
the Ball, however, their college-aged
children must receive an invitation
to attend. A new policy regarding
Presentation and Ball guests will be in
effect for the Debutante Presentation
and Ball. Those in attendance will be
required to present an invitation at the
Club entrance to be admitted to the
property. This policy does not apply
to Club Members, but it will apply to
the children of Club Members. Social
media has forced this action to assure
the safety of our guests. Please help us
spread the word.

The Arkansas Chapter of the PGA’s South
Central Section has awarded both Darrell
Shelton and Cory Willett in this year’s voting.
Darrell was awarded both the Merchandiser
of the Year for private clubs and the Horton
Smith Award, which goes to the Professional
who demonstrates outstanding qualities of
leadership, strong moral character, maintains a
substantial record of service to the Association
and the game of golf, and is well-regarded as
a model educator of PGA Golf Professional.
Cory was awarded Assistant Golf Professional
of the Year for the second time in three years.
Congratulations to both of our Professionals for
being held in such high regards among their
peers, and for representing our Club so well.
Turf Talk
By the time you read this article we will
have completed our tournament season for
2012. Upon completion of the tournament,
you will notice a light vertical mowing that has
been completed on the greens. This process
allows us to break down any thatch layering
in the upper quarter inch, while also providing
a smoother greens surface by reducing grain
and creating a more upright plant growth. This
process, unlike aerification, requires only a few

zone environment as our greens re-establish
their roots following this summer.
Over the last month we have completed our
final application of pine straw, which requires
2,700 bails to complete! Also on the course, our
second application of fungicide will have been
completed on all zoysia areas to control zoysia
patch. In this region, two applications in the fall
followed by one in the spring are required to
produce acceptable levels of control.
One last note. As temperatures continue
to fall, our turf growth will also slow, so please
remember to fix ball marks and repair your
divots on the course. These simple practices
will keep our course looking good in the fall
and winter months ahead. Hope everyone has
a great November as I look forward to seeing
you on the course!

Inter-City has wound down. Ladies and
gentlemen, don’t go into tennis hibernation! Now is the time to get involved with a weekly
league. We are putting more of these together
going into the bubble season. We are reaching

We have a large number of ladies who are
either new to tennis (beginners), or have been
away from the sport and are just coming back.
Over the past two years this group has been
working hard. Anyone who has been around
them knows they have a great sense of humor
and have a lot of fun out there. And through
regular hitting, they are getting good! We just
want to say congratulations, stay with it, and
keep up the great work. Reception for Matt and

Our newest Assistant Head Pro, Matt
Brewer, and his wife Allison, would like to thank
the Tennis Committee, Mr. Burgess and Mr.
Baxter for the wonderful welcoming reception
held in their honor on October 16. The
reception was held in the Centennial Lounge,
and a large group of well wishers came to
meet and welcome the Brewers.
Men’s Century
Doubles
On Saturday, October 21, we held our
first men’s century doubles event. We had a
large group, and want to thank all the men
who came out and played on the clay. It was
a beautiful Saturday and when play ended we
had a great meal overlooking the golf course.
Everyone had a great time! The combined age
of each doubles team had to be over 100. And
we must say, Mr. Jim Conner played absolutely
beautifully!

Going Up
Ever been curious as to how the tennis
bubble goes up over courts 1 and 2? Well,
if the weather works with us, our plan is for
the entire staff to put the bubble up in early
November. We can’t give an exact date as we
need a good weather week to prepare. But we’ll
put out a notice letting you know when it will
go up. You can’t help, but we invite you to come
and watch as we officially kick off the 2012

While on the topic of the bubble, now is
the time to secure your indoor permanent court
time for the winter season. The usage of our
13 courts has increased drastically. Members
playing on their own, involved in clinics, leagues,
or just taking lessons has increased. As we
move from 13 courts down to two during
winter, court availability naturally becomes
more scarce. Reserving a weekly permanent
court time allows you and your group to know
you have your court at a certain time. The
first priority of the facility is you, and we want

Challenge Cup

On Sunday, November 11, the CCLR/PV
“Challenge Cup” will be held. Blake and Dan
are working on the format, but first-round
matches will begin here around 1 p.m., with
second-round matches beginning around 3
p.m. Talk to the staff if you are interested in
representing your Club. dad can step in and “sub” for mom. If our staff
decides we have a clear mismatch (a 4.5 mom
and her 18-year-old, tournament-training son
playing against a beginning dad and his justbeginning 10-year-old daughter), we will throw
in some fun handicaps. Cost is $15 entry fee
per team. Also, while it is still a good way off, we
are working with Memphis Pro Tournament
director Peter Lebedevs regarding a one-day
ladies group trip to Memphis in February for
the professional tournament held there every
year. We are looking at taking up a minibus,
and will have information very soon at the

We run a free junior ladder for our kids
called “Top of the Rock.” Matt Brewer is running
it. If you forget to sign up, Matt will probably be
encouraging you to get involved. Aside from
clinics, privates, and tournaments, this is a
great way for our kids to get match experience
in a low-pressure environment. Additional
information is available at the Tennis Center.

Beginner’s Practice
Starting Mondays in November at 10:30
a.m., we will run a Beginner’s practice. This
is for anyone (male or female) who considers
themselves just getting started with tennis. This
is a completely non-threatening, fun practice
and workout for those who consider themselves
beginners. Come meet some of your fellow
Members with this Monday practice. We had a
lot of fun with this practice last year and saw a
lot of people improve! Sign up at the front desk.

Planning It Forward
On Saturday morning, December 8,
we intend to run a Parent-Child Doubles
Tournament. This will be a fun (and very laidback) doubles tournament. Moms or dads (or
aunts, uncles, or even just a grown-up family
friend) can play with sons or daughters. If
necessary, you may mix partners as you go.
For example, if mom and daughter win a first
round, and mom can’t play the next round,

If you have ever had to address a golf ball
on the side of a hill, or had to hunt around to
find your ball in the rough, this exercise will
make the situation easier to handle.

1. Choose a step 12-20 inches high and stand
to the side of the step.
2. Crossing over the inside leg, place the
outside foot on top of the bench.
3. Engage abdominals and lift the standing foot
off the floor and onto the step.
4. Exit off the same side.
5. Repeat 10-15 times for 2-3 sets.

The Club hosted a number of outstanding events
in October. Forty teams participated in the MemberGuest Golf Tournament under perfect weather conditions. Congratulations to the 2012 Member-Guest champions,
Thomas McCain and his guest, Joe Hadden. There were a
number of guests playing the course for the first time since
the completion of the renovation. Members and guests were
unanimous in their praise of the condition of the course and
the efforts of our staff. Thanks to Mr. Burgess, Wes Hardin,
Chef Brian Kearns, Mike Self, Debi Davies, Chef John Bobo,
Heather Majors, Andrew Penna, Anna Ottman, and all of the
staff for their hard work and attention to details throughout
the tournament weekend.
Darrell Shelton and the staff in the Golf Shop also put
in long hours to ensure the success of the Tournament.
Special recognition to Drake Hawkins, the Chair of the
tournament, and his committee, Bob Althoff, Chris Johnson
and Thomas McCain. The food and entertainment schedule
and other events associated with the tournament were
exceptional and very well received by all of the participants. As we all know, this past summer was a true test for
our course superintendent, Keith Ihms, and his crew. Despite
the extreme heat and dry conditions, Keith and his staff did
a marvelous job in maintaining the course, which was in
superb condition for the Member-Guest Tournament. Please
take the time to thank Keith, Brandon Wright, Kyle Bunney,
and the other members of his crew when you see them. As busy as the month of October was with events such
as the Member-Guest, the Halloween Spooktacular Trunk-orTreat and numerous Member-sponsored events, November
is also shaping up to be a very active month. Events in
November include the annual Family Fall Festival on Sunday,
November 11, the Men’s Steak and Wine Dinner Thursday,
November 8, and the traditional Buffet on Thanksgiving
Day Thursday, November 22. Please contact the Club office
or visit the Club’s website for more information on these
events, and to make reservations. Keep in mind the Club
will again offer the popular Thanksgiving take-out service
with sign-up available by fax, mail or by delivering the order
form contained in this issue to the Club office. Orders must
be received on or before Friday, November 16.
Each of you should have received a letter from the
Board and the Golf Committee announcing an event to
be held on Tuesday, November 6, in honor and memory
of Pro Emeritus Charles “Junior” Lewis. Please be sure to
mark your calendars and plan to attend this special event
honoring Pro Lewis.
The Board is in the process of reviewing and finalizing
the 2013 budget, as well as long-range capital improvement
plans, and anticipates that these items will be presented and
discussed at the next Annual Meeting, with other matters
such as the status of our membership and the financial
projections and implications related thereto. Prior to the
Annual Meeting, however, the Board has scheduled an
informational meeting at the Club on Wednesday, November
14, at 5:30 p.m. The purpose of the meeting is for the
Board to present recommended changes to our Bylaws for
the consideration of the Members in advance of the Club’s
Annual Meeting. Please make every effort to join the Board
and management that night. Having and maintaining an active membership and
first-class facilities is important to ensure that we remain
one of the top country clubs in the nation. However, our
success depends on the active involvement of our Members.
Although several months away, please mark the upcoming
Annual Meeting date of Saturday, January 19, 2013, on your
calendars and make plans to attend. As always, the Board
and management welcome any comments or suggestions
Members may have regarding the facilities and operations
of the Club.
