 Honoring Martin Luther King, Jr.
Martin Luther King, Jr. was born in 1929 and rose to prominence in the sixties as a religious and
political leader. In addition to fueling the civil rights movement, Dr. King received the Nobel Peace
Prize at thirty– five and was the youngest man to receive this award. Although Dr. King was
assassinated on April 4, 1968 in Memphis, Tennessee, his words and deeds left a powerful
legacy. His famous "I Have a Dream” speech and "Letter From Birmingham Jail” are still being
taught in schools around the world. We honor his legacy as well as today's civil rights activists
who risk their lives to make the world a better place. MLK Holiday is Monday, January 16.

Now that 2017 has begun, it's a good time to make a vision board. Comprised of a collection of
images, usually magazine cut–outs and other materials, a vision board represents the possibilities
you want to create in your life. Perhaps you want to read more often, get in shape, or make new
friends. Use your vision board to answer questions like, "What do I want to accomplish in 2017?
What do I want to learn and experience? Who do I want to be?” Making a vision board from
magazine cut– outs is fun, but you can just as easily create a Pinterest vision board, borrowing
ideas from other Pinterest users. Make this activity a social one by hosting a monthly Vision Board
Party where guests can update their images and reach new goals.

Recipe: Baklava

Ingredients:
1 package phyllo dough*
1 pound walnuts, chopped
1 cup butter (2 sticks), softened
1 cup sugar
1 cup water
½ cup honey
1 tsp rum
2 Tbsp cinnamon
Instructions:
Cover the walnuts with cinnamon and set aside. Spray a 9x13 inch pan with cooking spray. Unroll
phyllo dough and place two sheets in the pan. Coat the dough with butter and sprinkle a portion of
the walnuts on top. Repeat this process until you have used all these ingredients. Cut the baklava
into squares and bake at 350℉⁄175℃ until the baklava is crisp, about 50 minutes. While the
baklava bakes, make the sauce by heating the sugar and water in a medium saucepan until the
sugar dissolves. Add the rum and honey and simmer for 20 minutes. Remove baklava from the
oven. While it's still hot, drizzle the sauce evenly over the top.
*Fun Fact: Phyllo dough is named after the Greek word for leaf, "phyllo," because the dough is
rolled out to be as "thin as a leaf."

Around the world, there are many different New Year’s traditions. Here are a few of the most unique:
Denmark residents break dishes and pile them on their friends’ front doors. The person with the largest
pile is thought to have the most friends. For Brazilians, lentils represent wealth and prosperity, so lentils
are a New Year’s must-have. Romanians throw spare coins into bodies of water to bring good luck,
while Puerto Ricans toss buckets of water from their windows to remove bad spirits. In France, the New
Year meal of choice is a stack of pancakes. What’s your tradition?
Throughout history, the month of January has seen some interesting events. On, January 1, 1804,
Haiti declared independence from France. On January 8, 1941, Great Britain introduced food ration
books to keep citizens fed during WWII. On January 29, 1959, Disney released the animated film
Sleeping Beauty. On January 31, 1961, the first chimp was launched into space. On January 27, 1984,
Michael Jackson appeared in a famous Pepsi-Cola commercial.
Now that 2017 is here, be on the lookout for this year’s expected trends. Industry experts predict
that video content will steadily increase on social media and may even surpass text-based and
image content.
Trendwatchers suggest that the fitness industry will see a surge in “back-to-basics”
exercises, such as running or biking, and a decline in CrossFit and Bootcamps.
Dance classes such as Zumba and Barre will likely continue to be in high
demand, while step aerobics may make a comeback from their heyday in
the eighties and nineties.
In the education arena, expect to see more and more students pursuing
online learning opportunities instead of enrolling in traditional college
and university programs. This shift reflects students’ interest in the cost
savings and convenience factor that online programs offer. With the rise
of online programs like Coursera and Udemy, colleges and universities
may very well see a decline in 2017 enrollment.

Recipe: Stuffed Collard Greens
Try this unique spin on collard greens, a popular New Year’s tradition!
Ingredients:
1 large bunch fresh collard greens
1 cup cooked rice
¼ cup olive oil
½ cup nuts, chopped
½ cup basil, chopped
½ cup lemon juice
Instructions:
Bring a large pot of water to a boil while you carefully wash
and stem the collard greens. Lower collard greens into the
boiling water. After 2 minutes, gently transfer collards to a
bowl of ice-cold water, then drain and set aside. Next, sauté
the rice, basil, and nuts in two tablespoons of olive oil for
five minutes. Wrap each leaf around two spoonfuls of the rice
mixture. Layer a greased 9x13 inch baking pan with the stuffed
collard greens. In a small bowl, whisk lemon juice and the rest
of the olive oil together and drizzle over the stuffed collard
greens. Bake for 30 minutes at 350°/175°.

Tips for Keeping Your Resolutions
Making New Year’s resolutions is a tradition that dates back
thousands of years. The Ancient Romans and Babylonians
are said to have paid their debts, returned borrowed items,
and promised to behave well--all in the spirit of yearly
renewal.
We modern humans also like to start the year off right by
breaking bad habits and practicing good ones. Sometimes,
though, we make drastic, life-altering resolutions that are
almost impossible to keep. Avoid resolution burn-out by
making small changes in your life. That way, you’re more
likely to stick to your resolutions all year and create habits
that last a lifetime. Try these techniques:
• Stay positive. Rather than quitting a “bad” habit,
resolve to start a new hobby. Why not try one new
restaurant each month or sign up for that tap dancing class you’ve always wanted to take?
• Keep it small. Rather than taking on extreme challenges, set a goal to achieve something small.
Why not resolve to walk briskly around your neighborhood each evening and skip the daunting
new gym program? You can always raise the bar as your fitness increases.
• Be kind. Each day, resolve to bring joy to the lives of everyone you encounter. Encourage your
co-workers. Send positive text messages to your friends and family. Invite your neighbors over for
dinner.
