Prosciutto Salad Rolls
Salty prosciutto is offset by
fresh greens to make a
fancy little side dish.
FOR DRESSING
1/3 cup balsamic vinegar
2/3 cup extra virgin olive oil
1 clove garlic, mashed
1 tsp Dijon mustard
Splash Worcestershire sauce
Pinch salt / Pinch pepper
Pinch sugar
Squeeze of lemon juice
Place all ingredients in a jar
and shake vigorously.
FOR SALAD
8 thin slices prosciutto
3 cups mixed fresh greens
1/2 cup sliced dried figs
1/4 cup pine nuts
Fresh goat cheese
Overlap 2 pieces of
prosciutto. Place the
greens in the middle
of the prosciutto and
roll up together. Do
this to make 4 rolls.
Place on plates and
garnish with portions
of figs, pine nuts, and
goat cheese.
