Quinoa
INGREDIENTS
DIRECTIONS
2 cups Silk Original Almondmilk
1.Bring Silk Original Almondmilk and quinoa to a boil
in a medium saucepan.
1 cup quinoa, rinsed
3 tablespoons of honey or brown sugar
(if desired)
¼ teaspoon of cinnamon
½ cup dried fruit
(raisins, cherries, apples, etc.)
¼ cup toasted pecans
(if desired)

2.Reduce heat to low and simmer, covered,

Risotto
INGREDIENTS
DIRECTIONS
1 tablespoon of olive oil
1.Place a medium saucepan over medium-high heat.
½ cup finely chopped onion
2.Add oil and onion and sauté until onion is soft, about
3 minutes. Add garlic and sauté for another minute.
2 cloves garlic, finely chopped
1 cup uncooked Arborio rice
2 cups vegetable broth
1 cup Silk Original Almondmilk
1 teaspoon of lemon zest
1 cup fresh or thawed frozen peas
salt and pepper to taste
2 tablespoons of chopped fresh mint,
to serve (optional)
3.Add rice and cook for 2 minutes, stirring often.
4.Reduce heat to medium and stir in broth and Silk
Orginal Almondmilk. Cook, uncovered, stirring
frequently, for 20-25 minutes until rice is tender.
5.If using fresh peas, add to rice during last 5 minutes
of cooking.
6.Remove from heat; stir in lemon zest and thawed
frozen peas, if using. Add salt and pepper to taste.
7.Divide between plates and sprinkle with fresh mint (if
desired). Serve immediately.
8.Sprinkle with grated cheese when serving, if desired.

1½ cups Silk Original
Unsweetened Almondmilk
1.In a large pot, sauté garlic and onion in coconut
oil until they’re translucent.
2 tablespoons of coconut oil
1 medium onion, diced
2.Add vegetable broth, seasonings, carrots and
sweet potatoes. Bring to a boil, then reduce to a
simmer and cook until sweet potatoes are tender,
about 20 minutes.
4 cups vegetable broth
3.Turn off heat and let soup cool for 10 minutes.
2 teaspoons of cinnamon
4.Add Silk Original Unsweetened Almondmilk
1 teaspoon of curry powder
1 teaspoon of paprika
5.Purée soup in batches with a food processor,
blender or immersion blender.
