1 can vanilla frosting

16 mini chocolate chips

16 pink flat, round sprinkles
16 green spice drops
8 chocolate nonpareil candies (SnoCaps)
16 chocolate crème-filled sandwich
cookies (Oreos)
16 large malted milk balls
Bake cupcakes and let cool.
Press two white spice drops together
and roll out on a clean surface sprinkled
with sugar. Repeat with remaining white
spice drops. Cut out a beard shape from
each of the flattened white spice drops.
Do the same with the red spice drops,
and cut each of them into the shape of a
Santa’s hat.
Soften three of the chocolate chews in
the microwave for three seconds. Press
them together and roll out into a rope
about nine inches long. Cut into a 1/2
–by-9 –inch strip. Makes 8 belts.
Make three shades of frosting. Put
1/2 cup in plastic food bag and seal. Tint
a 1/2 cup of frosting pale pink using one
drop of red food coloring. Tint the
remaining frosting red with the coloring.
Spread red frosting on the jumbo cupcake, mounding it slightly. Roll tops of
cupcakes in red decorating sugar. Snip
the corner of bag with the vanilla frosting and pipe a few dots around the edge
of each jumbo cupcake. Attach chocolate
chew belt around the top edge.
Cover mini cupcakes with pink frosting. Add the spice drop beard to one half
of the mini cupcake and let it overhang
slightly. Add the red spice drop hat on
the opposite side of the mini cupcake,
allowing it to overhang slightly. Add the
mini chocolate chips for the eyes, pointed end down into the frosting. Pipe
white dots along the edge of the hat and
one at the tip with the bagged vanilla
frosting. Attach pink candy décor for
nose, red candy décor for mouth, and
two flat pink sprinkles for the cheeks.
Repeat with remaining cupcakes and
candies.
Turn a decorated head and place it
on its side in the center of a jumbo cupcake. Pipe a dot of white frosting on
each side of the jumbo cupcake and add
two green spice drops, flat-side against
the cupcake, as mittens. Pipe a dot of
vanilla frosting on the center of the belt
and add the Sno-Cap as the buckle.
Repeat with remaining cupcakes.
Arrange two chocolate sandwich
cookies on a small place, positioning
them on top of each other and using a
dot of vanilla frosting to secure together.
For the boots, attach two malted milk
balls in front of the cookies, using more
frosting to secure. Place the Santa cupcake on top of the cookie assembly. Add
additional Sno-Caps to the plate. Repeat
with remaining cupcakes.
