Add water, vinegar and porter ale to saucepan. Wisk in salt, garlic, curry, caraway and black and cayenne pepper. Wisk in starch and Worcestershire sauce.
Mix xanthan gum with 10 to 20 grams of sugar and add while whisking well. Add mustard, molasses and tomato paste, mix well and begin heating. Add
remaining sugar when temp reaches 150 degrees F. Add Belgian Ale and smoke flavors at 180 degrees F. Heat to 200 degrees F, cool and refrigerate until use.
