Pickled Turkey Jalapeno Cheese Sausage Makes (TBD) servings Ingredients: 1 pound ground Turkey 1 Tbls. Diced STG L’il Gem Candied Jalapenos 1 Tbls. Diced Habanero 1/3 cup diced onion 1/2 cup shredded Cheddar Cheese 1 Tsp. STG Garlic, Salt, and Pepper 1 Tsp. STG Smokin’ Chipotle Pepper Sauce 1 pound of hog casings 1 Tbls. Olive Oil Pickling Ingredients: 2 cups White Wine Vinegar 1 cup water 1 Tbls. Salt Directions: Sausage 1. A Over medium heat in a sauté pan, add olive oil, onions, habanero, jalapenos and cook until tender, about 4 minutes, stirring constantly. 2. Remove from heat and place in mixing bowl. Cool completely. 3. Combine all remaining ingredients with onion mixture, stirring until evenly combined. 4. Make into patties or stuff into casings Directions: Pickling 1. In a large pot over medium-high heat, combine the water, salt, vinegar, and red food coloring. Bring to a boil. 2. Sear the sausage or patties, and place into a large sterile jar or seal container. Pour the hot vinegar mixture in with the sausage, secure the lid or cover, and let stand for 2 days before serving.
