Congratulations to all of the monthly student winners & the grand prize winners of the bike! Look for new challenges to come in August! The schools with the most monthly participation for the 2016-2017 school year: 1) Plantation Oaks Elementary: An average of 127 students participated each month 2) Argyle Elementary: An average of 79 students participated each month 3) Oakleaf Village Elementary: An average of 70 students participated each month New Employee Fitness Challenge! May Healthy Recipe of the Month: Celery & Apple Salad This is a light, easy to make recipe that’s full of flavor and perfect for the warm summer months. Yield: 2 servings Ingredients 3 Tablespoons low-fat vanilla yogurt 1 Tablespoon lemon juice ½ Teaspoon Salt ¼ Teaspoon Pepper 1 sweet apple, cored, and chopped with skin on ½ cup red seedless grapes, sliced in half ¼ cup golden raisins ½ cup celery, thinly sliced ½ cup chopped walnuts Instructions In a medium sized bowl, whisk together the yogurt and lemon juice. Add ½ teaspoon of salt and ¼ teaspoon of pepper. Mix in the apple, celery, grapes, and walnuts. Serve on a bed of fresh lettuce.
