Potato Cookbook
Microwave Mashed Potatoes
Microwave
4 red potatoes rinsed but not punctured
Cover microwave safe dish with plastic wrap
Poke small hole in plastic wrap
Microwave for 12 minutes
Stir and mix together
1.) 1/2 cup plain yogurt and milk
2.) 1 tablespoon of butter and sour cream
3.) Salt and pepper to taste

Microwave Roasted Potatoes
4 red potatoes
2 tablespoons of olive oil or canola oil
Dried herbs
Plastic wrap
Directions
1. Cut potatoes into 1-inch cubes and place in microwave dish.
2. Drizzle 2 tablespoons canola oil over potatoes.
3. Sprinkle on herbs. Coat evenly.
4. Place plastic wrap over container. Poke one hole in top.
5. Microwave on high for 10-12 minutes. Serve.
Mashed Potatoes and Cauliflower– Recipe from Country Crock

In a sauce pan cover veggies with water
and bring to a boil:
Once mixture comes to a boil, reduce
heat down to low and simmer for 15
minutes. Drain and add:
2 medium gold potatoes
1/3 cup 2% milk
3 cups cauliflower florets
3 tablespoons vegetable oil butter
2 cloves of garlic or 1/2
1/2 teaspoon salt
teaspoon dried garlic
1/8 teaspoon pepper
2 tablespoons fresh chopped Parsley

1.5 pounds Red Potatoes rinsed but not punctured
Cover microwave safe dish with plastic wrap

Microwave for 10-12 minutes.
Stir and mix with cooked potatoes
1. 1 cup non-fat plain yogurt
2. 1/3 cup minced red onion
3. 1/2 cup reduced-fat Cheddar Cheese
4. 1/4 diced chives, 1/4 teaspoon of salt
Roasted Potato Wedges
5 sweet potatoes or red potatoes
2 tablespoons of olive or canola oil
Salt to taste
Directions
1. Slice potatoes into 1/4 thick strips
2. Coat oil over all surfaces
3. Roast in oven at 450 degrees until golden
brown
Buttery Garlic Herb Mashed Potatoes
Ingredients
Directions
2 pounds rinsed and chopped red potatoes
2 tablespoons butter
1/2 cup plain Greek yogurt
1 tablespoon minced garlic
1.) Add chopped potatoes in greased
slow cooker. Cook for 2 to 3 hours
on high or 5-6 hours on low. Cook till
potatoes are soft.
1 tablespoon dried parsley
1/2 teaspoon fresh basil and oregano
2 teaspoons of salt
1/4 cup low fat milk

Yampkin Pie
Delicious recipe for Canned Yams
Blend Together
1.5-2 pounds canned Yams about 30 or 32 ounce can
6 tablespoons melted butter
2 beaten eggs
1/4 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
9-inch unbaked pie shell
Bake
Bake pie at 400 degrees for 40 minutes.
