Cinco Lanzas is similar to a Manchego but is made
with a blend of sheep, goat & cow’s milk. Cinco
Lanza has been aged for 16 months with hints of lactic and buttery flavors.

Rogue River Blue
Gruyère Facts: Gruyère comes from the canton of Fribourg,
and area north and east of Lake Geneva in Switzerland.
Gruyère’s name stems from the French word “Grue”, which
translates to crane. Gruyère ages from the outside in and is
flipped and brushed regularly with a salt brine. It is made with
raw cow’s milk beginning with the milking’s from the evening.
Then in the morning they blend the morning milk with the evening milk and begin heating in copper vats. With the addition
of animal rennet, the mixture begins to curdle. The curd is cut
up into pea sized pieces and stirred, releasing the whey. Once
the whey has drained, the curds are placed in molds and aged
on wooden racks for two months until they are sent to aging
caves to be cared for the next eight to ten months. Whole
wheels of Le Gruyère AOC weigh between 65-85lbs.
Emmentaler Facts: Emmentaler can only be made in the valley of the Emme River in the canton of Bern. By adding “er”
at the end of Emmental (Emmentaler) indicates that this cheese
was produced in that region. It is a low fat cheese, made with
raw, part-skimmed cow’s milk and is very low in sodium. No
salt is added to the curd, only the rind is salted from it being
washed regularly with a salt brine bath. They age from the inside out and are regularly flipped so the carbon dioxide gas that
releases after the bacteria consumes the lactic acids, creating
holes (eyes), inside the cheese. Helping to expand the eyes
inside the cheese. Whole wheels of Emmentaler weight between 175-220lbs.

Once a year Rogue Creamery releases this special reserve Rogue River Blue,
handmade and aged in caves designed to emulate the
ancient caves of Roquefort. Ripening from naturally
occurring molds found in the Rogue River Valley.
Once this beautiful cheese has matured, it is wrapped
in grape leaves previously macerated in Clear Creek
pear brandy that are tied to the cheese with a natural
raffia.
Supplies are limited, once it’s gone it won’t be back
till next year!
