Easy Pie Pastry
(The recipe can be divided in half to make a smaller quantity of pastry)
2 ¼ cups Nonna’s General Purpose Flour
250g Margarine or Butter (cold)
250g smooth plain Cottage Cheese or Cream Cheese (not fat free)
White or Cheese Sauce
1 litre Milk
100ml Nonna’s General Purpose Flour
100g Margarine
Method:
1. Combine the ingredients in a bowl. Use two table knifes
to "cut" the butter and cottage cheese into the flour.
2. Leave the pastry in the refrigerator for an hour before using.
3. Place a small quantity of the pastry at a time on a
lightly floured surface. Roll out with a rolling pin.
5. No need to grease the baking tin.
6. The pastry can be brushed with egg before baking
to ensure a golden brown colour.
7. Bake at 180°C for 18-20 minutes or until pastry is fully cooked.
Method:
White sauce: Melt margarine in pot, take off stove, stir in
flour, return to heat and add milk stirring all the time till
smooth and thick. Season with salt & pepper. Add milk if
too thick.
Cheese sauce: Add 200g grated cheddar cheese and a
pinch of mustard powder to the white sauce mixture.
To make a small quantity use equal quantities of
margarine and General Purpose Flour. Add the milk
stirring all the time and adding milk until the required
thickness is reached.
