Thai Grilled Chicken Salad

–Grill pan

–Small mixing bowl

What You Need
–Kosher or flake sea salt
–Coarsely ground black pepper

–12 ounces boneless,
skinless chicken thighs
–2.5 ounces green leaf lettuce
–6 ounces matchstick jicama
–2 tablespoons almond butter
–∏ to 1 teaspoon sriracha
–1 teaspoon lime juice
–.35 ounces minced ginger
–∏ teaspoon minced garlic
–1 tablespoon honey
–1 tablespoon soy sauce
–4 ounces purple cabbage and carrots
–.4 ounce peanuts
1. Grill the Chicken: Heat a lightly oiled
grill pan over medium heat. Sprinkle the
chicken with ∑ teaspoon salt and
teaspoon pepper. Place chicken on the
grill pan. Grill 5 to 6 minutes on each
side or until done. Remove to a board
and let rest while preparing the salad.
To Serve: Slice the chicken. Toss the
lettuce, cabbage and carrot mix, jicama,
and drizzle with dressing. Top with
chicken, and sprinkle with peanuts.
H Pro Tip: Do you love your food
spicy? If so, feel free to add the
remaining sriracha from the packet for
an extra kick of heat.

3. Make Dressing: In a small mixing
bowl, whisk together 2 tablespoons
water, almond butter, sriracha, lime juice,
