Appliance description
Use in compliance with the
regulations
MKN-Tilting Frying Pans are kitchen appliances built for
commercial use, and in particular, for use in industrial
catering kitchens.
They can only be used with the proper pots and pans for
preparing food by frying, boiling and baking.
It is forbidden in particular to use them for the following
purposes:
• heating up rooms
• heating up canned food
• heating up brine or acids
• heating up all kind of chemicals
• as a deep fat fryer
• as a work surface
• as a storage surface
It is forbidden to modify the appliances or carry out
technical alterations.
This would cancel all warranties and the safety of the
appliance could no longer be guaranteed.
Staff using the appliance should be properly trained
before commissioning the appliance in accordance with
these operating instructions.
The operating instructions are essential for safe
operation and should therefore be kept in a place known
and accessible to the operators.
Legend
The signs used in these operating instructions have the
following meanings:
Warning of a general hazard.
Forbidden use of water to extinguish oil fires.

General installation
instructions
For problem-free operation, and the maintenance of the
operating safety of the appliance, proper installation,
operation and maintenance must be carried out in
compliance with these installation and operating
instructions.
Only then do the guarantees with respect to the sales
and delivery conditions apply.
The appliance must be set up and installed in compliance with the
valid electrical engineering regulations, fire protection regulations, and other local and building department regulations.
The appliance must only be installed against nonflammable walls and surfaces.
The appliance must be installed in a stable and level
position.
Use the proper gripper clamps and connection profiles
(optional accessories) when installing this appliance in a
line with other MKN appliances.

Electrical connection
All electric parts within the appliancs are connected to a
central terminal box ready for connection on site.
Connection to the mains supply must be carried out in
the proper way by a qualified electrican.
Before connection, check that the power type and mains
voltage match the details on the manufacturer's model
identification plate.
Should the instructions require clarification: always
contact a qualified electrician.
The appliance is designed to be connected to permanent
connecting cables.
Fixed protecting pipes must not exceed a height of
30 mm above floor level or plinth level.
When connecting follow the VDE 0100 regulations or,
where applicable, the regulations of the local power
supply company.
The appliance must only be operated with an earthing
lead connection.
An effective allchannel interrupter unit (with a contact
opening of at least 3 mm) must be connected between
the appliance and the mains supply, e.g. fuses or power
circuit breaker.

Commissioning
The appliance was tested for safe operation and proper
functioning in the factory. Please completely remove any
remaining manufacturing residues, and transport packing
and packing before commissioning.
Before using the frying pan for the first time, clean the
frying surface with water and standard cleaning product.
Then dry the frying surface thoroughly and proceed as
follows:
• Brush cooking fat or cooking oil onto the floor the
frying surface, switch on the main switch and set the
temperature controller to 200 - 250 °C.
• Allow the fat to burn-in well, then switch the
appliance off and allow the appliance to cool down.
• Clean the frying surface with a wire brush and spatula.
• Repeat the burning-in process 2 to 3 times.
Operation
The tilting frying pan must not be used for deep-fat
frying!
It is also dangerous, and therefore impermissible, to use
large volumes of fat because the temperature can locally
exceed 300 °C, which may cause excess fat to ignite.
Please take care when operating the appliance because
of the high temperatures in the cooking area.

Please take care when operating the appliance because of the high
operating temperature in the operating area!
It can cause burns or scalds!
After switching on the main switch, set the two
temperature controller to the selected frying
temperature. During the heating up phase, the heating
current control lamps light up. Upon reaching the
selected temperature, the control lamps go out, and the
appliance is ready for frying. If the temperature drops
below the set value during cooking, it automatically
heats up again. The two zone (right and left) heating of
the frying pan makes it possible, when cooking small
amounts of food, to use one half for frying whilst the
other half is used for keeping food warm. After frying
each batch of food, it is a good idea to remove coarse
residues with a spatula and to wipe the pan clean.
Operating pauses
Turn both temperature controller to ”Δ” and turn the
main switch to the ”0” position.

Warning!
The lid must be completely open before tilting the pan!
Take care when emptying the pan because the hot fat running out
can cause serious burns!
With the manual tilt device
• Turn both temperature controller to ”Δ”.
• Switch the main switch to the ”0” position.

• Fully open the lid right up to the stop.
• Fold out the handle of the hand wheel and turn in a
clockwise direction.
During the tilting operation the liquid level must remain
at least 20 mm below the front lip of the pan.

With the electric motor tilt
device
• To return the pan to the frying position, turn the
wheel in an anticlockwise direction.
• When the pan has reached the frying position, fold the
handle back into the wheel again.
• Turn both temperature controller to ”Δ”.
• Switch the main switch to the ”0” position.
• Fully open the lid right up to the stop.
0
• Turn the control knob to the left to position ”×” and
hold in place.
The pan tilts as long as the knob is held in this position.
If the knob is released, it automatically returns to the ”0”
position and the pan stops tilting further.
During the tilting operation the liquid level must remain
at least 20 mm below the front lip of the pan.
Return to the frying position
• To return the pan to the frying position when the control knob is turned to position ”Ø”.
• The pan returned as long as the knob is held in this
position.

automatically switches off.
Then relaese the control knob, it automatically returns to
the ”0” position.

General
The appliance should be cleaned every time it has been used!
Switch off the power before cleaning the frying pan to cool down!
Never pour cold water onto the hot frying pan because shock-cooling can lead to deformation of the frying surface!
Do not spray the appliance with water or steam jets!
Comment:
The tilting frying pan has a hose-water resistant finish (protection
type IPX5 according to EN60529), however, the protection level is
not high enough to withstand direct cleaning with water or steam
jets, which is why such cleaning equipment should not be used
(DIN VDE 0100 T 737).

cleaning products.

Always flush out thoroughly and wipe dry.
Then rub the frying surface with frying fat.
Do not allow steel cleaning wool residues or aggressive
cleaning products to remain in the basin for long periods
of time (soaking over night) because they can attack the
stainless steel!
High salt concentrations, which can result for example
from the frequent boiling of potatoes, also give rise to
corrosion.

If any corrosion occurs, it should be cleaned down to the
metal with scouring powder to prevent the corrosion
spreading.

After a long period of use, lubricate the lid hinge with
special grease to ensure that it continues to work
smoothly.
Work routine:
• Close the lid.
• Unscrew the hexagonal
cover nut.
• Inject grease into the
grease nipple using a
grease gun.
• Screw the cover nut
back on.

Malfunction procedure
General
The appliance must first be checked by a qualified
specialist before the safety temperature limiter is
allowed to be switched back on again.
Only a specialist should attempt to determine the cause
of a malfunction and make the necessary repairs for all
malfunctions which cannot simply be attributed to
external influences or accumulated dirt.
Safety Temperature
Limiter (STL)
If the Safety Temperature Limiter (STL) springs into
action and turns the heating off, it should only be
switched back on again after first determining the cause
of the failure and after making the necessary repairs.
Switching on the STL
To switch the STL back on again, it is first necessary to
temporarily remove the control panel.
After the appliance has cooled down, the red unlocking button can
be operated without applying any force.
The STL can be damaged if attempts are made to switch
it on before the appliance has cooled down sufficiently.
Replace the cover plate in the control panel immediately
to protect the interior of the appliance from water.
The fracture fail-safe STL can also be triggered when the ambient
temperature drops below 0 °C.
Before switching it back on, the sensor must first be warmed up to
room temperature (20 °C).
Only then can the STL be switched back on again.
Broken control lamp
The appliance must not be operated if any of the control
lamp lenses are broken or leaky.

Cleaning fluid can enter improperly sealed control lamps and
destroy the protective resistant of the low-voltage neon glow lamp.
This can cause the low-voltage neon glow lamp to explode when
switching on the appliance!
When replacing components, always use original
components from the latest spare parts list.
Also always use the existing or new identical connecting
components - this is also valid for the assembly of
external housing components.
