Braised Brussels Sprouts SERVES 6 Executive Chef Dan Ratigan The Fireside Restaurant, The Resort at Port Ludlow 2 tablespoons water 4 ounces thick-cut applewood-smoked bacon, diced small 1V pounds Brussels sprouts, trimmed, cut in half, and washed W 2 1 1 3 cup yellow onion, diced small cloves garlic, chopped tablespoon fresh thyme cup chicken stock or low-sodium broth tablespoons white wine vinegar kosher salt & freshly ground black pepper olive oil Add 2 tablespoons water to a large skillet and set over medium-high heat. Add bacon and cook until fat renders, about 2 to 3 minutes. Remove bacon and add Brussels sprouts, onion, garlic and thyme to the pan with bacon fat. Cook until slightly caramelized. Add stock, vinegar and cooked bacon. Simmer until tender. Season with salt and pepper. Finish with a drizzle of olive oil. chef’s note: When preparing Brussels sprouts from the stalk, snip the end of the sprout, cut in half and then wash. You do this because as the sprouts grow, dirt can collect on the inside and so the final layers may be gritty. This prevents the grit from becoming a part of your meal.
