Amazing Fresh Fruit Salsa
Ingredients
3 peeled and diced kiwis
2 golden apples- peeled, cored, and diced
8 ounces of raspberries
1 pound of strawberries
2 tablespoons white sugar
Directions
In a large bowl, stir together kiwis, golden apples, raspberries, strawberries, and white sugar. Cover and
chill in the refrigerator at least 30 minutes.
Organic Lime-Cilantro Salsa
Ingredients
3 tomatoes, chopped
1/2 cup finely diced onion
1/2 serrano pepper, finely chopped
1/2 cup chopped fresh cilantro
1 teaspoon salt
2 teaspoons lime juice
Directions
In a medium bowl, stir together tomatoes, onion, serrano pepper, cilantro, salt, and lime juice. Place the
mix in a blender or food processor and pulse until desired consistency. Chill for one hour in the
refrigerator before serving.
Lemon-Lime Guacamole
Ingredients
3 medium avocados or 4 small ones
1 firm tomato, finely diced
1/2 white onion
1/2 cup chopped cilantro
2 tablespoons fresh lemon or lime juice
Salt and pepper to taste
Directions
Open the avocados and scoop out the flesh. Mash the flesh with a fork. Stir the other ingredients. Enjoy
right away or store in the refrigerator.
Tropical Dream Salsa
Ingredients
2 cups chopped seedless watermelon
1 (8 ounce) can crushed pineapple, drained
1/4 cup chopped onion
1/4 cup chopped fresh cilantro
3 tablespoons orange juice
1/8 teaspoon hot pepper sauce
Directions
Toss watermelon, pineapple, onion, cilantro, orange juice, and hot pepper sauce together in a bowl.
Refrigerate 1 hour before serving.
Black and Yellow Salsa
Ingredients
1 (15 ounce) can yellow corn, drained
1 (15 ounce) can white corn, drained
2 (15 ounce) cans black beans, drained and rinsed
1 (14.5 ounce) can Italian-style diced tomatoes, drained
1 bunch finely chopped cilantro
5 green onions, finely sliced
1 small red onion, finely chopped
1 red bell pepper, seeded and chopped
1 tablespoon minced garlic
1/4 cup lime juice
1 avocado - peeled, pitted, and diced
2 tablespoons olive oil, or to taste
Directions
Stir the yellow and white corn, black beans, tomatoes, cilantro, green onions, red onion, bell pepper,
and garlic in a large bowl. Gently mix in the lime juice and avocado. Drizzle with olive oil to serve.
Perfect Pico de Gallo
Ingredients
2 medium tomatoes, diced
1 onion, finely chopped
1/2 fresh jalapeno pepper, seeded and chopped
2 sprigs fresh cilantro, finely chopped
1 green onion, finely chopped
1 tablespoon lime juice
1/2 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper
Directions
In a medium bowl, combine tomatoes, onion, jalapeno pepper, cilantro, green onion, and lime juice.
Season with garlic powder, salt, and pepper. Stir until evenly distributed. Refrigerate for 30 minutes.
