Introducing Galastar™ Applications Galastar™ is Galactic’s brand name for starter cultures. Principally, these micro-organisms aim to protect food against spoilage bacteria and pathogens, improve colour, texture and enhance flavour profile. We use these solutions, in particular, in meat applications such as dried sausages, cooked ham or fresh meat to trigger the fermentation process. Different types of strains are combined in starter cultures in order to achieve optimal synergies. The choice of starter is made in function of the application and the process. Dried sausages > Salamis, chorizo, spreadable sausages… Main functions of Galastar™ in dried sausages: What is a starter? Starter cultures are preparations of living microorganisms used to facilitate fermentation. In meat products, two main types of microorganisms are used: lactic acid bacteria and Micrococcaceae. What are the advantages? Acidification contributes to the inhibition of spoilage bacteria and pathogenic flora, texture and taste; Decomposition of nitrates to nitrites enables colour stability; Aroma formation arises out of the controlled metabolism of the bacteria; Stability of the product is enhanced by the action of the catalase produced by the starter culture. Fresh meat/sausages Functions of Galastar™ used in fresh meat: Increased shelf life; Food safety (inhibition of potential pathogenic micro-organisms); Development of taste; Prevention of deterioration in appearance.
