Sushi should be a social event — the best way to experience all of the amazing flavors and
textures available is to order a variety of items and share them around the table. To ensure
that you are enjoying our sushi at the peak of freshness, we will deliver your selections as they
are created and place them in the middle of the table to be shared. If you have a specific
request in how you would like your food to be delivered, please let us know.
In order to achieve the perfect balance of flavor and visual appeal, every roll is carefully crafted to order. Our “hand picked” team of sushi chefs have created a menu of both traditional sushi standards and unique specialty rolls that celebrate the diverse cultures of the Caribbean.
For both our traditional and specialty offerings, we source fresh fish, fruits and vegetables
from throughout the Caribbean.
Our offerings of Sashimi, Nigiri, Chirashi and Maki Rolls are simple and classic — the traditional condiments of soy sauce, wasabi and pickled ginger are the perfect accompaniment to
the fresh, clean flavors found here.
Just because something is so steeped in tradition, doesn’t mean we can’t have fun!! When it
comes to our specialty rolls, we take a more light hearted approach. You will find that the
names of our rolls reflect some of the “eccentricities” that make our island special. The flavors
and textures you will find in our specialties are perfectly balanced — from the freshness of the
seafood, to the seasoning of the rice, to the precise knife-work on the vegetables, to the sauces and glazes ranging from subtle to vibrant — each bite is a feast for the eyes as much as it is
for the tongue. These flavors are designed to stand on their own without the addition of soy
sauce, wasabi or pickled ginger.

Sushi 101
Chayote — an edible member of the gourd family with a fairly mild taste, and a texture similar to a cucumber
Chirashi — “scattered sushi” — thinly sliced seafood served in a bowl with seasoned rice, vegetables and other garnishes
Coulis — thick sauce made from pureed and strained vegetables or fruits
Daiginjo — sake that is made up of rice, water, koji mold, yeast and a portion of distilled alcohol, and the rice is milled 50%
with 50% of each grain remaining
Daikon — mild flavored winter radish usually characterized by fast-growing leaves and a long white napiform root
Edamame — immature soybeans which are steamed and served in the pod
Ginjo — sake that is made up of rice, water, koji mold, yeast and a portion of added distilled alcohol, and the rice is milled 40%
with 60% of each grain remaining
Hamachi — sturdy ocean fish also known as yellowtail jack with a delicate flavor
Hondashi — soup base or stock most commonly made out of fish
Inside Out — seasoned rice wrapped around thinly sliced fish, vegetables and nori
Junmai — sake that is made up of water, koji mold, yeast and rice that has been milled 30% with 70% of each grain remaining
Kabayaki — sweet soy or eel sauce
Kani— made with imitation crab sticks made from white fish
Kanikama — imitation crab sticks made from white fish
Kimchee — vegetables pickled with vinegar and spices
Kombu — edible kelp commonly used in japanese cooking
Maki Roll — thinly sliced fish, vegetables and seasoned rice wrapped in nori with soy, wasabi and ginger served on the side
Miso — Japanese seasoning produced by fermenting soy beans
Nigiri — oblong mound of sushi rice pressed into a small rectangular box with fish or vegetables and a small amount of wasabi
Nigori — unfiltered sake that is generally the sweetest of all sakes, with a fruity nose and a mild flavor
Nori — edible seaweed that has been shredded, stacked and dried into sheets
Ponzu — sauce made from yuzu citrus and soy sauce
Sake — Japanese rice wine that is made by fermenting rice that has been polished to remove the bran
Sashimi — thinly sliced seafood with a garnish of shredded daikon root served with soy, wasabi and ginger on the side
Sushi — short grained, starchy rice traditionally seasoned with vinegar, hondashi and kombu
Tobiko — flying fish roe often flavored with wasabi, yuzu or squid ink
Togarashi — Japanese condiment made from dried chili peppers ground to a powder
Unagi — freshwater eel commonly used in japanese cooking
Wakame — edible seaweed with a subtly sweet flavor and is most often served in soups and salads.
Yuzu — aromatic citrus fruit originating in southeast asia
