Challenge

The Gais mountain cheese dairy is located
in the rolling hills of the Appenzeller region
between Lake Constance and Säntis.
With 8 staff members, the cheese dairy processes 25,000 to 30,000kg of milk daily to
make various hard and semi-hard speciality
cheeses as well as raclette cheese.
In order to maintain a showcase operation,
one of the most important tasks is cleaning
all of the equipment in the cheese dairy.
This not only requires sterilization but
also the use of acidic and alkaline cleaning
agents when necessary, which are then
rinsed off with water. This means that
wastewater is also produced in a cheese
dairy and must be treated before it leaves
the dairy and is discharged into the sewage
water system.
The pH measuring point was fitted with the
best technical solution on the market:
the Memosens measuring point (pH sensor
Orbisint CPS11D and Liquiline CM42
transmitter) transmits the values digitally
and can perform neutralization automatically with a small PLC. The small amount
of space required for batch neutralization
proved a challenge when it came to planning and implementing the system. When
constructing the control cabinet, a WAGO
I/O system was chosen as the PLC based
on positive experience with it.
A touch panel makes the system so straightforward that operating staff can use it with
minial training. Interactive on-screen display of the basin, the pump and the status
of the valves and levels provides information on the process flow at all times. The
pH values of the wastewater discharged are
shown with the Ecograph T graphic display
recorder continuously and accurately.
Solution
The water that is produced is collected in
a special combi-basin. As soon as a specific
volume is reached, the wastewater is homogenized and the pH value tested. If this
value is within legal limits, the wastewater
is pumped directly into the public sewage
treatment plant. If the discharge values are
violated, neutralization is triggered by the
PLC whereby acid or alkali is added.
The mountain cheese dairy makes a valuable contribution to environmental protection by tracking these values and reacting
to them accordingly. This complete solution
