WHAT’S OUR DEAL?
Some dude (Sir Eric Alperin) once said:
“Ice is the bartender’s flame.”
W
hat the heck does that mean? Ice
‘cooks’ cocktails. Not all flames are made
equal and not all ice is either. Ice is a way
to incorporate ingredients in a cocktail and
make it cold at the same time.

But it is not easy to incorporate
without over or under diluting.
Oh, and our ice is really, really
pretty. Like Prometheus, we strive
to share our gift with the world,
no reason to keep it all to
ourselves.
Entering our third year of business, we
are newly located in the basement of the
Arts District Brewing Company in the
Arts District of Downtown Los Angeles.
There we take frozen water and distribute
it to the masses.

ur goal: to deliver clear, hand-cut ice for use in
creating and appreciating beverages, but never to distract
from them. Like minded individuals or curious folk want to
know how we do what we do? Read on!
We are a small family with big frozen hearts.

FROM LAKES,
TO CLINEBELLS.
I
n the beginning, there were no Clinebell Ice
Machines, just lakes. Now, thanks to the
Clinebell Ice Company we are able to flip
nature upside down.
These behemoths freeze water from the bottom
up over the course of 3 days, the end result
being 300 pounds of ice. Originally the
machines were used by ice sculptors, but the
Clinebell family has been kind enough to share
their gifts with us.

Cool, no? Sure, but what’s wrong with my ice tray?

Frozen in these amounts, the
density of the ice is sturdier than
any ice tray could ever create, but
more importantly is its clarity.
Inside the Clinebell machine pumps
is where the real magic happens.
Oxygen bubbles constantly agitate
and circulate the water like chariots
in an arena capturing impurities,
debris, and dirt and carrying them
to the top. where, once entirely
frozen, we scrape off and discard
leaving nothing but pure ice.

Watery drinks =
I
t’s clear! It’s dense! It’s hand-cut! And
it tastes great (sort of). So ice makes
things cold but as it chills it also dilutes.
It is a balance, like cooking, where you
don’t want to char that steak and not
cook the inside and you don’t want to sit
for an hour waiting for a lukewarm piece
of meat. Adjust the flame.

Ice will stay the same temperature, but
where our ice differs from those trays is
in Surface Area.

So basically less surface area equals less melting of ice in your
drink. And more surface area means more melting inside your
drink. More than three times as much ice touches the drink with
the 1 inch cubes . That means your drink is diluting 3 times as
quickly! Not Tasty!

wiser man (the great Richard Boccato the
III, Lord of Dutch Kills ) once said:
“All other things being equal (temperature of ice,
temperature of ingredients, etc), the advantage
to shaking with a bigger colder single cube is that
you can ideally shake it longer, thus giving you the
desired consistency of ice crystals and “liveliness”
that you want on the head of a shaken straight up
cocktail. With that in mind, we must recall how
Harry Craddock did so eloquently instruct us 83
years ago to enjoy our drinks while they’re smiling
at us!”
Could not have said it better. But don’t trust us, try
it yourselves. Or you could just trust us.

on’t be fooled, we are more than a one trick pony.
A shaking CUBE makes a great Daiquiri or put that Scotch
on a ROCK. Perhaps a SPEAR for tall drinks or maybe
PEBBLES for a mojito or Mint Julep. Yeah, we’ve got that.
Hell, get a CINDERBLOCK and DIY it. It’s like our
original tagline: Got Ice? Stay Cool.
