It is recommended practice that such foods are kept at less than 5°C at all times. Keep fish and fish products well iced. Perishable foods may be kept at more than 8°C for a maximum of 4 hours, for display purposes, on no more than one occasion. Vacuum packing products is not a substitute for proper temperature control.
