Temperature Checklist Reminder
 The legal requirement is to store ready-to-eat perishable foods at no more than
8°C.
 It is recommended practice that such foods are kept at less than 5°C at all times.
 Keep fish and fish products well iced.
 Perishable foods may be kept at more than 8°C for a maximum of 4 hours, for
display purposes, on no more than one occasion.
 Vacuum packing products is not a substitute for proper temperature control.
You should keep the completed temperature charts with your other
mobile food vendor documentation
