There was little to no wind. Two boats, the Atlantic Traveler and Blue Diamond, both large commercial shing vessels, sat quietly tied alongside the dock. Men moved with purpose; icing and packing the catch that had just been unloaded. The rest of the eet of 17 to 25 boats were all out shing. This could be many different locations along the eastern seaboard; Maine, Massachusetts, Montauk, North Carolina, or Florida. inshore migration. The sh move from the deeper waters on the edge of the Continental Shelf and move into the shallows much closer to land. So, for the next 3 to 4 months (until the cold water starts the migration back offshore) we can expect to see uke, ounder, black sea bass, skate, monk, and probably the best day boat dry sea scallops anywhere, all available on a daily basis. In this case however we were in New Jersey at the Fishermen’s Dock Co-Operative in Point Pleasant beach. John Cole who runs the dock was kind enough to spend some time to explain how the Co-op works and how they provide fresh New Jersey seafood year round. Chris Lazicki checks out Fluke caught 4 hours ago. The eet in Point Pleasant shes year round and for many different local species. In the rst quarter of this year 2.1 million pounds of sh were landed here. The boats are day boats, which mean they leave dock early in the morning and return that same evening. John keeps in constant contact with all the captains to monitor catch sizes and what type of sh they are catching. He uses this information to arrange for the sale and distribution of the entire product. This allows for the catch to go from boat to customer in a 24 hour period. The shing industry is overseen by the National Marine Fisheries who issue permits specic to species, season, area and size of the sh. Each boat is allowed limited overall poundage of catch to ensure the future health and sustainability of the wild caught shery in New Jersey. The Co-op has been operating since 1950 and local captains go back three generations. According to John, warmer water temperatures trigger an (l to r) John Cole, Captain Skip, Jonathan Meyer, Chris Lazicki on the Pt Pleasant Co-Op dock. The key to fresh sh is getting as “close to the boat” as possible. Jersey sh from Point Pleasant, Barnegat, and Cape May means super fresh, super high quality seafood delivered from AFI to you less than 30 hours from swimming in the ocean. So really if you wanted it any fresher you’d have to catch it yourself. “The key to fresh fish is getting as close to the boat as possible” The freshest of fresh dry sea scallops. Since then, New Year’s resolutions always seem somewhat trite. Don’t get me wrong, I played along; diet, quit smoking, take up macramé, curse less, whatever. I hit all the popular socio- politically correct categories; they just never VHHPHGWRVWLFN6RDV,ÀQGP\VHOIVWDQGLQJRQWKHSUHFLSLFH of 2013, I have decided to dig deep and come up with a meaningful and character enhancing resolution to which I intend to follow through on. After much soul searching, I have decided to move into the New Year as if it were a clean sheet of paper. My New Year’s resolution is to be less cynical! That being said, I decided to take a good look around and look for all the good stuff coming XSÀVFDOFOLIIVKLJKHUWD[HVJOREDOXQUHVW6RIDUWKLVLVWXUQing into a more daunting task than I had originally hoped for. Then an epiphany occurred! The New Year ushers in everyone’s Top 10 Lists for everything. Lists about great music, great vacation spots, great cars; they even have lists for great lists. Alas, after scouring food magazines, food blogs, newspapers and THAT channel on T.V. I came up unsuccessful. Plenty of food lists. Plenty of favorite dishes, plenty of must-see restaurants, plenty of top 10 chef’s lists (at last count there are 74,318 top ten chefs in WKH8QLWHG6WDWHV1RWRSÀVKOLVWV Not being one to give up that easily, I decided to plow forward. Two words kept repeating on all the food lists referring to seafood; local and sustainable. I’m not even touching sustainable right now. It has presently become an ever-changing contradictory mess depending on whom you are asking. Again, it depends on who you ask. Also, and perhaps more importantly, I want it noted that I allegedly, and for the most part probably, as far as I can recall and maintain full deniability of, have never had any personal knowledge or participation in any of the practices described herein. These are just a few “tricks of the trade” that apparently take place in the sh business that you should be aware of to ensure you’re getting what you pay for. I Think Your Thumb is on My Salmon Re-Freshed First let’s talk about the term re-freshed or cut fresh. What this means is the sh you’re buying has been previously frozen. The sh are caught at peak shing mes and massive quanes are either frozen whole or lleted and the llets are frozen. They are then slacked or thawed out and sold as fresh products. These refreshed products are much less expensive and can come from any unknown origin. There is nothing inherently wrong with a refreshed product. The issue arises when a vendor forgets to put the “re” in front of the “fresh” when selling it. The previously frozen product will tend to fall apart when cooked and will lack the aky consistency and become almost mushy. So, if there is a large gap in llet pricing and you want to check if you’re geng previously frozen cod, ounder or sole llet, (the 3 items most frequently substuted refresh for fresh), try ordering your llet skin on. They don’t freeze these with the skin because when it contracts and expands during the freezing/thawing process, the skin pulls away from the meat. Wet, Dry or Slightly Moist Everyone knows dry scallops are sent to market untreated and chemical free, no water added. Everyone knows a wet scallop is soaked in water and chemicals for extended periods of me to extend shelf life and increase size. Dry and wet scallops both have applicaons and are used and sold accordingly. Then there is the gray zone. Scallops are like sponges, so if a vendor wanted to lower his price and increase his margins he could, (again as far as I know this is all hearsay and legend), take dry scallops and “overnight” them. This consists of taking dry scallops and soaking them for short periods of me, (like overnight). By doing this the vendor can increase his total weight by around 20%. Vendors can use this to lower pricing and you receive an inferior product that will result in water loss while cooking and a faint chemical taste in the nished product. Fillet Send All? The last “trick” to be addressed is probably the most costly to the end user. When a company sells whole sh and oers to llet it for you, you’re sll paying for the whole sh. This is called llet send all (FSA) or llet with bones (FWB). Nice services as long as you’re geng what you pay for. Oen the vendor won’t send the bones or will send them separated from the llet. There is virtually no way to check the weight on what you’re buying. They can take a 10 lb whole sh, weigh it and accidently have their “thumb” or anything else on the scale with the sh. You get charged 12 lbs and they are sending you 7.5 lb of llets and random or no bones. A scale is the sh buyer’s best friend. The weight on your invoice has to match the weight on your scale! If you need the racks (head and skeleton), take the sh whole and cut it yourself, otherwise use net llet and pay only for the llet. Accountability is key to assuring that you’re not paying for what you’re not using. In summary, a lile educaon can go a long way in the art of buying fresh seafood. Always buy from a reputable, trustworthy source; then double check anyway. Knowing what to look for keeps everyone honest. At AFI, an educated sh buyer is our best customer.
