1. Campus is self-explanatory, referring solely to WWC. This figure can be considered to be very
accurate.
2. The “Appalachian Grown” region, defined by ASAP, is delineated below along with its label.
While this figure is fairly accurate, it is possible that some products (or their contents) actually
originated from outside of this or the next tier. Its position is depicted (below) within the latest
Federal definition of what constitutes the Appalachian region.
3. For this audit, the “southeastern US” was defined as North Carolina and its five neighboring states
(labeled on the map above). Notably, this excludes Florida, Kentucky, and the gulf states, which are
often included in this region's definition. Furthermore, it undoubtedly did not include the full extent
of foods that were produced in this region as it was defined, let alone the broader one. At least some
of the milk, beef, eggs, chicken, produce, grains, legumes, and juice procured from Sysco, Inc. and
United Natural Foods, Inc. originate, and are even processed, in the region by either definition.
Unfortunately, it is currently impossible to track most of these products from their farms, through
varying processing and distribution channels, to our kitchens, and thus have been excluded. The
food pie chart below includes an educated guess as to the quantity of food that likely meets this
criteria, but cannot be accounted for at present.
