Greenpeace Flour Power events for Pancake Day Reci pe Basic Batter Recipe – for making about 8 pancakes Ingredients • 4oz (100g) plain flour. • Half a Pint (250ml) of milk. • 1 Standard Egg. (Size 2) • Pinch of Salt (half teaspoon) Making the Batter 1. Sieve the flour and salt into a mixing bowl. Make a small hollow in the center of the mixture and drop in the egg (not the shell). 2. Begin to mix while gradually adding about one quarter of the milk. Continue to mix well until bubbles become visible in the mixture. 3. Gradually pour in the remaining milk while continuing to mix. (if it's a bit too thick, add a little water.) 4. Pour batter into a jug for easier pouring into pan. Making the Pancakes 1. Heat the frying pan, and place a small piece of oil/butter/margarine in the center. Allow this to melt and spread over the pan. 2. Get the pan nice and hot and when the oil begins to smoke slightly, stir and pour in some of the batter - approximately 30ml or 2 tablespoons, or enough to thinly cover the bottom of the pan. (tilt the pan to help the batter spread evenly) 3. Cook until nicely golden brown on the bottom. (shouldn't take too long) 4. And now the only tricky bit of the whole operation - toss / flip the pancake to within an inch of the kitchen ceiling and position the pan to perfectly catch the pancake on the way down - cooked side up, easy. (you could of course just turn it over with a big plastic spoon, but where's the fun in that?) 5. Cook the other side until nicely golden brown. (tip - when frying never turn the pancake more than once.) 6. Serve immediately with toppings (see below) on top and roll or fold pancake. Yummy toppings Classic – squeezed lemon and sugar sprinkled over Fruity – dried and chopped fruit with dribble of juice (and sugar to sweeten if needed) Naughty – chocolate spread and chopped banana (if you use at least one banana it counts as a portion of your 5 a day!) Savoury – chopped sautéed mushrooms and grated cheese Simply jammy – spread with strawberry jam (or any other jam you have in the cupboard!) Stencils - to help brand the pancakes for your special event you could sprinkle with coloured sprinkles, icing sugar or cocoa powder in the shape of a dove or the Rainbow Warrior using our stencils. Running your pancake day event 1. Decide where and when to have it. Is this a work breakfast/brunch or maybe an early home tea for your kids and their pals? Maybe a lunch time event for all the people you know who happen to be at home that day. Or you could get really sophisticated and have a pancake dinner party for your friends and family! 2. What do you charge? You could charge everyone a set amount to come – so maybe £5 to attend and they eat all they want, or £1 a pancake. Don’t forget to take your costs out of the money so you know how much to charge and how much will be profit for Greenpeace. 3. Make it simple. Try to keep the day as simple as possible this way you have less to do and you hopefully make more money. Set all the condiments out so people help themselves to their toppings – if you want to use stencils make sure you have several ready in advance. Then on the day make sure everyone knows exactly how much they are expected to give (with a tin for donations!) and then all you have to do is make LOTS of batter (you can make this in advance and keep in the fridge – but make sure you have plenty of ingredients to make more if you need to!) and fry those pancakes!
