The standard measure of how much alcohol is
contained in a given volume of beer.
INTERNATIONAL BITTERNESS UNITS:
Bitterness in beer is measured by IBU, with each
style having a typical range of bitterness.
TYPES OF BEER
LAGERS
ALES
A type of beer that is fermented at low temperatures, normally kept in cold storage at the
brewery; Giving them a crisp, clean flavor. It
may be pale, golden, amber, or dark.
A type of beer brewed using a warm fermentation method resulting in a sweet, fullbodied &
fruity taste. Historically the terms “beer” & “ale”
referred to drinks brewed with & without hops.
Over time “beer” came to refer to all beers,
though -after the development of cold fermented
beer (lager)- “ale” came to refer to warm fermented beers only. The majority of Craft beers
fall into this vast catagory.
IMPERIAL/
DOUBLE
Beers that tend to have 7% or
more ABV are often defined as Imperials or as
Doubles. These varieties also tend to have more
intense flavors & sometimes feature extra hops.
IBU varies on style & brewers preferance.
PALE ALES
A term that refers to many styles popular across
the beer spectrum. With many varieties &
flavors, Pale ales are among the most popular
Craft beers. Some examples include:
AMBER ALES/RED ALES- Light copper to light brown
in color, made with a mix of Amber & Crystla
Malts.
BLONDE ALES- Tend to be clear, crisp with low-tomedium bitterness & aroma from hops, & some
sweetness from malt.
ENGLISH PALE ALE (EPA)- Sometimes defines as
“Extra” or “Bitter”. A mix of fruity, hoppy, earthy,
buttery, & ,alty aromas.
AMERICAN PALE ALE (APA)- American Cousin of the
EPA, expect a good balance of malt & hops. Fruity
esters can vary & bitterness can range from lightly
floral to pungent. Tends to be cleaner & hoppier
than EPA’s.
INDIAN PALE ALE (IPA)- Color can range from very
pale golden to reddish amber. Hops are typically
with a big herbal and/or citriccharacter, bitterness
is high as well. Moderate to medium bodied with a
balancing malt backbone.
(Other styles include Rye, Brown, Black, Cream
ales, Extra strong & Extra Special Bitterness along
with other varieties.)
These are just some examples of the multitude of beers out there for you to enjoy. Try
them all, because you may just find your
CIDER
Known as hard cider in North America; This is
an alcoholic beverage made from the fermented
juice of apples or other fruits such as pears. Most
American Ciders tend to have a sweet, tart taste
& be less dry than their British counterparts. The
three main types are Sweet, Semi-sweet, & Dry.
STOUTS & POURTERS
The malts they use give them their flavors,
textures, & bold black color. The main differance
many brewers still agree on in the kind of malt
that should be used to brew each type of beer.
Porters use malted barley, & stouts are primarily
made from unmalted roasted barley, which is
where the coffee flavor most people associate
with stout comes from.
MILK STOUT- A stout containing lactose, a sugar
derived from milk. Because lactose is unfermented
by beer yeast, it adds sweetness.
OATMEAL STOUT- Medium to full bodies stouts
that have an unreal smoothness to them from the
addition of oats to the mash.
PORTERS- Whether it is highly hopping the brew,
using smoked malts, or adding coffee or chocolate
to complement the burnt flavor associated with this
style are created. Some are even barrel aged in
Bourbon or Whiskey barrels. The hop bitterness
range is quite wide but most are balanced. Many
are just easy drinking session porters as well.
WHEAT BEER- Beer that is brewed with a large
proportion of wheat relative to the amount of
malted barley; it is usually top-fermented. The two
main varieties are Weissbier & Witbier.

Beaver Island Brewing Co. is the firt standalone brewery in the city since the former St. Cloud Brewing
Co. closed in 1939. Staying local and true to it’s roots using local contractors and lots of local history
give this microbrewery and tap room a true Central Minnesota fell. The taproom is at the former
location of Bo Diddley’s Deli. Beaver Island’s initial flagship beer is “Ripple,” named after the river
motion, and “39,” which is named for the year St. Cloud Brewing Co. closed. That was also the year the
Beaver Island’s 216 Sixth Ane S. location was built. “Union Suit” is named after a one-piece pajama.
“Lane 5” has five hops varieties and is named after the former Granite Bowl South bowling alley lane,
which has been repurposed to serve as the Beaver Island taproom bar top.
RIPPLE- GERMAN ALE [STYLE: KOLSCH | ABV: 4.8% | IBU: 24]
The fresh, German inspired ale is golden in color with a cracker-like malt profile. Couple that with the perfect balance of floral/spicy German hops from St. Cloud’s sister city Spalt, Germany and you have the perfect session beer
with a crisp, refreshing finish. Prost!
39 RED IPA
[STYLE: RED IPA | ABV: 6.9% | IBU: 68]
The name 39 pays tribute to St. Cloud’s rich brewing tradition. Artfully blended British and Belgian malts contribute
a slight roast/dark fruit canvas for broad sweeps of Pacific Northwest hops that give a firm bitterness and citrus
dominated flavor and nose. Cheer!
UNION SUIT IMPERIAL PORTER
[STYLE: PORTER | ABV: 8.9% | IBU: 30]
With the Union Suit we load our mash ton to the brim with the finest floor malted English barley and add the
perfect combination of crystal and roasted malts. English hops are added to the kettle to balance the huge malt
backbone of this tasty brew. Skol!
TIP UP - WINTER ALE
[STYLE: AMERICAN STRONG ALE | ABV: 7.3% | IBU: 33]
Our Tip-Up winter ale is brewed with a touch of smoked German beechwood malt, the first locally grown
and pelletized hops, and a late kettle addition of young spruce tips. Our hope is to encompass the joys of
MN winters; a warming fire, the scent of conifers, and a satisfying day on the lake waiting for the big one
to hit our line.

LANE 5 – IIPA

The name Lane 5 pays homage to our taproom bar top’s past life, a bowling alley. We could use clichés
like we throw a strike to your taste buds with a heavy dose of hops, we spared no expense, or this is no
turkey. But we’ll let this hop monster speak for itself. Enjoy.
REVOLUTION II - DENALI IPA
[STYLE: IPA | ABV: 6.4% | IBU: 74]
It’s time for our annual Revolution IPA Series to celebrate our second trip around the sun. This year we’ve
created some single hop goodness using a boat load of Denali hops, which are causing quite a stir in
brewing circles. This brew is bursting with tropical, stone fruit, and citrus flavors and aromas. Enjoy a pint
to see what all the buzz is about.

Gateway Park is a pre-prohibition lager brewed with ingredients commonly used in this same style beer over a hundred years ago;
six-row barley, flaked corn and Cluster hops. This beer pays homage to the Gateway District or as it was known back then, Bridge

the black sheep of our cellar family. Ironically, when our brewers were developing variations on a traditional Belgian-style

syrup in the brewhouse as well to give the beer a sweet flavor and full body. After fermentation and aging the beer is transferred
into the bourbon barrels. It is then aged for another 8 weeks to absorb all of the flavors from the barrels. The result is brown ale

In celebration of the 300th batch at our Minneapolis brewery, we decided to brew a one-time only beer for our Garage Series. And
since so many of those 300 batches have been IPAs, why not celebrate with an IPA? Batch 300 is built on a base of Weyermann Pilsner
malt, and heavily hopped from start to finish with Mosaic, one of our favorite new American hop varieties.
2014 WAR & PEACE IMPERIAL COFFEE STOUT

Fulton War and Peace is a Russian Imperial Stout conditioned with whole bean Peace Coffee in the fermentation tank. It’s an epic
work of beer, but unlike the novel, this beer is brief and fleeting, appearing just once a year in February. Historic quantities of
chocolate malt and roast barley clash over a field of dark roast Peace Coffee beans. Like Tolstoy’s masterpiece, it may take some time
to finish and require some thought along the way. But by the end, we think you’ll find yourself better for the effort. - This beer is no
longer being produced by the brewery.

of both hops and pale malts, Old Chub is a celebration of malts. The cola-colored beer features a dense, tawny head, a creamy

GOLDEN SPIKE IMPERIAL IPA

The eastern and western lines were joined together the complete Northern Pacific’s northern continental railroad near
Independence Creek in western Montana in 1883. To commemorate the occasion, the first spike driven to start the railway
construction near Carlton, Minnesota, was used to connect the last section of rail. It was named the Golden Spike, and was driven
by NP President Henry Villard, former US President Ulysses S. Grant, and Henry C. Davis, who had driven that first spike. Our
Golden Spike, commemorating the completion of Roundhouse Brewery, is a golden colored Imperial IPA, loaded with premium
brewers and dark crystal malts, generous doses of Mosaic and Crystal hops for aromas of citrus, spice, and blueberry, and Magnum
hops for a clean bittering finish.
BOOM LAKE LAGER
[STYLE: CREAM ALE | ABV: 5.5.% | IBU: 23 ]
Established in 1881, the Brainerd Brewing Company produced a lager using “ … a malt produced in Minnesota and the best domestic hops … obtained from the Pacific coast, [and] a considerable quantity of German hops….” The brewery was forced to close
down permanently in 1915. To honor the tradition established in those bygone days, we’ve developed our own premium lager,
using pilsner malt produced in Minnesota, balanced by American Crystal and German Northern Brewer hops. Crisp, light bodied,
with a mild malt flavor and aroma. We think our predecessors would be proud. We certainly are.
RUNAROUND RYE ALE
[STYLE: RYE ALE | ABV: 5.4.% | IBU:20 ]
Perhaps it’s not a big surprise, but it’s hard to turn a train around. Doing a “runaround”, in railroad slang, is to disconnect the engine from one end of the train, take it around to the other end, reconnect it, and then take the train back in the opposite direction.
Our Runaround Rye ale takes beer and sends it in a different direction. This German-style rye ale is brewed with malted barley and
rye, for a dry, spicy flavor, dark malts for color and malt flavor, with mild banana and clove flavors contributed by the yeast, and
Hellertauer hops for a mild bitterness. 5.4% ABV, 20 IBU, 15 SRM. Bronze medal winner at 2016 GABF

Virginia Brewery Prototype, reflects Stone Brewing’s attention to detail and its goal of producing consistent beers among its
production breweries. Due to variations in water, climate, brewing equipment, etc., a single recipe would not necessarily produce
the same result at different locations; therefore, Stone’s brewers pumped out the first beer, compared it with Stone IPA from
San Diego, tweaked as needed, and struck upon the process and recipe that guarantee the familiar Stone IPA nose, taste and
mouthfeel that fans are accustomed to.
STONE DELICIOUS IPA

While our beers are many and diverse, yet unified by overarching boldness, India pale ales are our undeniable bread and butter.
We’ve brewed many over the past 18 years, from double-down bitter bombs to piney session sippers. Whether it’s big IBUs or a
precise ABV, there’s usually a target we’re shooting for. The same is true of this, our latest IPA, but we gave zero thought to any
acronyms. This one was all about packing as much unique and, you guessed it, delicious flavor into a glass as humanly possible,
RIPPER
[STYLE: AMERICAN PALE ALE | ABV: 5.7% | IBU:40 ]
When it came to creating Ripper, we drew inspiration from the coastal surf cultures of SoCal and Oz. Sourcing classic Cascade from
the Pacific Northwest and Australian Galaxy hops from…yes…Australia. Our beer just so happens to have an Aussie accent that’s
cascading with a juicy amount of grapefruit and passion fruit hoppiness. So veg out or venture out. Either way, rip one open and
taste this awesome golden nectar!

In 2013, two nine-gallon casks were filled with Buffalo Sweat and a handful of vanilla beans, and were stored in Tallgrass founder
Jeff Gill’s office. A few weeks later, Jeff entered his office to find one of casks had exploded, spraying beer all over his office and
leaving a hole in the ceiling above his desk shaped exactly like the cork bung used to seal the cask. Thankfully, the other cask did
not explode. That night at an event in Wichita, Kansas, the beer was so well-received, it immediately got the call to become the
brewery’s winter seasonal.

BLISSFUL IGNORANCE
[STYLE: IMPERIAL IPA | ABV: 9% | IBU: 100 ]
This starts with a single 2-row pale malt to let the hops shine. We brewed this one with copious amounts of El Dorado & Meridian
hops, and then dry-hopped it twice for over 5 lbs per barrel of total hops. This one finishes very dry, letting the hops punch you in
the mouth. But, watch out! It’s a smooth drinker at 9% ABV and will catch up to you quick! Flavor and aroma notes are of tropical
fruits like mango, along with watermelon and stone fruits. There is just enough biscuity malt sweetness to carry the beer, but the
hops are the main event on this one.

see blue, it’s the next lake, your portage is almost over and your campsite is just ahead. The day is over and as you celebrate your
accomplishments and enjoy a Boundary Waters Brunette you may taste the flavor of wild rice and find yourself feeling a bit like those

Iron Horse Pale Ale is a boldly aromatic Northwest style pale ale. It pours a deep gold color with a thick white head that lingers in the
glass. The first impression is the immense hop aroma that wafts out of the glass, thick with tropical fruit, floral, and grapefruit notes.

This specialty brew starts with several oak spirals soaked in Jack Daniels Tennessee Sour Mash Whiskey. After a period of 7 - 10 days
we add the Whiskey infused Oak Spirals to our traditional Scottish Style Ale. We then allow the Scottish Ale at least 21 days of “aging”
on these Whiskey infused Oak Spirals. This produces a flavor profile with subtle hints of Oak & Whiskey complimented by the roasted
nutty flavors of Scottish variety.

Schwarzbier (“shvahrts-beer”), is simply German for black beer. It doesn’t mean that it’s necessarily heavy or light in body, although
they tend to lean towards light. Unlike other dark beers, like Porters or Stouts, they are not overly bitter with burnt and roasted malt
characteristics that the others tend to depend on. Instead, hops are used for a good portion of the bitterness. Very refreshing and
soul lifting beers, they also make a great alternative for the winter. Especially when you are looking for a lighter beer, but one with
