AND KING GEORGE SQUARE
Since opening in 1930, Brisbane City Hall has been a
symbol of civic pride and over the years it has become
one of Brisbane’s greatest icons and the home of
elegance and grandeur.
On Saturday 6 April 2013 Brisbane City Hall reopened
following a 3 year, $215m restoration program with
EPICURE appointed by the Brisbane City Council to
manage the event spaces within Brisbane City Hall and
King George Square and assume the role of exclusive
caterer and licensee.
In our first year EPICURE presented numerous major
events for the Office of the Lord Mayor including
the annual Lord Mayors Charitable Trust Gala, The
Lord Mayors Multicultural Gala Awards, numerous
Australian Citizenship Ceremonies and many Civic
events honouring the citizens and friends of Brisbane.
In addition to our Civic guests and clients, EPICURE
has brought style and grace back to the City. Filling
the famous Main Auditorium with numerous
fundraising events for Australia’s leading charitable
organisations including ACT for Kids, The Wesley
Research Institute, Cancer Council of Queensland and
many more.
For six weeks in 2013 Spiegleworld brought their
iconic Spiegletent direct from New York, for the
Brisbane season of the globe-trotting show Empire.
EPICURE added to the sparkle and sizzle of this
nightly spectacular running the three bars in the
magical Spiegletent as well as the outdoor ‘hammock
garden’. King George Square regularly comes alive
with markets and community events celebrating the
diverse cultural side of Brisbane.
The iconic Mercedes-Benz Fashion Festival made
Brisbane City Hall Queensland’s fashion capital with
five sell-out nights of amazing fashion and glamour in
August 2013. Complete with a glass marquee on King
George Square the Mercedes-Benz Fashion Festival was
‘the’ place to be seen. The festival, owned by Lindsay
Bennett Marketing, went on to win Queensland Social
Event of the year for 2013, a fitting tribute to this major
Brisbane event. The festival will be back at City Hall in
August 2014.
2013 came to an eye-popping end on King George
Square with the Gold Lotto Light Spectacular, bringing
thousands to the City every night to celebrate the magic
of Christmas with a 3D Light Show projected on to
Brisbane City Hall. Set to music, the dazzling show ran
every night until midnight right up until Christmas Eve
– the show returns in December 2014.
EPICURE invites you to bring your next event to

iconic Brisbane venue.

ELIZABETH CUFFE
Mark Kendall’s career in the Convention and Exhibition industry began with
Haymarket Group in the UK, where he held the role of financial controller for
Haymarket’s consumer and trade exhibition division.
Elizabeth Cuffe (Liz) was appointed as Sales and Marketing Manager for EPICURE
at Brisbane City Hall in June 2012 managing the overall marketing of the venue as
well as the sales and event coordination teams.
Mark was the Commercial Manager of Perth Convention and Exhibition Centre and
several other properties under the Mustard brand before moving to Brisbane to take
up the position of Venue Manager for Brisbane City Hall.
Prior to joining EPICURE Liz was an Associate Director at Carillon Conference
Management responsible for Business Development and Client Management.
During her 6 years at Carillon she was very involved in the successful tendering,
management and staging of numerous major international and national
conferences. Liz has had a long career in both five star international hotels and
with Qantas and brings to EPICURE her extensive experience in senior operational
roles in sales and marketing and hotel management.

Mark is both a Chartered Accountant and Chartered Secretary and has extensive
experience with financial and compliance based concepts and how they translate to
the Hospitality, Tourism and Events industries.
Mark has assembled a team of seasoned professionals to support him in managing

TODD ADAMS
EXECUTIVE CHEF
EXECUTIVE SOUS CHEF
Justin’s passion for food started in his Italian family kitchen with his Nonna as his
primary inspiration. He refined this passion during an apprenticeship at Sydney
Hilton where he worked alongside inspirational European chefs.
Born and raised in the NSW Central Coast, Todd comes from a family of chefs.
In 1998, Justin developed a talent for fusion cooking at Lizard Island in Queensland,
moving to Sydney’s Martin Place acclaimed three-hat Banc restaurant.
Justin headed to Europe in 2000 to work in a variety of restaurants including;
Giddleigh Park, 2 Michelin star, 5 rosettes UK boutique hotel (French cuisine),
Palazzo Sasso in Italy and Neat’s in France.
On returning to Australia 2002, Justin took up the position of Chef de Cuisine at the
prestigious Hayman Island Resort, moving to Sydney’s Luna Park as Executive Chef
in 2003 where he headed up a brigade of 15 chefs.
Justin later returned to Hayman Island as Executive Sous Chef in charge of a brigade
of 60 chefs and stewards. He worked closely on the acclaimed ‘Chef Table’, along
with overseeing the large multi-outlet operation.
Prior to joining EPICURE at Brisbane City Hall, Justin was Executive Chef at
Sydney’s five-star Swissotel.

Todd was 16 when he and his family moved to Queensland where he initially studied
to become an avionics engineer, whilst working part-time in a restaurant. At 18 he
decided that his passion was in food and he left his avionics studies behind to start
his chef apprenticeship.
Todd gained experience in notable Noosa restaurants, Berardo’s and Season, before
heading to Europe and Canada. Todd spent 12 months in London, then three years in
Canada in the kitchen at the Mission Hill Family Estate Winery. Upon his return
to Australia, Todd worked under Steve Szabo at the luxurious Gold Coast hotel,
Palazzo Versace.
Todd then moved south to Victoria and worked at Taxi Dining Room in Federation
Square followed by three and a half years at renowned South Melbourne gastro pub,
Lamaro’s. The opportunity then arose in 2008 to take on the Head Chef position at
the multi-award winning Urbane in Brisbane.
Prior to joining EPICURE, Todd played an integral role in the development of
Stokehouse Q as Senior Sous Chef.

reduce our carbon footprint by supporting home
grown, environmentally sustainable produce. It’s
a food philosophy that we feel very strongly about.
It goes to the heart of the epicurean philosophy –
creating happiness through good food, good wine,
good friends – in a way that does no harm. This
approach means we are constantly researching
suppliers who produce food of exceptional quality
using humane methods.
We use free–range poultry and free–range small
goods wherever possible, and we never use
cage–reared eggs. All seafood is Australian,
farmed or wild.

Our philosophy also extends to the sourcing of
specialty local dry goods such as nuts, grains, and
vinegars, as well as local mineral water, 100%
Australian orange juice and a fair trade coffee blend.
This approach has helped us to create exciting
seasonal menus that revolve around fresh local
produce when it’s at its best.

you’ll be guaranteed an outstanding meal.
Our chefs combine this ethical approach with their
great passion and extensive experience. They draw
inspiration from food trends from around the world

AUDITORIUM
The Main Auditorium is an ideal venue space for
large-scale gala events, ceremonies, concerts
and performances.
It is the largest single space in Brisbane City Hall and is
one of the most photographed and renowned parts of
the building. Its circular design with fluted pilasters
around the perimeter, is based on the Pantheon of
Rome. The high ceiling forms the background to the
room’s focal point – a 23 metre high central lantern
surrounding by the incredible dome ceiling backlit
with 8,500 LED lights.
The newly restored timber floor, large stage,
semicircular balcony and grand organ are surrounded
by a decorative frieze by world renowned Australian
artist, Daphne Mayo whose sculptures features on the
exterior of Brisbane City Hall.

With entry from the Ann Street foyer and the King
George Square foyer the Sandgate Room features
beautiful arch windows facing Ann Street. It offers
direct access to the Enogerra Courtyard creating an
indoor/outdoor venue.
The Enogerra Courtyard features cobble stones
discovered in the excavation of the Main Auditorium
to make way for the new commercial kitchen now
underneath. In all, 443 cobblestones from a paved
street built in the 1870s or 1880s were discovered.
The room is ideally suitable for pre and post-event
gatherings for Main Auditorium events, but can also
be used for seated banquets, as well as presentations,
seminars, training sessions and workshops.

The Brisbane Room, with its high ceiling, polished
timber floors and grand chandeliers will take your
breath away. It was officially opened as a public space
in April 1980 when a time capsule was inserted into
one of the decorated pillars. The time capsule will
be re-opened on 11 April 2030.
The room is ideally suited for seated formal events,
including wedding receptions and school formals,
as well as cocktail parties and business events.
The Brisbane adjoins the Moggill Courtyard creating an
indoor/outdoor event space like no other in the Brisbane.

The Balmoral Suite includes the Balmoral, Oak

The Windsor Rooms’ floor to ceiling windows overlooking
King George Square defines this elegant space. The room

As its name suggests, its long heritage-listed oak table defines
The Oak Table Room. Advanced digital sound, lighting and

KEDRON ROOM
The original 1920s heritage features of this room are
being restored. Its generous size makes it an ideal space
for conference and exhibition style events.
The room has high ceiling and large windows that
overlook Ann Street and the central light well. It has a
rich and varied history with many different uses over its
life. Originally office space, it was transformed into the
City Library in the 1980s and 1990s and subsequently
into the Kedron Room.

Managed by EPICURE and offering the full catering
and bar facilities available for guests inside City
Hall, King George Square offers a range of spaces
suitable for corporate events, product launches, Civic
ceremonies, festivals, concerts and exhibitions.
With over 3000sqm of useable space, King George
Square can be transformed in to a giant dinner party,
BBQ or cocktail reception for corporate events. Elegant
marquees to ensure the event is weather proof can be
provided by our preferred supplier Moreton Hire. Stall
structures can also be hired, along with furniture and
other event hire needs.

Gooralie free-range pork is a mixed farming
property near Goondiwindi, on Queensland’s fertile
Darling Downs. They produce pork that is supreme in
taste and tenderness. This is achieved through a stress
free environment allowing them to be “as happy as”
and fed a diet free of chemical residue, antibiotics and
hormone growth promotants.
Free-range chicken is our preference at epicure. We
source the best local free range chicken which both
supports local producers and means the chickens are
reared in the most humane way possible, living as
nature intended.
Some of our preferred poultry products include
Banyard quail from Pittsworth, Darling Downs –
specialising in the production of premium quality
quails and Bendele ducks from Kilkivan, a hinterland
based organic duck producer.

Our smallgoods and cured meats are Saloumi
Australia which is a small boutique business located in
the Northern Rivers region (Byron Bay) of NSW. The
saloumi range is an artesian product, handmade with
no flavourings and unnecessary additives.
Quattro Stella specialise in the manufacture of
traditional Italian smallgoods particularly from its
Southern regions such as Calabria. Local Italian family
business use free range pork, cured and smoked in the
traditional Italian way.
We source grain-fed beef from the John Dee in
Warwick Queensland. The John Dee label prides itself
in sourcing carefully selected beasts from feedlots that
are free from pesticide residue.

Hervey bay, Mooloolaba, and Bundaberg reef fish,
scallop and prawn fisheries pride themselves on being
at the forefront of fisheries management in Australia
and have set a benchmark in achieving an ecologically
sustainable industry, adopted as a role model not only in
Australian state and national fisheries, but internationally
as well.
Cone Bay saltwater Barramundi, Turtle Island,
buccaneer archipelago – this fish exhibits characteristics
like no other barramundi in the world, showing
exceptionally clean taste, texture perfect and the overall
quality is superbly consistent.
Huon salmon specialises in producing farmed salmon
grown using the pristine waters of the hideaway bay
where the Huon River meets the southern ocean in the
d’entrecasteaux channel. Huon fish farms are located
in an exceptionally preserved marine environment –
ensuring they stay clean and healthy – key to the high
quality of the Huon product. Strict control of feeding
regimes, regular movement of cages and strategic
fallowing of cage sites are among the world’s best
environmental management practices.
Huon follows to preserve and protect the aquatic marine
environment, while rearing superior quality salmon.
We use only Australian seafood on our menus, ordered in
fresh from the Brisbane markets. Australian fisheries are
administered according to the principles of ecologically
sustainable development (esd) and Australia is a world
leader in sustainable fisheries management both wild
caught and aquaculture systems.
Aquaculture refers to raising fish, prawns, oysters,
and other marine or freshwater foods under controlled
conditions in water, either in ponds on shore or contained
in net cages located in bays or in the open ocean.
Ceas Spanner Crab located on the pristine Sunshine
Coast is the largest spanner crab producer in Australia.
The spanner crab inhabits inter-tidal waters to depths
of more than a hundred metres, from sheltered bays to
surf areas. The Ceas Spanner Crab fishery is the first in
Australia to be recognised as a sustainable fishery.

DAIRY
We choose not to use cage-reared eggs in any part
of our business, as it is incredibly inhumane. They
are caged for life without exercise while constantly
drained of calcium to form egg shells, battery hens
develop the severe osteoporosis from intensive
confinement known as caged layer fatigue. Calcium
depleted, millions of hens become paralysed and die
of hunger and thirst inches from their food and water.
We prefer free-range eggs from Meggles farm,
Mawson Lakes.
The brief version of the history of cheese making
in Queensland started in Toowoomba accredited
for producing Australia’s first blue-vein cheese while
Warwick was well known for its cheddar. Locals were
fiercely loyal to their own cheese makers but, as the
co-ops grew, multinational corporations swallowed
them up. Local cheese basically ceased to exist and
those who wanted more than the homogenised
supermarket variety relied on Victorian or Tasmanian
cheeses to furnish their plates. In the past decade,
there has been a welcomed return to artisan cheese
making. Now there are over twenty small producers
in Queensland, making everything from buffalo milk
mozzarella to specialty Swiss cheeses as well as goat
and sheep’s milk cheeses.

Maleny Cheese is a small family business nestled
in the green rolling hills of the Sunshine Coast
hinterland. The milk is sourced from small local
dairies and with other sustainable ingredients; their
exceptional dairy product range includes camembert,
brie, fetta, buffalo quark, buffalo fetta, and a washed
rind cheese called leblochon.
Vanella use the local rich milk of the Atherton
Tableland to make their cheese. They are also unique
in being one of Australia’s few buffalo milk cheese
producers specialising in soft Italian style cheeses
such as mozzarella, bocconcini and sfogliata.

Oliv-fresh situated on the shores of Lake Wivenhoe in
south-east Queensland, our olives are sourced from our
own 7000 tree certified organic olive estate. Oliv-fresh
proudly grow process and pack our products using our
own olives in our on-site certified organic processing
facility. Oliv-fresh has 7000 certified organic olive trees
comprise the arbequina, coratina, picual, picholine and
barnea varieties.
The origin of pure mountain spring water is rainfall,
which over time finds its way through millions of tonnes
of volcanic rock in Queensland’s Mount Tamborine,
giving pure mountain its clean, fresh and natural taste.
Mount Zero Olive Grove, a family owned business, is
one of the oldest olive groves in Australia with a total of
6000 Spanish Manzanilla and Gordal olive trees. Mount
Zero olives is a located three hours west of Melbourne, on
the northern edge of the Grampians National Park. Their
success is due to an uncompromising commitment to
sustainable organic/biodynamic agriculture.
