3 Ways With Celery
Celery migbt be the stereotypical healthy salad item, but it's a really versatile
veg. As well as a great raw ingredient, don't forget how yummy it is as a stock
vegetable, in soups and stews; although in the summer we do tend to mostly

Celery & Parma Ham Sticks
Fill 8 celery sticks chopped into 15cm sticks with 200g
cream cheese. Place a small slice of parma ham between
2 layers of clingfilm or greaseproof paper and roll firmly with
a rolling pin to flatten them out. Wrap each slice round a
filled celery stick, and place the wraps on a baking tray and
bake at 190C for 20 minutes, and serve hot.
Celery & Radish Coleslaw
Coarsely grate a handful of radishes and large carrot, then
finely slice a few shallots or small onion and four sticks of
celery. Mix together a glug of white wine vinegar,
4 spoonfuls each of mayonnaise and yoghurt, and season. Then add to the vegetables
and combine well until everything is coated.
Summer Soup
Heat some olive oil in a heavy pot, add 2 finely chopped shallots, a chopped carrot,
diced celery stick, clove of garlic, 3 chopped rashers of bacon and season. Sweat until
soft, adding a little water to help create steam. Make sure the vegetables do not crisp
and burn by adding a little additional water, and stirring. When the vegetables are soft,
add soe cabbage or kale leaves and sprig of sage; mix well. Add 1l of stock, bring the
soup to the boil and then lower the heat. After 5 minutes, serve with Parmesan on top.
