Slow Food Los Angeles Meat Survey
What are your concerns about modern intensive meat production?
Answer Options
Inhumane standard of care for animals
Environmental issues (feedlot pollution, water contamination, air
Safety of our food supply (ecoli and other foodborne contaminates,
antibiotic and hormone residues in animals, human antibiotic
resistance because of overuse in our food supply, mad cow)
Health implications for you and your family (such as higher levels of
omega 3s in pastured chickens and CLA (conjugated linoleic acid) in
grass fed beef )
Farm to table issues (inability of small farmers to survive, want
meat raised locally or on a small scale, want a greater
understanding of food supply)
Taste -- want superior flavor and texture
Price

This may fall under "Farm to Table" issues: A
sustainability issue with animal products is knowledge
about "cradle-to-grave" and how most efficiently all
products and by-products are used and marketed. Also
important are policy issues regarding animal ag,
including certification of raw milk products, lobbying,
18 legislation, etc.

We are in the lucky position of being able to afford any foods
we want, and one of us has been low-carb for 8 years, so we
are dedicated meat-eaters and "go green" in many other
ways to compensate.
Occasionally serve meat to guests. I'm the cook, I'm a
vegetarian, I consider fish to be meat.
I only buy organic/free-range poultry and meat, and cagefree eggs. I limit my purchases because these items are
more expensive.

The second check mark is not absolute...we try our best to

I am attempting to wean my husband from his practice of
buying "but-it's-so-cheap!" (loss leader) red meats and
poultry at Vons, etc. , in favor of the stuff I prefer to get at
the farmers market. I am not always so successful at this,

We eat out frequently for business reasons. It would be
extremely helpful to have more information on the sourcing
of restaurant food so we could make better informed choices
in these situations.
We eat poultry, but no red meat.
I rarely buy meat. If I eat it is at friends' places or in
restaurants.I do not eat beef or veal at all. I do eat a little
lamb, chicken and occasionally pork.
Have been eating more fish lately. I do eat poultry but have
not eaten a lot of red meat lately for various reasons. Just
haven't felt like it, the health and environmental issues are a
factor
We have 1 vegetarian and 1 non-vegetarian but grocery
shopping is done by vegetarian so almost no meat is
consumed in the house.
I would say 2/3ds of the meals I cook at home for myself are
vegetarian, including eggs and cheese. When I buy meat
and poultry, I buy providers that sell a product I can feel
good about buying, regardless of price, i.e. they are raised
humanely and with good concepts of land management. I
buy almost exclusively organic when it comes to milk, yogurt,
cottage cheese and sour cream.
We eat always eat poultry that conforms to certain standards,
and often eat meat that conforms to certain standards
i don'tcook meat or pultry in the home, but will eat it out
once in a while and try to do so only when i know the source
is quality/sustainable
I would include poultry in ore meals if I felt confident that it
came from a source that provided humane treatment and a
good quality of life for the animals.
Meat and poultry is purchased primarily at Farmers Markets
from local producers and/or organically.
I am a vegetarian who will eat fish on occasion. I will cook
meat for my family, but tend to serve it more as a side dish.
Try to eat only grass-fed beef, free-range chicken, wild
28 caught fish.

Is there a humane way for any animal to end up as veal?
Raising and killing animals for food is not sustainable by my definition. I can tolerate an argument that one can
eat an egg without killing a chicken or drink milk without killing a cow. However, one can’t carve a pork chop
from a pig and expect the pig to keep on producing pork chops for you, or more piglets, for that matter. An
5 animal is not an apple tree that continues fruiting until you chop it down.

I'm most concerned with sustainability--actual free-range poultry and eggs, grass fed beef--I'd eat
humane pork if I could find it. I don't want industrial "organic"--it isn't sustainable.

One problem I've found with organic/sustainable items is that it's difficult to find things like ribs, pot

I eat a lot of ground bison, turkey & venison.
tallow, bones, organ meats, chicken feet (for stock)
A monthly purchase tends to be too much product for us, but i would be interested in a smaller portion.
small portions
Might go for the "variety" cuts if I understood what to do with them
I prefer to buy small amounts of meat at a time as I am single and don't consume alot, nor do I have
lots of freezer space.
I cook for my dogs and would appreciate access to healthy meat products from humane, local venders
I am buying for one, so larger purchases are not realistic. I would be open to learning about options of
sharing parts of whole/portions of animals, if there were enough people interested in that.
Looking for certain 'old fashioned' cuts like round steak, 7 bone roast Heritage Foods USA is working on

6 human consumption — and assuage our guilt about it.
7 Raising awareness about sustainably raised meat to the general public
8 Form relationships with local butchers to enhance the offerings available to the general public
9 CSA and Co-op not interesting simply b/c I don't at enough meat to particiapte usefully.
10 I would be thrilled if any of this information and our ideas come to fruition.

I eat fish most of the time. It will be helpful to learn where to buy sustainable seafood. In addition, I am
Chinese, live-seafood, and also specialty cut of meat, such as tongues and pork belly are difficult to locate.
If you can find safe, organic or pastured sources in our local stores, that will be great.
I'm thrilled about the idea of a CSA if we can scale it to smaller households as well as large ones.
I love the idea of CSAs but find the up-front cost much too prohibitive. My finances really only allow a more
pay-as-you-go approach
Love the CSA idea - love it!!
support vegans
would love a local CSA for eggs, beef, etc
Teach members how we can become self-sustainable to the extent we live in a megalopolis, including
raising our own poultry contingent on local ordinances. More importantly, have I missed something or is
there a complement to this proposal for vegetables, fruits, etc.? Why just meat?
Any and all of the above would be great. And although I'm not a candidate for a CSA at this time, they're
18 wonderful and practical for a lot if people.
19 coop or CSA would be great
Thanks for doing this. We really appreciate it! Very interested in regular deliveries/purchases of pastured
20 eggs and high-quality humane pork and pork products.
I would like to see small shares available if a CSA or co-op is formed. I only buy food for two people and
would
not want to buy more than we would consume.

22 I used to be a member of a meat CSA in the Bay Area. I'm happy to share our experiences. It was great!
23 Either a co-op or a CSA I would be interested in.

We are serving less fish to guests and cutting it out of household consumption because of
questionable practices and quality. Other meats and poultry are never purchased.
I buy so little meat and poultry
You wouldn't want me!
too busy to volunteer but will participate according to guidelines
I don't have the time to commit. I don't have the money or steady family routine for the
I have another cause that takes a lot of time.
I do not eat beef or poultry.
I have time constraints
i'm a vegan.
Just beginning to get involved with SlowFood, need to assess my main areas of interest.
my schedule is over booked already.
It appears I'm leaving LA in two weeks.
I have a feeling the end result will be a bit too LA-centric for those of us living/farmersmarket shopping in Ventura County (esp. now that I see "geographic choices," below)
meetings are always up in town. i'm in the south bay and driving....i'm trying not to.
There are only two people in my household
we live in kern county and are far away from everything you do, so we have found sources
for clean meat and poultry locally
17 I'm interested as a food writer but I don't buy enough to matter.
I use very little poultry and almost never buy meat of any kind. I have a very small
18 household so would not be interested in any bulk purchases.
It's interesting but I don't have the desire to commit to do what it takes to launch an
19 endeavor like this.
20 overcommitted today
21 I don't eat meat, and I eat poultry only occasionally.
22 I dont really like meat that much
23 Time
24 I am a pesco vegetarian
It sounds expensive but I'm willing to pay a little more (and eat a little less to compensate)
for sustainable, local meat. My concern is providing meat for my dogs this way, as well as
25 the family.
26 I do not eat meat, poultry or fish
27 i eat a mostly vegetarian diet plus fish and eggs once or twice a week.
28 I am often away, but would like to participate
29 I eat eggs. I avoid dairy and I don't eat meat.
30 i will participate, i just dont have enough time to volunteer for the committee right now.
While I cook meat for my family it is a labor of love for met to do. It has been a huge
transition in my values to begin to handle meat. I think I would be taking on too much by
31 being on the committee
32 I have an infant and a stressful, demanding job and my time is extremely limited.
33 Respondent purchases meat for spouse as favor; current work schedule is 70-80 hrs/wk.
