FUTURE BARTENDER
Once in a while, technology leads us into places
we never thought we would ever go. Right now,
we’re exploring a robot bartender who can mix
you a cocktail based on your personality type. If
it sounds bonkers, it definitely is, but the science
behind it has a great deal of potential when it
comes to understanding the value of personal
data. It could potentially give us insights into the
psychology of how consumers make purchase
decisions, and a whole lot more.
HOW IT WORKS
If you’re wondering how this robot knows about
your charming personality, the information
comes from Facebook (no Facebook account,
no cocktail). A group of German scientists
developed the concept (called Social-Shot) and
created a robot to do all the work. The robot
analyses information on your Facebook page,
compares it to an algorithm developed by the
University of Cambridge and comes up with
a personality profile based on your likes. Your
personality profile includes specific personality
traits that are connected to specific drink
ingredients. It’s easy work for a robot….
If you had to think about your Facebook
information now, what do you think your
profile would say about your personality?
THE SCIENTIFIC PART
It all sounds so simple but it’s really quite
complicated. 5 drink ingredients are linked to
5 personality traits (called the Big Five) from a
popular psychology model that breaks down the
human personality into:
The robot then looks at your profile vs the
personality traits and allocates specific drink
ingredients to each personality trait that pulls
through. Your cocktail is mixed together
combining all of these factors. According to the
developers of Social-Shot, if you’re not very
conscientious, you won’t get a great deal of
vodka. If you’re a faithful person, you’re likely
to get a hefty shot of vodka. Exactly how the
algorithms work is the intellectual capital of
the scientists who invented it… but it keeps
us guessing.
WHAT IF YOU HAD A BIT OF FUN
WITH THIS CONCEPT?
If you’re keen for a bit of fun, why not come
up with your own algorithm by choosing your
own personality traits and cocktail ingredients.
Organise a social event with your friends (you
have to know the people you’re basing your
cocktail on), think of their personalities, match
it to your list of ingredients and come up with
some fun and festive cocktail ideas. Name the
different cocktails after your friends (if you
dare) and have a ball entertaining everyone.

Cocktails can be alcoholic and non-alcoholic
so there’s no end to the fun you can have with
this idea. Technology teaches us something
every day - about data, about ourselves and
even about how to have more fun. Cheers to

and same time every session - it will
feel more like another ‘class’.
Set rules at the start - such as a
timetable, what everyone expects to
achieve, what will happen to slackers,
who does what and when, etc.
Decide how much time you’re going
to spend on each session and discuss
what you are going to complete in
each session before you start. Then
stick to it.
Set homework/tasks for group
members to achieve before you all
meet. Half the work is done before
you even get together.
If you really do have a slacker or two
in your group and it’s a struggle for the
rest of the group members, talk to your
lecturer and get advice. If everyone
tows the line, you should all do really
well. Remember groups aren’t forever,
so give it your all for the short time you
are forced to work together - you never
know, you could make new friends and
actually have a really good time!

Staying fit and healthy should be a priority
if you’re a student. And if it’s not, don’t
beat yourself up because it’s hard to pack in
studying, practicals and student life without
having to add fitness into the equation. But
these fun tips are easy to follow and will
add to your fitness and wellness levels.
Tip 1:
Eat breakfast- You’ve heard this millions of
times growing up and it’s still relevant today…
Start your day off with a healthy meal in the
morning.
Tip 2:
Make your workout fun- Find ways to make
your workout fun and you’ll be much more
likely to keep it up.
Tip 3:
Drink water- Believe it or not, drinking water
has been known to boost your concentration
as well as keep you from overeating.
FOR STUDENTS
Tip 6:
Don’t burn yourself out- With so much to
do, and little time to do it, it’s easy to get run
down. If you feel you’re stretching yourself
too thin, take a step back, breathe and then
assess what’s critical to do.
Tip 7:
Indulge every once in awhile- A little treat
now and then is an excellent way to reward
yourself for eating healthy, just don’t go
overboard. Give yourself a break and indulge
in foods you love but can’t eat all the time.
Tip 8:
Get involved on campus- Believe it or not
involving yourself in campus activities is a
great way to keep active. It’s also an excellent
way to meet new friends and keep you from
feeling bored.
Tip 9:
Learn proper portion size- To avoid eating too
much of even the healthiest foods, keep track
of how much you’re eating.
Lack of sleep can have a big impact in your
life- It reduces your ability to concentrate and
participate in everyday activities. For your
well-being, it’s important to get as much sleep
as you need.

Don’t fight stress by eating- It can be tempting
to reach for a bag of chips or some cookies
when you’re stressed out about an impending
exam. Eating won’t help your stress go away,

in moderation and you can have a good time
without consuming too many calories.
Living a healthy and busy college life can be fun, and
you will feel extra productive. Exercise can help balance

future career lifestyle.

improve their quality with a bit of tweaking.
Whatever your smart phone or mobile device
might be, if it runs on Android or iOS then you
will be able to take advantage of these great free
photo editing apps to make any food photo go
from amateur to magazine-worthy wonderful.
INSTAGRAM
The most well-known and widely used
mobile image application, Instagram is
not only a photo social media sharing
platform but is equipped with some
great photo editing tools. It comes
equipped with 10 advanced editing tools
that allow users to tweak brightness,
contrast, perspective, to lighten
shadows, increase saturation, play
with depth of field with a faux tilt-shift
effect and overlay custom filters. Its
signature retro-style filters have defined
photographic trends in the past few
years.
VSCOCam®
This beautifully design app imbues
sophistication which it lends to the
editing style offered for images. The app
itself is a minimalist setup which belies
the complexity of the level of photo
enhancement, presets and functionality
that offers. It has a variety of built-in
filters and comes with useful tools to
streamline the editing process, such as
Single Step Undo and the ability to Copy
& Paste effects across other images. It
has near pro-level editing capabilities
by allowing you to lock white balance
on your image, as you would on a DSLR
camera and allows you to adjust flash
or add a low-light boost. It has ten
simply named filters and offers more
for purchase and download. The filters
hint at retro-style cinematography,
with subdued saturation of images, a
soft fading and variations thereof that
takes what Instagram filters started
and elevates it to a more refined and
professional appearance.
InstaSize
This app works as a complement to Instagram,
allowing you to keep the original dimension
of your image without being limited to the
square format of Instagram. It too offers its
own version of filters to play around with,
as well as the option to overlay text or create
a collage. The facility to enhance your image
is there as well, as you can modify basics
such as saturation, tint, brightness and
apply vignettes.
SNAPSEED
Snapseed offers one of the most impressive
functionalities available, out of any image
enhancement app so far: with every edit and
filter added it creates ‘stacks’ or layers - this
allows you to add, edit or remove individual
changes to your image. Layering changes
to an image is usually a function limited to
desktop computer software. It also gives users
the ability to copy those stacks and paste
them onto another image. It also incorporates
gesture-based editing. This means that you
swipe to apply a facility such as brightness or
contrast. Swiping horizontally, left or right,
either amplifies or reduces the enhancement
effect. The brush tool also allows you to apply
certain effects to isolated areas of your image,
instead of the overall shot, and the Healing
tool seamlessly eliminates dust dirt from the
photo. It’s a very clever and intuitive app and
allows you to really refine your image.
PIXLR
If you want to overlay text or create fun
collages with your final edited images, this
makes for a fun app to play with. It boasts
over 600 overlays, allowing you to play with a
wide library of fonts, font effects, stickers and
borders. For simple and quick editing, it has
an ‘auto fix’ facility that adjusts the balance
on colours with a single click. It also has a
useful focul blur affect that allows you to
control not just the focus area on the image,
but the strength and shape of the blur and the
colour as well.
These apps are powerful and easily accessible
allowing you to go from snap-happy to
sophisticated in, well, a snap.

Happy New year from the Cape Town campus. Welcome back to all our
current students and a special welcome to all our new students and staff.
Our year started with our campus kitchens still
looking like a renovation site, but with smart
planning we were able to accommodate all our
culinary students #teamwork.
Our Induction program this year included a
visit to SAB in Newlands for a beer tour, Liquid
Concepts conducted a demonstration on cocktails
and as part of the responsible drinking we had
Ingrid Lestrade, a director from Goedgedacht
Trust - Malmesbury address the students on the
projects underway in the area.
Our patisserie students had the pleasure to
contribute to the Red Cross Air Mercy Services’
50th Anniversary celebrations by baking a cake
for the event. The Red Cross Air Mercy Services
is a non-profit organisation with bases in the
Western Cape, KwaZulu-Natal and Limpopo that
provide an air ambulance network, rural health
outreach and emergency rescue service.
We’re looking forward to a great new year filled
with lots of possibilities.

We also had guest speakers on campus chatting
to the students about the management and
culinary side of the industry. Special shout out to
Chris Snyman from the Le Franschhoek Hotel &
Spa and Chef Jason and Ryan Ferreira, from the
One and Only Hotel for giving up their precious
time to chat with our students.

What do you blog about on

Nthabiseng Ramaboa, more affectionately known as ‘Nti’, was already running her own
successful businesses when she decided to take a sabbatical and study further. She chose
to study one of her absolute passions which is cookery and joined the Johannesburg
Campus of the International Hotel School to follow her culinary dreams. Having recently
graduated, Nti has worked hard to gain the respect and recognition of her peers and
fellow culinary professionals.
We decided to catch up with Nti and ask
her a little more about her journey into the
culinary industry so far, and where she’s
headed to next.
IHS:
When and where did your passion for
hospitality begin?
Nti: Definitely at home! My mom was so
passionate about food and although we
didn’t have much, she would make the best
of whatever we had in the kitchen. She had
her moments - you’d look forward to dinner/
lunch because it wasn’t just food, it was an
experience. She had this recipe where she
would make ground beef/minced meat mixed
with rice and she would serve it wrapped in a
cabbage leaf. Hmmm… imagine a dinner like
that in Soweto. Mama D contributed a lot to
my passion for hospitality, for sure.
IHS:
Nti:
Where are you now in your career?
I now work full-time as a chef. I run a
company that offers multiple services like
catering and food styling. As a food blogger,
I work with some brands to help give them
exposure and broaden their market reach.
I have also partnered with two chefs who
put together, boast over 70 years of industry
experience. Through this partnership, we
offer a wide range of consultancy services.
And my most recent project is hosting dinner
parties which is something I absolutely love to
do. It’s called ‘Dining At The Chefs Table’ and
it’s for a select number of guests. I give them a
memorable fine-dining experience.
Nti:
My blog is a platform where people who
are passionate about food and cooking can
interact and share everything from recipes,
reviews of great places to eat, and, of course,
share ideas of cool things to do - be it about food
or everything in between. It’s a lifestyle blog!
I feel I represent a community of men and
women who are set on changing the stereotype
that implies that if you look fabulous and
appreciate the good life, then there’s no way
you could get anywhere close to the kitchen, let
alone cook!! It’s more a MOVEMENT honey! I
feel that I’m the face representing a community
that has decided to claim their place in the
kitchen.
IHS:
IHS:
Tell us more about your food blog
(psicookedthis.com). What inspired the idea?
Nti:
I started my blog only over six months
ago. I got the inspiration when I was in
Los Angeles on business as an art curator.
One of my close friends in Santa Monica is
a successful blogger and she would watch
me every time I cooked and post recipes on
Instagram. She saw the interaction I would
have with foodies and she would suggest
I blog about it, but I did nothing of course.
One day she got tired of me putting it away I
guess and booked us on a short seminar for
bloggers where they teach you the business
of blogging. Of course, the entrepreneur in
me jumped in when I started seeing value in
blogging.
There are loads of recipes out there,
how are your recipes unique from the rest
and which one would you recommend?
Nti: I have everything from tacos to ostrich
burgers, cocktails and homemade ice pops. My
recipes are different in that most of them are
delicious everyday foods that are prepared
differently. But we keep on food that cooks
real quick!
I would definitely recommend my Berry
Yoghurt Cakes for dessert. They look great, like
something out of a fine-dining restaurant with
complex ingredients. Yet, it’s cheesecake made
with yoghurt. If you want to win bae over, that’s
the recipe!
IHS:
You’re also into fashion, which we love!!
Tell us what inspired you to start your own
line of aprons?
Nti:
Cooking is oh-so fashionable!! No,
seriously, I enjoy dressing up as much as I enjoy
cooking and hosting. And I couldn’t find aprons
cute and fabulous enough to complement by
wardrobe, so I decided to design my own. And
boy was I right! I launched my line of aprons
with 100 units. I was sold out in that month.
IHS: How has studying at IHS helped you in
advancing your career in the industry?
Nti:
I think it’s in the approach to academia.
I honestly felt at home when I was studying
there and to me, it’s important because one
needs to feel at home in the kitchen, otherwise
nothing works.
IHS:
Where do you see yourself
in 2, 5, and ten years’ time?
Nti:
In 2 years I would like to be a household
name in Africa and I would like the brand to
have a wider reach. In 5 years, I would like
my presence in the industry to have made a
difference on a human level. Like in Siba’s case
her presence in the industry means hope! She
gives hope to the rest of us that there’s change
in the right direction. She did it and it translates
that we can do it too. I have no clue what my
thing would be, but what I know is that I need
to add value to the process. 10 years… haha, I’m
settling on five for now.
IHS:
What has been your most memorable
moment working in the hospitality industry?
Nti:
Hearing the kitchen yell out special orders
for my friends. It was always funny because
at first they did not know that I knew the
people. And secondly, I was existing in the same
space but in a different world and it made me
appreciate life, and my life more.
IHS:
Lastly, any advice for young people
considering hospitality?
Nti:
Be prepared to work hard!! No one comes
prepared for that and even I was shocked at
how much physical work it is! I mean no one
prepared me haha! Do it for the right reasons,
and you will never look back.
It’s been quite a journey for our talented Nti,
and we couldn’t be prouder at IHS.
We’re looking forward to great things in her
career ahead!

The new year brought in a new intake which meant new
students on campus. The green beans, i.e., first-year students
took part in a two-week induction which included a fun and
interactive Coffee Appreciation Course with Chad Witby from
Columbo Coffee and A Spirt of Adventure team build held at
The Westville Old Boys Club.
The highlight of the day was the group war
cry, students showed their dance moves with
creative lyrics combined with the Hakka
Moves, shouting “Tomato sauce, boerewors.”
Our traineeship students and those students
who were committed to class on the campus
were treated to a campus braai, not to be left
out the SRC incorporated games and various
entertainment for the afternoon festivities.
A fantastic day was had by all and the true
spirit of teamwork was felt #ProudlyIHS
We’ve also started on our charity work for
the year; our first project was a collection of
water and other food for the #DroughtSA and
Gift of the Givers.
No wastage is experienced at the Durban
campus with the Culinary Arts students
donating off cuts of fresh vegetables to
The Ark, a foundation for the Homeless in
Durban.
Valentine’s Day was truly a memorable
experience on campus, complete with heart
biscuits, a photo booth, and unique two-tone
roses for sale.
We are only three/four months into the year
and #TeamIHSDurban still has a variety of
projects, charity contributions, and events
planned for the rest of the year so watch
this space.

As the local partner of the American Hotel
and Lodging Educational Institute (AHLEI),
IHS recently presented the plaque for the
prestigious Certified Guest Service Property
Designation to Ashwin Jose, General
Manager of The Maslow Hotel in Sandton.
The designation - a first to be awarded to a
South African property - is the result of a
successful application to AHLEI once front-line
employees with guest contact pass the Guest
Service Gold® training programme, followed
by the Certified Guest Service Professional
(CGSP®) exam.
As exclusive training partner of AHLEI in
South Africa, IHS presented the internationally
recognised Guest Service Gold® course, with 65
Maslow Hotel employees earning the CGSP®
designation. CGSP® is widely considered as the
highest acknowledgement of award-winning
guest service for employees in the lodging
industry.
According to Stuart Blackburn, Managing
Director of IHS’s Training Division, The
Maslow Hotel is deserving of this honour and
applauds their commitment to ongoing learning,
development and certification of all employees.
“At IHS, we believe that genuine engagement
with guests is essential to being competitive
and relevant in the local hospitality industry.
The CGSP® programme equips employees to
go above and beyond their call of duty through
modules that develop authenticity, intuition and
empathy,” he explains.
Ashwin Jose added that The Maslow Hotel is

Hotel School and the American Hotel and
Lodging Educational Institute to achieve the
designation. “Our vision has always centred
around creating an empowered, immersed and
integrated staff complement. The Certified Guest
Service Property Designation plaque, which
will now be proudly displayed at the hotel,

IHS
We recently hosted our Valentine’s Day function
at the Keg in Sunninghill, where students had to
dress up according to their relationship status.
Those who were single had to dress up in Green,
those in a relationship had to dress up in red and
those in complicated relationships had to dress
up in Orange. So much fun!!
Our SRC hosted a fun-filled ‘team
build session’ for our newbies on
campus during induction. They
participated in varies team activities
aimed at teaching communication
and working together. During
induction, students were also able
to complete their level one first aid,
firefighting, as well as wine and
coffee training.
Our charity events have also begun, our
first charity drive this year is for the Baby
House in Roodepoort. The home specialises in
abandoned babies from newborns to two years
olds. Our current collections consist of clothes,
nappies, formula and other necessary items.
Some students have also volunteered their
time to assist on weekends. Next on our list
is an animal shelter, we are looking to collect
pet food and spend a day helping with the
cleaning, painting and upgrading of facilities.
Our team spirit is stronger than ever, as we
welcome the new year. #JohannesburgCampus

QUICK AND EASY
Every now and again we struggle for ideas when it comes to cooking tasty meals
for friends and family. We’ve lined up 3 easy to prepare pasta sauces that you can
whip up in no time, leaving you free to chat to your guests instead of breaking a
sweat in the kitchen.

Three Cheese Pasta Sauce
• Heat 1 tablespoon of olive oil in a pan and add a small, chopped onion together with a clove of crushed garlic.
• Cook on a medium heat for 7-8 minutes and then add 80 grams of butter.
• Stir in 1 cup of grated mozzarella cheese, half a cup of grated emmental or gruyere cheese and 1 cup grated parmesan cheese.
• Stir over the heat until the cheese melts. (Add half a cup of chicken stock (or milk) if the mixture is too thick.)
• Season well with salt and pepper. Pour over cooked, drained pasta and serve with diced tomatoes and herbs sprinkled over the top of this simple but tasty dish.

A Boerewors, Tomato and Basil
crowd pleaser

• Slice up 400 grams of your favourite boerewors into small pieces and fry in a non-stick pan over a medium heat until browned.
Creamy Alfredo Sauce
with Chicken
• Once cooked, remove the pan from the heat, remove the meat from the pan and drain the excess fat from the pan (don’t wipe…
just drain).
•Over a medium heat, melt 125 grams of butter in a pan and add 1 cup of cream and 2 teaspoons of crushed garlic to the pan.
• Place the empty pan back on the heat and flash fry 2 cups of halved cherry tomatoes until soft and cooked through.
•Using a whisk, constantly stir the ingredients together and gradually add 2 cups of milk to the mixture (whisking all
the time).
• Add your meat back to the pan together with a handful of roughly chopped basil, some chilli (to your own heat standards) and a half a cup of tomato pasta (or canned chopped tomatoes if you don’t have pasta).
•Stir in 170 grams of parmesan cheese and season well with salt and pepper.
•When the sauce has become a thicker consistency, remove from the heat.
•Add chopped (left-over) roast chicken pieces
to the sauce and pour over pre-cooked pasta.
Voila! Serve with a green salad and warm ciabatta bread.
• Season whilst you heat through and add to cooked pasta. (Sprinkle with grated parmesan if the mood takes you).
It’s definitely a crowd pleaser and takes
minutes to prepare.
