GENERAL
Apple Fresh Plus is a solution that inhibits enzymatic browning of apple slices and protects the colour
and freshness of sliced apples and other fresh fruits and vegetables for up to 30 days. Apple Fresh Plus
contains a mixture of food grade vitamins, food grade organic acids, and natural corn protein.
RATE
For sliced apples, use an Apple Fresh Plus concentration of 5% (50 grams/litre water). While Apple Fresh
Plus has been used successfully on many varieties of apples, there can be varietal variations in the
duration of anti-browning protection obtained. It is advisable to pre-test on a small quantity of the apple
variety being processed.
For other fresh fruits and vegetables, refer to the guidelines at the end of this label.
INSTRUCTIONS FOR USE:
1. Dissolve Apple Fresh Plus in cool water
2. Clean and sanitize the unpeeled apples before slicing. Rinse and slice.
3. Fully immerse the apple slices in the Apple Fresh Plus solution for 60 seconds. Any delay
between slicing and dipping can initiate browning.
4. After dipping, remove excess liquid from the apple surfaces by vibration, spinning, or other
suitable methods.
5. If using polyethylene bags, package apple slices in bags with an oxygen transfer rate (OTR) of
approximately 75 cc/m2/24 hr. Longest protection will be obtained if a vacuum is drawn in
the bags. A 200 millibars (80%) vacuum is recommended.
6. Immediately refrigerate at 1oC to 4oC
OTHER FRUITS and VEGETABLES
Apple Fresh Plus can be used to extend the appearance, freshness, and to inhibit dehydration of many
fresh fruits and vegetables. Wellington Agricultural Developments Inc. is currently developing
procedures to optimize the use of Apple Fresh Plus on these products. The table below provides a
guideline for obtaining best results on various fresh fruits and vegetables based on current work. Dip
times will vary between 1 and 3 minutes for most commodities, although avocados may require up to 30
minutes. We strongly advise that users pre-test Apple Fresh Plus on the commodity first to determine
the parameters that deliver the desired length of shelf life required. Always keep commodities
refrigerated after treating.
