Gingered Carrot Soup

–Whisk
–Liquid measuring cup
–3- to 4-quart slow cooker
–Blender or food processor
–Chef ’s knife
What You Need
–Olive oil
–Kosher or flake sea salt
–Coarsely ground black pepper
1. Make Stock: Whisk together vegetable
stock concentrate and 3¾ cups very hot
water.

–28 ounces carrots
–4 ounces sliced yellow onion
–.7 ounce ginger
–.3 ounce minced garlic
–3 ounces goat cheese
–.4 ounce cilantro
–.32 ounce pepitas

Sweet carrots and snappy ginger are
great paired with a dry Riesling. Try
those from Clare Valley, Australia, which
tend to be super limey.
4. Prepare Toppings: Crumble goat
cheese and chop cilantro.
To Serve: Divide soup among serving
bowls. Top with goat cheese, cilantro,
and pepitas.
H Pro Tip: Have an immersion blender
on hand? If so, puree the soup directly
in the slow cooker instead of blending
in batches in a stand blender or food
processor.
2. Prepare Soup in Slow Cooker:
Combine 2 tablespoons olive oil, stock,
carrots, onion, ginger, garlic and ½
teaspoon each salt and pepper in a 3- to
4-quart slow cooker. Cover and cook on
LOW setting 6 to 8 hours.

H Spice it Up!: Toast the pepitas in 2
teaspoons hot oil and stir in ¼ teaspoon
ground cinnamon and ¼ teaspoon
ground red pepper.

3. Puree Soup: Puree the soup, in
batches, in a blender or food processor
until creamy. Season with salt and
