invests in the latest Version 7
‘Vantage’ ingredient traceability and
product recall system.
Danish Patisserie is a family owned and
operated wholesale bakery, located in Perth,
Western Australia. From humble beginnings
in 1987, Danish Patisserie has grown into a
large-scale 24x7 business, supplying some of
Australia’s biggest names in food retail and
manufacturing over 450 unique ‘small batch’
recipes.
Their current purpose-built premises, established
in 1995, has the production and logistics capacity
to meet every need. They are conveniently located
adjacent to major transport routes and just
minutes from Perth Airport. Danish Patisserie
pride themselves with the quality of their products
and hold HACCP and Halal accreditations. Their
product range is designed to meet all common
catering needs and also bake to order for contract

(all food processing facilities) - food companies
like Danish Patisserie are faced with a choice as
to how to address the traceability legislation from
the incoming raw ingredients of products to their
mixing, batching & blending process, through to
the labeling of finished and repackaged goods. This
can be an expensive and brand damaging problem
to address if companies take the traditional and
inadequate “paper-trail” route.
Danish Patisserie’s Management Team looked at
traceability in a positive light and the company’s

Danish Patisserie decided to partner up
with Stevens Group Ltd and their Australian
representatives, Wedderburn Scales. Stevens
Group pride themselves on their flexible approach
to food traceability solutions and select only
practical and well proven software and hardware
to generate an ROI for their customers.
This combination of experience from Stevens
Group Ltd combined with the drive and enthusiasm
for production efficiency from Danish Patisserie,
has produced a remarkable traceability system
which complies with even the most stringent
legislations while delivering an ROI through
improved yield at the Quality Control Points such
as recipe weighing and finished product portion
control.
The “Vantage” Traceability Solution is a
combination of hardware and software modules
providing seamless control to the production
floor where ingredients are weighed (to form
their finished product range of, Cakes, Morning

few!), which are then shipped to customers with
fully traceable batch numbers. All incoming raw
materials are booked in at Goods Inwards onto the
Stevens Stock Control module and allocated to
precise locations within the site giving “real time”
stock levels preventing stock shortages before
commencing production.
When the daily production requirements have
been established, the pick list for daily inventory
can be generated and then 2 x Vantage Terminals
with wireless barcode readers which have been
installed to issue inventory into the two distinct
areas production facilities ensuring accuracy
of ingredient traceability. The daily production

requirements are entered into the Vantage
management software. This schedule provides the
4 x “Vantage MonoScale” shop floor adjustable
height workstations with information relating to
production orders, delivery dates; items ordered
and pulled inventory lot numbers to deduct from.
The workstations take the form of touch screen
“Vantage” production line Terminals connected to
heavy duty platform scales.
When the operator selects the relevant production
order from the “Vantage” touch screen display,
it details how many batches of a particular
product have been scheduled. Each formula
is then weighed to a target weight (forcing the
Operator to weigh accurately and work to weight
tolerances set by management). Only when
each element of the formula is exactly within
the management set weighing tolerances will
the system allow the operator to progress to the
next ingredient ensuring product consistency is
always maintained. All ingredient lot codes are
recorded at this point for full traceability. As
many of the formulations have “blends within
blends” the system is configured to allow for a
multi level recipe structure providing traceability
across the “submixes” which are combined to
form the finished product. Being based on the

well proven “Vantage” traceability system, the
reporting package has the ability to pinpoint
which Lot Numbers have been delivered to which
customers and when - all in real time. Simply enter
the Lot Number into the PC and it will generate
an “ingredient dispatch” report giving emergency
contact details in the event of a product recall.
The reports package also enables visibility of
operator performance, production throughput,
and production yield while generating no additional
workload for the site staff.
