Amy is a graduate of Eastern Illinois University with a degree in sociology. She has two children, a son Michael who attends EIU and a daughter Madeline who attends Monmouth College. They have a very spoiled dog named Daisy who is a regular visitor at Lakewood. Amy has been a part of the Lakewood family since her mom moved in December of 2013. She is new to the area but has family who are long time residents of the Ashmore/Charleston area. Her work experience has included case management with the senior population. She has also worked in education and has done care coordination. Her hobbies include cooking and reading. Welcome Amy! If you have never visited us at Lakewood Village, please stop in! Refreshing Cucumber Watermelon Salad INGREDIENTS: • • • • • • • 1 small red onion, halved and sliced into thin half-moons 2 tablespoons lime juice, or more to taste 2 tablespoons extra-virgin olive oil 1 seedless watermelon, cut into cubes 3 baby cucumbers, seeded and cut into cubes 1 cup crumbled feta cheese 1/2 cup mint leaves, sliced thinly PREP: 15 mins DIRECTIONS: 1. Mix red onion with lime juice in a bowl; set side to marinate at least 10 minutes. Stir olive oil into mixture. 2. Toss watermelon, baby cucumbers, and feta cheese together in a large bowl.
