Makes: 20 meatballs What You Need Make It 1 lb. ground beef ½ cup Italian-seasoned dry bread crumbs ½ cup grated Parmesan cheese 2 eggs, lightly beaten 1/3 cup finely chopped onion 2 cloves garlic, minced ½ tsp. black pepper ¼ tsp. salt 1 bottle (12 oz.) light-colored beer, such as lager 1½ cups tomato sauce 1 cup ketchup 2 tsp. tomato paste ½ cup packed brown sugar 1. Preheat oven to 400°. Line broiler pan with foil; spray rack with non-stick cooking spray. Combine beef, bread crumbs, cheese, eggs, onion, garlic, pepper and salt in large bowl; shape mixture into 1" balls. 2. Place meatballs on broiler rack. Bake 10 minutes or until browned. 3. Bring beer, tomato sauce, ketchup, tomato paste and brown sugar to a boil in Dutch oven. Add meatballs and reduce heat. Makes: about 6 servings What You Need Make It 1 cup olive oil, plus additional to grease pan 2 lb. chicken wings (about 15 wings) 2 heads fresh garlic, separated into cloves and peeled* 1 tsp. hot pepper sauce, or to taste 1 cup grated Parmesan cheese 1 cup Italian-style dry bread crumbs 1 tsp. black pepper Optional: carrot and celery slices 1. Preheat oven to 375º. Grease 13" x 9" baking pan. 2. Remove and discard wing tips. Cut each wing in half at joint. 3. Place garlic, 1 cup oil and hot pepper sauce in food processor; process until smooth. Pour garlic mixture into small bowl. Combine cheese, bread crumbs and black pepper in shallow dish. Dip wings, one at a time, into garlic mixture, then roll in crumb mixture, coating evenly and shaking off excess. 4. Arrange wings in single layer in prepared pan. Drizzle remaining garlic mixture over wings; sprinkle with remaining crumb mixture. Bake 45 to 60 minutes or until wings are cooked through, brown and crisp. Serve with carrot and celery slices, if desired. *To peel whole heads of garlic: Drop garlic heads into boiling water for 5 to 10 seconds. Immediately remove garlic with slotted spoon. Makes: about 6 servings What You Need Make It 2 cups GoldCoast Salads crab or Maine lobster spread 1 cup cream cheese 1 cup white sauce 2 shots of sherry 1. Allow cream cheese to soften. 2. Combine cream cheese with white sauce and lobster spread into sauce pan, stirring thoroughly and slowly heat. Once warmed, add the sherry. Serve It The dish is beautiful served in a bread bowl; using the bread cubes to dip. Also, it is excellent when served with bagel chips, pita points, and/or crackers of your choice. Makes: about 6 servings What You Need Make It ½ honeydew melon 1 cantaloupe ~ pepper 1/3 jalapeno ¼ cup fresh cilantro 2 Tbsp. fresh lime juice 1 jar Tostitos salsa 1.
