the drainer and boiling water poured over them When they
are dry they can be put away or allowed to stand wi th a clean
cloth thrown over them until ready to use

The s tarter is merely s oured m ilk I n making a

home made starter place a clean m ilk bottle and tumbler in a pan
o f cold wate r and bring s ame to boiling ; remove the bottle allow
it to cool and then fill it with the f re s h st cleane s t m i l k av a i l able
The bottle should now be c o vered with a steril i zed gla s s tumbler
in order to pre v ent the entrance o f dirt Allow th e mil k to sour at
a temperature o f about 75 F ( room temperature )
Two cubic centimeters o f active starter for each thi rty pound

milk i s vigo rou s ly s tirred and warmed to a temperature Of 80 F
Rennet is now added at the rate o f 30 dr o p s per 1 00 po unds o f

rest over night at room temperature or pre ferably a little h igher
The firm curd i s no w pou red upon the draining rack as with the
cottage cheese and allowed to drai n f or about two hours Toward
the end o f the dr a ining period the curd is worked toward the center
o f the cloth by means o f a ladle The cloth s contain i ng t h e curd
are now tied together ba g f a s hi on and pres s ed The h and made
contr i vance illustrated may be used or m erely allow weight s to
rest on bags o f curd over night T h e more whey that is rem oved
the better will be t h e flavo r and k ee in g qualities o f the cheese
The curd should drain out and not dry out M ix i n the salt to
