Sweet - Potato Latkes

.Latkes are another word for fritters.
These can also be made with potatoes.
Equipment needed
Ingredients
large bowl
vegetable peeler
knife
measuring cup
wooden spoon
2 frying pans
dessert spoon
spatula
metal plate
paper towel
teaspoon
4 serving plates
500g sweet potato (1 large)
500g potato
½ cup cornflour
2 eggs
½ teaspoon salt pepper
oil for cooking
sweet chilli sauce, sour cream and coriander
leaves for serving
What to do
1. Peel the sweet potato with the peeler. Cut it into 4 chunks. Grate each piece into
the large bowl.
2. Peel and grate the potatoes and add to bowl
3. Add the cornflour and and egg and mix well.
4. Add salt and pepper and mix well.
5. Pour about 2 Tbsp of oil into each frying pan and place on medium- low heat.
6. When the pan is hot add spoonfuls of mixture to the pans.
7. Cook gently until well-browned then turn over with the spatula to cook the
other side.
8. Place 2 pieces of paper towel on heat proof plate. When latke is done, lift off
pan with spatula and place on paper towel.
9. Place latkes on serving plates. On each fritter put a small dollop (about
1/2 teaspoon) of the sour cream and the chilli sauce.
10. Garnish with a coriander leaf.
