Warm bananas and low fat yoghurt
This is a crafty way to get your children to eat
more fruit.
Serves: 4 adults
Preparation time: 5 mins
Cooking time: 3 mins
Ingredients:
20g low-fat spread
4 bananas - ripe works best, sliced into diagonal chunks
1 orange finely grated rind and juice
4 tbsp low fat Greek-style natural yoghurt
What to do:
1. Heat a non-stick frying pan over a medium-low heat and add the low fat spread.
2. Add the banana pieces and fry gently for 2 minutes. Add the orange juice and cook for another 30-40
seconds. Sprinkle with the grated orange zest.
3. Serve each portion with 1 tablespoon of low fat Greek yoghurt.
Tip 1: Take care that you don't overcook the bananas, or else they will go very mushy.
Tip 2: You could serve a scoop of reduced fat ice cream instead of the low fat Greek yoghurt if you prefer.
Tip 3: Add some extra fruit if you like, such as a small can of pineapple pieces in natural juice. Just warm
them through in a pan for a couple of minutes after you've cooked the bananas.
