However ginger has been crushed successfully and we’d also bet that foods similar to those would also work well. Try it out; be creative. Let us know what works for you so we can share with our customers To clean your peeler, simply run the tube under warm water. Typically all skin pieces and any garlic peelers will be removed entirely. It is dishwasher safe, however a quick run under the water should do the job. To clean your garlic press, consider using a knife to scrape away any remaining garlic in and around the crush head. The press is of course 100% Culinary Grade Stainless Steel so it is perfectly safe to use in the dishwasher. If however you’d like to wash by hand, a soft brush (such as a toothbrush) or rag along with soap and warm water should do the job. Creamy Garlic Pasta with Shrimp & Vegetables Serves: 4 Prep Time: 30 minutes Ingredients: 6 ounces whole-wheat spaghetti 12 ounces peeled and deveined raw shrimp cut into 1-inch pieces 1 bunch asparagus, trimmed and thinly sliced 1 large red bell pepper, thinly sliced 1 cup fresh or frozen peas 3 cloves garlic, chopped 1 1/4 teaspoons kosher salt 1 1/2 cups nonfat or low-fat plain yogurt 1/4 cup chopped flat-leaf parsley 3 tablespoons lemon juice 1 tablespoon extra-virgin olive oil 1/2 teaspoon freshly ground pepper 1/4 cup toasted pine nuts (see Tip; optional) Directions: 1. Bring a large pot of water to a boil. Add spaghetti and cook 2 minutes less than package directions. 2. Add shrimp, asparagus, bell pepper and peas and cook until the pasta is tender and the shrimp are cooked, 2 to 4 minutes more. Drain well. 3. Position racks in upper and lower thirds of oven; preheat to 425°F. Coat a large rimmed baking sheet with cooking spray. To prepare tofu: Pat tofu dry and cut into 3/4-inch cubes. Combine lemon juice, miso and pressed garlic (using your Uberchef Garlic Press) in a large bowl. Add the tofu and gently toss to coat. Spread the tofu in a single layer on the prepared baking sheet. Bake on the upper oven rack, turning two or three times during baking, until browned, for 18 to 20 minutes. To prepare croutons: Toss bread with oil, pepper and salt in a medium bowl. Spread in a single layer on a rimmed baking sheet. Bake on the lower oven rack, turning two or three times during baking, until browned and crisp, for 12 to 14 minutes. Serve topped with the tofu and croutons. 7|P a ge Garlic Roasted Salmon & Brussels Sprouts Serves: 6 Prep Time: 45 minutes Ingredients: 14 large cloves garlic, divided 1/4 cup extra-virgin olive oil 2 tablespoons finely chopped fresh oregano, divided 1 teaspoon salt, divided 3/4 teaspoon freshly ground pepper, divided 6 cups Brussels sprouts, trimmed and sliced 3/4 cup white wine, preferably Chardonnay 2 pounds wild-caught salmon fillet, skinned, cut into 6 portions Lemon wedges Directions: 1. Preheat oven to 450°F. 2. Press 2 garlic cloves using your Uberchef Garlic Press and combine in a small bowl with oil, 1 tablespoon oregano, 1/2 teaspoon salt and 1/4 teaspoon pepper. 3. Halve the remaining garlic and toss with Brussels sprouts and 3 tablespoons of the seasoned oil in a large roasting pan. 4. Roast, stirring once, for 15 minutes. 5. Add wine to the remaining oil mixture. 6. Remove the pan from oven, stir the vegetables and place salmon on top. 7. Drizzle with the wine mixture. 8. Sprinkle with the remaining 1 tablespoon oregano and 1/2 teaspoon each salt and pepper. 9. Bake until the salmon is just cooked through, 5 to 10 minutes more. 10. Serve with lemon wedges. 8|P a ge Garlic-Stuffed Standing Rib Roast Serves: 12 Prep Time: 4 hours Ingredients: 5 cloves garlic 2 1/2 teaspoons kosher salt, divided 2 1/2 teaspoons freshly ground pepper, divided 1 8- to 9-pound, 4-rib standing rib roast (prime rib), fat trimmed to 1/4-1/2 inch 1 tablespoon canola oil Directions: 1. Press garlic with your Uberchef Garlic Press and toss in a bowl with 1/2 teaspoon each salt and pepper. 2. Cut 1/2-inch-deep slits every 2 inches on the meaty sides of the roast. Insert a sliver of seasoned garlic into each slit. Let stand at room temperature for 1 hour. 3. Preheat oven to 450°F. 4. Season the meat all over with the remaining 2 teaspoons each salt and pepper. 5. Place a large roasting pan over two burners on medium-high heat. 6. Add oil and heat until shimmering. 7. Add the roast, fat-side down. Cook until dark brown and crusted on all sides, 2 to 5 minutes per side. 8. Finish with the roast meat-side up and rib-side down. 9. Transfer the pan to the oven and roast for 15 minutes. 10. Reduce the heat to 350° and continue roasting for 1 1/2 to 2 1/2 hours, depending on weight (estimate 12 to 16 minutes per pound). The roast is done when an instant-read thermometer inserted deep into a fleshy part registers 125°F for medium-rare, 135° for medium. 11. Remove the roast to a carving board; cover loosely with foil. Let it rest for at least 15 minutes and up to 30 minutes. 12. To carve, stand the roast on end, holding it by the ribs. 13. Using a large chef’s knife, cut along the contour of the bones to separate the meat from the bones in one piece. Trim any excess fat and slice the meat into 1/4-inch-thick slices. 14. In saucepan, cook beef or turkey and onion until browned; drain. 2. Add flour and seasonings. 3. Mix well. 11 | P a g e 4. Stir in tomatoes and bring to boil. 5. Remove shrimp to a serving platter, leaving the garlic cloves in the pan. 13 | P a g e Halibut With Garlic Mayonnaise-Parmesan Topping Serves: 2 Prep Time: 35 Minutes Ingredients: 2 tablespoons light mayonnaise 1 tablespoon lemon juice 1 garlic clove, pressed (with your Uberchef Garlic Press) 1/2 teaspoon Dijon mustard or 1/2 teaspoon country-style dijon mustard 1 tablespoon grated parmesan cheese 1 thin green onion, finely sliced 1/8-1/4 teaspoon Tabasco sauce 2/3 lb halibut fillet 2 teaspoons lemon juice 1/8 teaspoon salt fresh ground black pepper Directions: To prepare the topping: Combine mayonnaise, lemon juice, garlic, mustard, Parmesan, green onion and Tabasco. To prepare the halibut: Place fish on a broiling pan. Sprinkle with lemon juice, salt and pepper. Bake in a preheated 450-degree oven 12 minutes per inch of thickness, or until fish tests done. Remove fish from oven and place a rack close to the broiling element. Turn the oven to broil. Spread the top of the fish with garlic topping. Broil about 1 minute, or until golden. 14 | P a g e Side Dishes Roasted Garlic & Herb Bread Serves: 1 Loaf (12 Slices) Prep Time: 2 1/4 hours Ingredients 2 heads garlic, roasted and cooled (How To Roast Garlic: Position rack in lower third of oven; preheat to 400°F. Rub off the excess papery skin from a head of garlic without separating the cloves. Slice the tip off the head, exposing the cloves. Place the garlic on a piece of foil, drizzle with 1 teaspoon extra-virgin olive oil and wrap into a package. If roasting more than one head of garlic, you can put them together in one packet or make individual packets. Place the package directly on the oven rack and roast until the garlic is very soft, 40 to 45 minutes. Unwrap and let cool. Refrigerate in an airtight container for up to 3 days.) 1 1/4 cups white whole-wheat flour 1 1/4 cups all-purpose flour 2 tablespoons plus 1 teaspoon chopped fresh herbs such as rosemary, thyme, oregano and/or dill, or 2 1/2 teaspoons dried, divided 1 tablespoon baking powder 1/4 teaspoon baking soda 1/2 teaspoon salt 1/4 teaspoon freshly ground pepper 2 large eggs 1 1/4 cups low-fat milk 1/3 cup extra-virgin olive oil Directions: 1. Position rack in middle of oven; preheat to 375°F. 2. Line a 9-by-5-inch (or similar-size) loaf pan with parchment paper; generously coat the paper and sides of the pan with cooking spray. 3. Peel roasted garlic cloves, keeping them whole (Awe Shucks. You don’t get to use your Uberchef Garlic Press for this one). 4. Whisk whole-wheat flour, all-purpose flour, 2 tablespoons fresh herbs (or 2 teaspoons dried), baking powder, baking soda, salt and pepper in a large bowl. 5. Serve warm or at room temperature. 16 | P a g e Heavy on the Garlic Baked Potato Fries Serves: 2 Prep Time: 40 minutes Ingredients: 10 garlic cloves (pressed in your Uberchef Garlic Press) 5 -6 tablespoons olive oil (or use grapeseed oil or soy oil, they have a higher smoke point) 3 potatoes, each cut into 12-16 wedges (about 8oz each-use any potato you want, russet, yukon or red are good) 3 tablespoons cornstarch (also called corn flour, or use flour but cornstarch is better) 1 1/2 teaspoons coarse sea salt 1 1/2 teaspoons fresh ground black pepper 1/2 teaspoon garlic powder 1/4 teaspoon onion powder (optional) 1/4 teaspoon paprika (optional-you might even want to try smoked paprika) 1/8 teaspoon cayenne pepper (optional-to taste, original recipe said 1/4 tsp) parsley, chopped to garnish (optional) Directions: 1. Preheat oven to 440° F. (225°C). 2. Combine the garlic and oil in a small pan, warming it on medium heat until the garlic is fragrant, about 1 minute. 3. Transfer 5 tablespoons of the garlic infused oil (leaving the garlic in the pan) to the baking sheet, coating it well. 4. Cut the fries into wedges and drop them into simmering water (you can throw in a few garlic cloves to impart more flavor) for about 5 or 6 minutes. Lay on paper towel or napkin to dry. 5. Add the potatoes to the pan with the garlic mixture, add onion powder if using, and toss to coat. 6. Combine the cornstarch, salt, pepper, garlic powder, and cayenne in a small bowl. Sprinkle over the hot potatoes and toss well to coat. 7. Microwave margarine in medium glass bowl for about 40 seconds or until about halfway melted. 2. Mix in all ingredients, using a fork. 3. Spread mixture over bread (You can use a one of those long sourdough French loaves split in half lengthwise or plain thickcut bread or split dinner rolls). 4. Place on baking sheet and bake for about 10 minutes at 450, until top is golden brown. 20 | P a g e Easy Garlic Rice Serves: 4 - 6 Prep Time: 45 minutes Ingredients: 2 tablespoons olive oil 1 medium onion, chopped fine 3 garlic cloves, pressed (using your handy Uberchef Garlic Press) 1 cup long grain rice 2 cups chicken broth 1/2 teaspoon dried thyme 1 bay leaf 1/4 cup parsley, chopped Directions: 1. Put the oil in a skillet and sauté the onions & garlic until golden. 2. Add rice, broth, thyme& bay leaf. 3. Bring to a boil uncovered, turn heat to low cover and simmer about 25 minutes or until the liquid is absorbed, give a little stir after 15 minutes. 4.
