Cool as a Cucumber
Herb-Infused Spa Water1
Ingredients
6 cups chilled water (spring or mineral water)
12 thinly sliced cucumbers
4 thinly sliced lemons
4 sprigs fresh mint, slightly crushed
2 sprigs fresh rosemary, slightly crushed
Directions
In a 2 to 2 ½-quart pitcher, combine water, cucumber, lemon,
mint, and rosemary. Serve, or cover and chill at least 2 hours
or up to 8 hours. Add ice cubes just before serving. Makes
about 1 ½ quarts, about 4 servings.

Pomegranate & Hibiscus Iced Tea2 Ingredients
1 cup pomegranate juice or nectar
¼ cup loose hibiscus tea
4 cups boiling water
4 cups cold water
Lemon wedges, for garnish
Directions
Steep loose hibiscus tea in boiling water for 3-5 minutes.
Strain the tea and pour into a large pitcher. Stir in
pomegranate juice (or nectar) and cold water. Refrigerate until
chilled, about 2 hours. Serve over ice with lemon wedges, if
desired. Note: Tea may be refrigerated for up to one week.
12 herbal tea bags that contain hibiscus may be substituted
for loose hibiscus tea.

Happiness in a Cup
Blueberry-Coconut Slush3 Ingredients 1 cup pineapple sherbet or sorbet
1 cup frozen blueberries
¾ cup canned reduced-fat coconut milk
¼ cup sweetened shredded coconut
Directions
In a blender, combine 1 cup pineapple sherbet or sorbet,
1 cup frozen blueberries, ¾ cup canned reduced-fat coconut
milk, and ¼ cup sweetened shredded coconut. Whirl until
smooth and pour into a chilled, tall glass.
Calming with Chamomile
Chamomile Lavender Mint Iced Tea4
Ingredients
1 loosely packed cup fresh mint leaves
2 tablespoons dried culinary lavender
1 ½ tablespoons dried chamomile (or 4 chamomile tea bags)
Directions
Crush mint leaves and put in a 1-gallon lidded jar. Add
lavender and chamomile. Fill jar with water to within
2 inches of rim. Cover and refrigerate 6 hours. Pour through a
cheesecloth-lined colander into pitcher for serving.
Dreary Monday Sweetener
Lemonade Sweet Tea5
Ingredients
3 cups water
2 family-size tea bags
1 cup loosely packed fresh mint leaves
½ cup sugar
4 cups cold water
½ can (12 ounce) frozen lemonade concentrate, thawed
Directions
Bring 3 cups water to a boil in a 2 quart saucepan. Remove
from heat, add tea bags, and stir in fresh mint. Cover and
steep 10 minutes. Discard tea bags and mint. Stir in sugar
until dissolved. Pour tea into a 3-quart container and stir in
4 cups cold water and lemonade concentrate. Serve over ice.
Tuesday Pick Me Up
Cranberry Sparkler6 Ingredients
1 ½ ounces blackberry puree
2 ounces white cranberry juice
2 to 3 ounces sparkling water
1 sprig mint, for garnish
Directions
Place blackberry puree and cranberry juice in a champagne
flute. Add sparkling water to fill. Garnish with mint.

Fresh Brew
Egg-Cellent Choice7 Ingredients
1 ½ cups coffee ice cream
1 ½ cups eggnog
1 cup hot strongly brewed coffee
4 tablespoons frozen whipped topping, thawed
4 pinches ground nutmeg
Directions
Scoop the ice cream into a pan over low heat. Stir in the
eggnog and coffee; and heat until warm, about 3 minutes.
Pour into 4 glasses or ceramic mugs. Top each with
1 tablespoon whipped topping and sprinkle with nutmeg.

Easy Iced Coffee8
Ingredients
2 teaspoons instant coffee granules
1 teaspoon sugar
3 tablespoons warm water
6 fluid ounces cold milk
Directions
In a sealable jar, combine instant coffee, sugar and warm
water. Cover the jar and shake until it is foamy. Pour into a
glass full of ice. Fill the glass with milk. Adjust to taste,
if necessary.
Fake It Till You Make It
Mock Champagne9
Ingredients
½ cup club soda, chilled
½ cup ginger ale
¼ cup unsweetened white grape juice
Directions
Chill club soda, ginger ale and grape juice overnight.
Combine club soda, ginger ale, and grape juice in glass and
serve immediately over ice.

12 ounces of fresh squeezed orange juice
4 ounces amaretto/vanilla flavored italian soda
Crushed ice
Dark chocolate orange twigs
Slice of orange
Directions
Fill a glass halfway with crushed ice. Pour in fresh squeezed
orange juice, and italian soda and stir gently. Garnish with a
chocolate twig and an orange slice. Note: Italian soda can
be made by mixing club soda with Torani flavored syrups.
This recipe would use Torani Amaretto and Torani Vanilla
mixed together!

Chocolate Peppermint Frappe11
Ingredients
4 round peppermint candies
1 pint frozen yogurt chocolate
2 cups cold milk
½ cup chocolate syrup
Directions
Place peppermint candies in blender and mix until smooth.
Blend in yogurt, milk, and syrup. Garnish with peppermint
candy sticks or fresh mint.

Somewhere Over the Rainbow 12
Ingredients
1 pint rainbow sherbet
2 liters lemon-lime flavored carbonated beverage
Directions
Place the sherbet in a punch bowl. Pour in the carbonated
beverage. Stir gently.

Homemade Soda Pop13
Ingredients
1 6-ounce can frozen lemonade concentrate or frozen orange,
apple, grape juice concentrate
18-24 ounces carbonated water
Directions
Stir together juice concentrate and 4 cans filled with
carbonated water. Gently stir until combined. Using a funnel,
pour mixture into a 4 cup bottle or jar; seal. Chill for up to
6 hours. Makes 3 (about 8 ounces each) servings.

Citrus Gingersnap Refreshers14 Ingredients
¼ cup sugar
2 cups crushed ice
¼ cup hot water
1 cup buttermilk
4 teaspoons crushed
gingersnap cookies, divided
1 cup fresh orange juice
2 teaspoons lemon zest, grated
2 tablespoons fresh lemon juice
4 lemon slices
½ teaspoon vanilla extract
Directions
Combine sugar and hot water in small bowl; stir until
dissolved; pour into blender. Add buttermilk, orange juice,
lemon juice, vanilla and ice. Blend well, until ice is a very
fine texture. Garnish each serving with 1 teaspoon of crushed
gingersnap cookies, ½ teaspoon lemon zest, and a lemon
slice. Makes 4 servings.

Salsa in a Glass15
Ingredients
1 cucumber
4-5 tomatoes
Handful of cilantro
2 limes
Dash of cayenne pepper
Directions
This recipe requires a juicer and is as healthy as it is tasty! Run
the cucumber, tomatoes and cilantro through the juicer. Add
the juice of the limes and cayenne. Stir and serve.
Fresh Take Fix
Pepper-Mint Limeade16
Ingredients
4 limes, juiced
1 cup white sugar
2 sprigs fresh mint
½ gallon water
1 fresh jalapeno pepper, sliced
Directions
In a large pitcher, stir together the lime juice and sugar until
dissolved. Stir in mint sprigs, and mash with a wooden spoon
to release some of the oils. Pour in water and mix well. Mix in
jalapeno slices. Put a lid on the pitcher, and refrigerate
8 hours, or overnight.

Fuzzless Navel Recipe17
Ingredients
2 ounces peach nectar
6 ounces orange juice
Directions
Pour peach nectar and orange juice into a chilled glass filled
with ice cubes. Stir well and garnish with a slice of orange.
Easy Breezy
Spiced Cider Mocktail18 Ingredients
Ice
Spiced cider
Peach juice
Soda water
Directions
In any size glass - add a few ice cubes and then fill half the
glass with spiced cider (Trader Joe’s® cider recommended).
Fill the other half with peach juice and call it done.
For a little zing, add a splash of soda water.

Put the Lime in the Coconut
Coconut Sparkler19 Ingredients
1 8-ounce glass
3 ice cubes
2 lime wedges
3 ounces coconut water
3 ounces tonic water (carbonated)
Directions
Mix the tonic water, coconut water and 1 lime wedge
(squeezed) in a shaker. Pour into glass, add ice cubes to keep
chilled and add 1 lime wedge as garnish.

Lime Cooler20
Ingredients
1 can frozen lime juice
1 can frozen lemonade
4 cans water
2 cups lime ice
2 cups ginger ale
2 teaspoons bottled lime juice
15-20 ice cubes
Directions
Combine everything but ice and mix well. Add ice and serve.
Add fresh mint leaves and a cherry if desired.
Low Cal Hydro
Berry-Yogurt Smoothie with Honey21 Ingredients
1 cup mixed frozen berries (raspberries, strawberries, and
blueberries)
½ cup nonfat yogurt
¼ cup freshly squeezed orange juice
2 teaspoons honey
½ banana (optional)
Directions
Combine all the ingredients in a blender and blend until
smooth. Enjoy it guilt-free.
Bubbles for the Bubbly
Strawberry Fauxito22 Ingredients
4 cups lemon-lime carbonated drink 4 cups club soda
4 sprigs of fresh mint
½ cup of frozen strawberry daiquiri mix
¼ cup of sugar
2 limes
Directions
Muddle sliced limes, sugar and mint leaves in a small bowl.
Pour mixture into pitcher. Add strawberry mix and sodas and
stir. Serve over ice.

A Day In The Park
Theme Park Mint Julep23 Ingredients
1 lb granulated sugar
6 cups water
1 ¼ ounce lime juice concentrate
8 ½ ounces lemonade concentrate
¾ cup creme de menthe syrup (not the liqueur!)
Directions
Combine sugar and water in a 3-qt saucepan; stir until sugar
dissolves. Stir in lime and lemonade concentrates and bring
to just under boiling point. Remove from heat and chill. Once
chilled, add 1 part syrup to 5 parts chilled mixture and stir.
Transfer to pitcher. Garnish with fresh mint and Maraschino
cherry if desired. Makes one pitcher.
Divide and Conquer
Cherry Smash24 Ingredients
1 cup pitted fresh or frozen (thawed) cherries
¼ cup fresh mint leaves, plus 4 sprigs for garnish
8 teaspoons sugar
¼ cup lime juice
3 cups cherry-flavored seltzer
Directions
Divide cherries, mint leaves and sugar among 4 glasses. Mash
everything together with the back of a wooden spoon. Stir in
lime juice. Fill glasses with ice and top with seltzer. Garnish
with mint sprigs.
Life’s A Beach
Hawaiian Island Surfer25 Ingredients
4 ounces orange sherbet
2 ounces pineapple juice
1 ounce coconut cream
Directions
Blend briefly with half a glassful of crushed ice in a wine
goblet. Garnish with fruit, and serve with straws and an
umbrella! Aloha!

Pineapple Sprite®26 Ingredients
1 can Sprite® or 7UP®
Pineapple juice
Ice
Directions
Fill half pitcher with Sprite® or 7UP® (diet or regular).
Fill the last half of the pitcher with pineapple juice. Serve over
ice by the glass. You can also make this drink by the glass with
½ soda and ½ pineapple juice.

Summer Fruit Tea27 Ingredients
Starbucks ® Tazo Passion Tea or a combination of berry tea bags
Sugar
1 can lemonade concentrate
3 cans water
4 watermelon slices
Directions
Steep tea to make ½ gallon. Sweeten with sugar. Add
1 can lemonade concentrate and 3 cans water. Stir. Cut up
watermelon into ice cube size. Place watermelon squares on
parchment paper and freeze individually. When ready to serve,
float watermelon ice in berry lemonade tea.

Luscious Slushy Punch28 Ingredients
2 ½ cups white sugar
6 cups water
2 (3 ounces) packages strawberry flavored gelatin mix
1 (46 fluid ounces) can pineapple juice
²⁄ ³ cup lemon juice
1 quart orange juice
2 (2 liter) bottles lemon-lime flavored carbonated beverage
Directions
Bring the sugar, water, and strawberry flavored gelatin to
a boil in a large saucepan; boil for 3 minutes. Stir in the
pineapple juice, lemon juice, and orange juice. Divide mixture
into 2 separate containers and freeze. Combine the contents
of 1 container with 1 bottle of the lemon-lime flavored
carbonated beverage in a punch bowl; stir until slushy.
Oh That Sparkling Smile
Sparkling Wine Cooler29 Ingredients
Alcohol-free NC Muscadine Wine Chilled
Sprite® or Sierra Mist ® Chilled
fresh lemon
Directions
Mix 8-10 ounces of Muscadine Wine with approximately
4 ounces of Sprite® or Sierra Mist ®. Add 1 small squeeze of
lemon juice from lemon wedge. Pour into wine glass
and serve.
Stroll Down Memory Lane
Soda Fountain Limeade30 Ingredients
1 16-ounce glass diet (or regular) lemon-lime flavored soda
½ lime squeezed into glass
Directions
Cut some pulp from the lime for a special flare. Mix and drop
a couple ice cubes. For a refreshing twist grind 2 leaves of
mint in a mortar and pestle and add to drink and perhaps
1 packet of Splenda for sweetness. You have just created a
Mint Julep…with a twist. Two drinks with one recipe.
