Healthy Eating for Preschoolers: Protein
These food plans are based on average amounts. Do not be concerned if
your child does not eat the exact amounts suggested. Your child may
need more or less than average.
•
2 year olds: 2 ounces
•
3 year olds: 3-4 ounces
•
4 & 5 year olds: 3-5 ounces
Examples of 1 ounce of protein foods: 1 ounce cooked meat, poultry, or
seafood or 1 egg or 1 Tablespoon peanut butter or ¼ cup cooked beans
or peas (kidney, pinto, lentils)

Recipe of the Week: Tuna Boats
Serves 4 * Prep Time 15 minutes
Ingredients
• 2 cucumbers
• 1 lemon
• 2 green onions (also called
scallions)
• 1 6-oz. can tuna (low-sodium if
possible)
• 1 15 ½ oz can of white beans
• 1-2 tablespoons canola oil or
other vegetable oil
• 1 tablespoon mustard
• 1/4 teaspoon pepper
• ½ teaspoon salt
• Lettuce (optional)
Directions
1. Rinse cucumbers. You can peel the
whole thing, peel just stripes, or not
peel at all. Scoop out the seeds with a
spoon. Cut cucumber lengthwise and
remove seeds with a spoon.
2. Rinse the lemon. Zest using the small
holes of a grater. Cut in half and
squeeze juice into a small bowl.
3. Rinse and chop green onions.
4. Drain tuna. Drain and rinse the beans
in a colander.
5. Lightly mash the beans in a bowl using
a fork.
6. Mix together in a medium bowl the oil,
mustard, lemon zest, pepper, and 2
tablespoons of the lemon juice.
7. Add tuna and onions.
8. Mix well with a fork to break up tuna.
9. Fill each cucumber half with tuna.
Cut into halves or thirds and serve.
Optional additions include olives, celery,
chopped tomatoes, radishes, peppers,
lettuce.
