CCP: Cook to internal temperature of 135° F or higher. To Assemble: 10. Place 1/2 cup (No. 8 scoop) mashed potato in 16-oz microwave safe bowl or similar size container. 11. Place 1/4 cup (No. 16 scoop) gravy on top of mashed potato. 12. Place 1/2 cup (No. 8 scoop) corn on top of the gravy and mashed potato mixture. 13. Place 3.85 oz (approximately 12 pieces of pocorn chicken) on top of the corn. 14. Sprinkle 1 Tbsp of cheddar cheese on top of the chicken. 15. Cover with a lid and hold in a warmer. CCP: Hold at an internal temperature of 135° F or higher. 16. Serve 1/2 cup mashed potatoes, 1/2 cup corn, 1/4 cup gravy, 3.85 oz of popcorn chicken for each serving.
