With Diamond being
the birthstone for the
month of April, we
thought it would be fun
to provide you with
some facts about
Diamonds!

Did you know
diamonds come in
an array of
different colors

Diamonds really do
last forever!
Unless you chip or
crack it, it will last
your entire lifetime! They don’t
tarnish or change
color

The word diamond
comes from the
Greek word
“adamas” which
means invincible or
untamable

Diamonds are
supposed to be the
hardest substance
found in nature

The stone is a form
of carbon

Diamonds are
traditionally
associated with
mystery, romance,
power, and magic,
hence why they
have been the
preference of
royalty

As a birthstone, the
diamond signifies
purity, endurance,
and commitment;
wearing it is said to
bring these positive
changes in you
For all of our April
babies– we hope you
have a wonderful
birthday!
Coffee Hour
This month coffee hour
is on April 13th starting
at 10am.
We will provide the
donuts, bagels, and
coffee– you only worry
about having a good
time!
As always, residents
and friends are
welcome to join in the
festivities!

Upcoming Events and Reminders
For everyone who came out to
our wine tasting in February–
thank you, we hope that you had
fun!
are hosting our annual
summer party on Saturday,
June 11th, 2016 11:30am to
2pm with food service at
noon. The BBQ Man will
cater the event like he has for
the past couple of years.
Here are some upcoming events
that you can mark your calendars
for if you’re interested in
attending!



Tastefully Simple and
Scentsy– We’ve had a few of
you who were requesting we
host another Tastefully
Simple event and so we
listened! Look for your
invite in early April (if you
haven’t gotten one yet!).
The event is being held on
Saturday, April 30th from
11am to 1pm.
Wine Tasting (Fall)- we are
looking into hosting another
wine tasting with BayTowne
Liquor this fall. We are
trying to plan it for October
2016.
We hope that you are able to
make our events this year– we
love to be able to spend time
with all of you!

Celery and Parmesan Salad

1/2 c EVOO

2 tsp grated lemon zest

1/4 c (plus 1 tbs) freshly
squeezed lemon juice (3
lemons)

2 tbs minced shallots

1 tsp celery seed

1/2 tsp celery salt

1/2 tsp anchovy paste

Salt and Pepper (to taste)

5 c thinly sliced celery
hearts, leaves included,
sliced on an angle (about
salt adding enough to
moisten well
12 stalks)
What you need:

4 oz chunk aged Parmesan
cheese

2/3 c toasted walnuts

Flat-leaf parsley (to taste)
What to do:

At least 1 hour prior to
serving, whisk together
EVOO, lemon zest, 1/4 c
lemon juice, shallots,
celery seed, celery salt,
anchovy paste, 2 tsp salt,
and 1 tsp pepper

Place in a bowl and toss it
with remaining 1 tbsp.
lemon juice and 1/2 tsp

Cover and refrigerate for
at least one hour

When ready to serve,
shave Parmesan onto
celery using peeler and
then sprinkle with walnuts,
parsley leaves, salt, and
pepper– then serve!
