PRODUCT INFORMATION AND HISTORY
Basmati, the name of the world's longest and tastiest rice variety, means "queen of fragrance". Fertile soil,
irrigation by Himalayan mountain streams and an ageing process lasting over 12 months give this rice its heavenly
flavour.
For centuries, varieties of Basmati rice have been grown and perfected by farmers in the foothills of the
Himalayas. The first references to this rice variety date back to the 18th century. The region of Dehradun in the
extreme north of India, located in the cradle of this exquisite rice variety, is famous for producing the best Basmati
variants. Literally, "basmati" means "queen of fragrance". In this flat landscape, ancient traditional rice-growing
methods involve lots of manual work by smallhold farmers. The rice is irrigated using water from the natural
mineral-rich rivers of the Himalayas. The appeal of this excellent rice lies in its aromatic, floral aroma and its extralong, slender grains (the longest rice grains in the world measure up to 19 mm after cooking). It is also noted for
its non-sticking quality after cooking and its extremely tender and soft mouthfeel. The local population in northern
India also call it "miracle rice".

COOKING INSTRUCTIONS
1. Standard cooking instructions
Rinse 150 g of Himalaya rice in a sieve under cold running water until it is clear. Drain well. Add the rice to a pan
with 225 ml of water and ¼ tsp of salt to taste, bring to the boil and then leave to simmer on a minimum heat for
around 13 minutes until it has absorbed the water. Do not remove the lid. Separate the rice with a fork and serve.
