INTERVIEW WITH EXECUTIVE CHEF JASON TINGLEY
A native of Los Angeles, Jason Tingley joined Levy in 2009 as an Executive Sous Chef. A graduate
of CIA, he has cultivated amazing menus and defined his organizational and productivity skills
at the Ritz-Carlton Hotel in Pasadena, as a Sous Chef for Bistro Margot, with Gilles Epie at
L’Orangerie and as a Pastry Cook at Patina in Hollywood. At the Water Grill in downtown Los
Angeles, Jason mastered his seafood skills. In his second season as the Executive Chef, Dodger
Stadium is bound for fabulous culinary cuisine with a ballpark flare.
Where is the most memorable place you have ever eaten? A small restaurant in Luxembourg.
After a 10-day home stand, what is your comfort food? Taco trucks.
You must have hot buttons — what frustrates you? Uncompleted deadlines!
Who is your favorite chef and why? Gilles Epie — He pushed me the hardest, and he never made exceptions! He also
gave me a good foundation on creativity and flavor profile.
What do you do to relax? Scuba dive or gardening.
When you get a chance to cook at home, what is the most requested meal? Lots of cooking at home. BBQ, fish
and salad.
What’s the best cookbook — what inspires you daily? This is a hard one! Many cookbooks excite me. I often find
myself thumbing through “The Food Lover’s Companion” to reacquaint myself with terms or simply find ingredients
to inspire a recipe.
If you were to have any person at the dinner table with you who would it be? Chef Andrew Zimmerman — to hear
all about the nasty foods he has consumed!

Valerie Medina is new to Levy Restaurants, starting at Dodger Stadium this season! Matt Kemp is her favorite Dodger
player, and her favorite dish is mole. When she is not at work, Medina attends nursing school.
Yessenia Rivas has worked with Levy Restaurants for six years, having worked previously at Staples Center. When not
working, Rivas also spends her time studying to become a nurse. Her favorite Dodger player is Yasiel Puig, and she
loves pizza!
