Stanley’s Glossary
Barbecue Sauce – created weekly especially for us by Curt’s Barbecue in Austin, TX
Béchamel Sauce – white sauce usually started with a base of flour, Extra Virgin Olive Oil,
and milk. Stanley’s adds garlic and shallots. Made fresh here – French/Italian
Brisket – smoked weekly by Stiles Switch in Austin, TX started with USDA prime beef
and Stiles Switch’s signature seasonings
Calabrian Peppers – semi-hot peppers from the Calabria region of Italy
Cheeses – Locally sourced whenever possible; all pasteurized
Fontina – aged cow’s milk cheese with a creamy, mild flavor – Italian
Goat Cheese Feta – brined, crumbly, salty cheese made from goat milk – we get ours
when in season from Pure Luck Farm in Dripping Springs, TX
Italian Sausage – specially blended Italian spices and herbs in high quality pork so it’s not
too hot and not too sweet – blended in Austin especially for Stanley’s
Oyster Mushroom – fragrant, soft, stalkless mushroom – We use Kitchen Pride oyster
mushrooms.
Pepperoni – made in New Jersey, this lean, finely seasoned, cured meat compliments our
red sauce and pairs well with our other ingredients well
Prosciutto – salt-cured, dry-aged ham (not from pork belly like bacon)
Roasted Tomatoes – fresh roma tomatoes roasted with herbs then packed in olive oil
for texture and flavor
Speck – pork meat cured in salt and seasonings then slow smoked – Italian
Vegan Options – We do not offer vegan garlic knots, but we are happy to create a vegan
pizza or salad.
We do not currently offer gluten free crust.
Pizzas during regular service are 12 inches and 8 slices.
½ and ½ pizzas are available as long as the two sides have the same sauce.
Beer can be purchased up to two pints with one ID.
Two ID’s are required per pitcher.

While Stanley’s uses no nut products, we do have soy in our teriyaki sauce. Some desserts
we offer have nuts and are properly labeled and created outside our cooking area.
