whiskey has deep roots in american history and culture. most american
whiskies are classified by the primary grain, or mash bill, making up
their distillate. rye, corn, wheat and malted barley join bourbon and tennessee whiskies as the major categories of american whiskey. few whiskies
in the world are as well known or as sought after as bourbon. by law, to
be called bourbon, the spirit must start with a mash bill of at least 51%
corn, be aged for a minimum of two years in charred, american white oak
barrels, and bottled at no less than 80 proof.

canadian whisky’s origin is wildly debated; some say immigrant scots

for decades, this spirit found itself eclipsed by its bolder, more brawling
scotch and american cousins. thirty years ago, there was only one company
making whiskey in all of ireland, with two operating distilleries. irish
whiskey has undergone a major resurgence and has since been the fastest
growing spirit in the world. irish whiskey must be distilled and aged on
the island of ireland; it must be distilled to an abv level of less than
94.8% from a mash of cereal grains so it has an aroma and flavor derived
from the materials used and must be aged for three years in wooden casks.

the word ‘whisky’ or ‘whiskey’ originates from the scots gaelic world
“uisge beatha” meaning the ‘water of life.’ the phrase was anglicized over
time to ‘whiskybae’ until eventually being shortened to ‘whisky.’ uisge
beathe (or usquebaugh in the scots english spelling) itself is believed
to be a celtic translation of the ancient latin aqua vitae (water of
life). regardless of it’s pronunciation, scotch whisky must fulfill three
main criteria, which are defined by law: it must be distilled and matured
in scotland; matured for a minimum of three years in oak casks; and be
bottled at a minimum strength of 80 proof.

prior to being distilled in frankfort at buffalo trace as a 90 proof, eagle
rare was distilled in lawrenceburg by seagrams and later by sazerac, where
it was bottled in new orleans. this early version is a completely different
animal than the current 101 proof available.

currently a product of jim beam, ogd 114 proof was distilled by national
distillers until 1992 with their 114 offering being the highest proof and
arguably the most flavorful in the nd line. this recipe has not been available in retail stores for nearly 30 years and is truly a taste experience.

the kt recipe was orignially produced by the r. monarch distillery of owensborough, ky beginning in 1898 and later by the glenmore distillery which
produced this bottle in lexington, ky 45 years ago.

this bottle is one of the flagship labels from the former stitzel weller
distillery founded by pappy van winkle, the “original wheated bourbon”
dates back to before prohibition. it was eventually sold after sw closed
it’s doors in 1992 and found a new home at buffalo trace where it is distilled today (though it is no longer a 7y).

staves and dropped the 8y age statement in the mid 90’s resulting in a
much different wild turkey than you can find on retail shelves today.
